Butter Bean Burgers

This was SO delicious! I also thought it might be bland, but no - quite flavorful. I actually omitted the cheese (lower fat), so I can imagine *with* the cheese it would be even better. I did also use a little cayenne pepper instead of the jalapeno, since I didn't have any. Still gave it a little heat. I will be using this recipe again, and may try freezing the patties for a make-ahead dinner.

Hasty Chocolate Pudding

Fabulously fast and soo sooooo tasty! I reduced the sugar by 25% because I like really "dark" tasting chocolate items, and wanted to reduce the sugar/calories just a smidge. As written it would be just as delicious - just more a standard pudding sweetness. This was so fast, so tasty, that I agree with all the reviewers who say they'll avoid boxed pudding mixes in the future. All the ingredients in this recipe are commonly on hand as well. Oh, I did use soy milk instead of dairy milk, and it thickened up quite nicely - no problems whatsoever.

Pumpkin Chocolate Chip Cookies III

These are delicious! I left out the egg since I am allergic, and they came out beautifully - I am not sure why they need an egg really. Very fluffy and flavorful. I did add some dried cherries, and tried a few with butterscotch chips instead of the chocolate, but the chocolate ones were really better. A lovely cookie year-round - I wouldn't just save this one for Autumn.

Eggplant Croquettes

This was an excellent recipe, even though I made a mistake. I intended to halve the recipe, but forgot to halve the cheese. So it was quite cheesy and delicious! But obviously not as healthy as the original. :-) I did, however, just sautee the croquettes in a little oil instead of deep-frying them, so I supposed I saved on calories there. I will definitely make these again, as my husband enjoyed them as well.

Pumpkin Chocolate Chip Cookies I

Very, very good flavor. I used butter instead of shortening, and 1/2 C. golden raisins instead of the nuts. They did spread a little on the pan, which I wanted. I hope to eventually find a chewy pumpkin cookie recipe instead of cake-like, but this one is a winner in terms of the flavor. I will use this one again for sure.

Sweet and Spicy Green Beans

Phenomenal taste - beyond what I'd expect based on the ingredient list. I did cut the garlic chili sauce in half (I used Sriracha) and that was about all I could handle. Might reduce it a little more next time. But completely delicious flavor. The honey with the soy and garlic chili was a perfect balance. I did also sprinkle with toasted sesame seeds for appearance - black sesame seeds would also be nice, though perhaps not as pretty. Outstanding recipe.

Quinoa and Black Beans

As written, this recipe gets four stars for taste, health, ease, and overall appeal. However, with the addition of a little cheese (I tried Monterey Jack), fresh diced tomatoes, canned green chiles, and by using fresh corn cut off the cob, this recipe skyrocketed to 5+. The quality of ingredients has such a huge impact on this recipe - use fresh ingredients if at all possible - fresh garlic, onion, etc. Home cooked black beans would be even better - kicking the "canned" taste while reducing the sodium. Thanks for a really great recipe that I'll surely repeat.

Herbed Feta Dip

This is pretty darned good. There is something that's not quite perfect, but I can't place my finger on it. As is though, I have been gladly eating this for any meal with bread or crackers. Not sure I'll make it again since I can't figure out what I need to adjust to make it perfect to my taste, but it was also well received at a small group gathering.

Nutty Rosemary Bread

A very good bread experience for me. I used walnuts since I didn't have pecans, and the flavor was really good. Next time I'll have to try it with pecans instead. I used two tablespoons of fresh rosemary instead of dried, and it was apparent in the taste while not overwhelming. I did also increase the whole wheat flour (reducing the white flour accordingly) to about 50% of the total flour.

Basic Cream Cheese Frosting

I followed another reviewers suggestion to start with only some of sugar and add more until it tastes good to you. I ended up at 3 cups being perfect - 4 would have been too sweet, so I'm rating the original recipe as written at 3 stars for being too far on the sweet side. I also whipped this together with the Kitchen Aid mixer, which yielded super creamy, smooth, fluffy frosting. It was well received.

Whole Grain Banana Muffins

Perfect. I used golden raisins, and molasses instead of the honey. I was a little concerned that raisins might not be the best flavor with the banana, but I was wrong - it's delicious. Thanks for a great recipe.

Healthy Banana Cookies

Very good. Not amazing, but good. They taste mostly like a mashed banana, with a little oats to hold it together. They did hold together surprisingly well for not having any flour or eggs, and cooked up nicely when flattened on the pan. I would probably prefer a banana cookie with flour to this one though, in the future.

Green Onion Cakes

These were solid, but not exceptional. If I make them again, I will alter the recipe for a little different flavor - perhaps sauteeing the onions first for a sweeter taste, and adding a little salt to the dough to bring out the flavors.

White Bean Spread With Garlic & Rosemary

I enjoyed this tremendously as is - a very healthful dinner it made for hubby and I, accompanied by green onion grilled bread. However, I think next time I would halve the oil, as it would cut quite a few calories and would still be pretty good. I did add some fresh thyme and chives in addition to the rosemary, but found that it did not need any additional salt (using the lilquid in the can of beans was plenty of salt for me). I will be using this recipe again in the future.

French Leek and Ham Shepherd's Pie

Creamy Vanilla Pudding

This was really good, and SO quick! I used this pudding to layer with fresh berries and crushed chocolate cookies to make pudding parfaits. It was luscious to eat while still warm. Thank you for an easy, quick recipe!

Homemade Black Bean Veggie Burgers

Good as written, but needs some tweaking to make Great. I will probably try again and use some of the other reviewers' suggestions to try to bump this up another star or two. I love that it's simple, homemade, vegetarian, preservative free, soy free, etc. However, my biggest complaint is the texture - just crumbly if made as written. I suppose the type of bread you use could have some bearing there - not sure - I used Dave's Killer Bread "Goodseed" which is nice and moist. I did reduce the chili sauce to 1 teaspoon for my spice-wimpy tongue, and the cumin to 1 t. as I find cumin delicious but often too strong. Thanks for a good start - I will likely try this one again, with some small changes, until I get it just the wait I like it.

Whole Wheat Sweet Potato Muffins

These are absolutely delicious! Moist and fluffy, not heavy at all. I used 3/4 C brown sugar in place of honey, since I didn't have enough honey & other reviewers noted the sweetness. I also used 1 C. of soy milk in place of the yogurt, and subbed applesauce for half the oil, and didn't notice anything unusual - they turned out delicious. Particularly tasty warmed and eaten with a little natural applesauce (reminds me of ginger bread with applesauce, which is a favorite sort of "old-fashioned" treat). These would really be good without the topping, too, if you didn't have oats and nuts, but it was a nice addition. I will use this recipe again - thank you!
