Tuna Melt Sandwiches

Used 2 cans of tuna, substituted 1/2 of celery with chopped dill pickles, Seasoned mixture before putting on buns. Also cooked it for 20 minutes & the cheese was just melted enough, could have used a little longer. Also, used potato hamburger buns. Was really good (even cold) quick, easy recipe. Will make again. UPDATE: Made these again using sourdough english muffins and they were FANTASTIC!

Baked Potato Soup

This soup was REALLY good! Easy enough to make, full of flavor, & very filling. Also used less basil, a little more flour, and threw in some cheese in the last few minutes. Served it with garlic herb flatbread. TO DIE FOR!

Delicious Ham and Potato Soup

Awesome! Was so delicious. I added more ham, and 1 more potato because it looked a bit thin. I also added a can of corn. Very good, will be going in our box for sure!

Mom's Zucchini Bread

This recipe was amazing! I got told several times it was the best people had ever had. I added 1 cup of shredded apple in addition to the zucchini, used 1/4 c. oil & 3/4 c. applesauce to make it healthier. I also left out the nuts (personal preference) Was moist and delicious. Will definitely make it again!

Banana Cream Pie IV

After reading a few reviews that stated it turned out runny or soupy, I made a few changes to prevent this. I used 1- 5 oz. package of banana cream pudding, and 1- 3.4 oz. package of vanilla pudding mix. Kept the milk at 2 cups. It turned out nice and thick with a great consistency. I'm sure it will even hold up reasonably well when it is cut (will find out tomorrow at our family Thanksgiving dinner) I also only used 1/4 tsp of cinnamon because I was unsure about adding it at all. It was a good thing I did as even the 1/4 tsp was overkill. Totally drowns out the banana flavor except in bites that have actual banana in them. I did a layer of banana on the bottom, part of the pudding mixture, then another layer of banana before putting the remaining banana on. Will probably add one more layer tomorrow. I ended up with quite a bit of extra filling, but not enough for a whole other pie, so I got some of the mini pie crusts & made 6 mini pies. They are super cute! I would make this again, but would definitely drastically reduce if not even eliminate the cinnamon all together.

Holiday Shortbread Cookies

Due to many ratings saying these were very floury, I compensated by adding extra sugar and butter, but they still came out really floury. They were much better a day or two after they were baked.

Corn Dog Casserole

Very dry, dense & overall not good at all. Reduced the amount of sage and it was still overpowering. Even my very not picky fiance hated it.

Baked Garlic Parmesan Chicken

This was really good. I followed another reviewers advice and used stove top stuffing mix crushed up in place of bread crumbs. I used breast filets. The chicken was a bit dry but I think it's because I cooked it too long. Served with angel hair pasta, homemade marinara, and garlic bread.

Becca's Chicken-Fried Pork Chops

There wasn't much flavor in the breading, even though I added some chili powder and a bit more paprika and garlic powder. Frying them for 5 minutes on each side made them very dark brown, while the meat was still pink inside. So I threw them in the oven like another reviewers suggested, which made the juices run out and got the bottoms soggy. By the time we sat down to eat, the breading was falling off the meat, even on the top. My fiance liked them, but he's not picky. Don't know that I will be making these again.

Baked Potato Soup V

Was VERY thick, even after I added about a cup of chicken stock to thin it out. Next day leftovers were like potato paste. I prefer my soup to be more soupy, and less like a stew, but my fiance loves it, the thicker the better. Had good flavor. I sautéed some white onion with some garlic and good that up with the pieces of bacon I cut up for bacon bits. Was very good.

Nikki's Creamy Crock Pot Potato Soup

FANTASTIC! I added 2 more potatoes, more cheddar cheese, and more bacon. Omitted celery salt as I didn't have any. Substituted red pepper flakes for 1/2 tsp chili powder. Will be my go-to recipe for potato soup from now on. Was super easy, flavorful, and delicious!

Ukrainian Chicken Kiev

Takes WAY more fry time than is listed. Fried them for 10-15 minutes on each side and they were still uncooked in the middle. This was too much effort and hassle for a mediocre outcome, I will not be making this again.
