Amazing. I made a triple batch before having my baby and froze 3 trays. It freezes well and tastes incredible! Make exactly as written.

Coconut Custard Pie IV

Reviewed: Nov. 27, 2014
Oh. My. Gosh. I LOVE this pie. I love coconut cream, but had never had or made a custard pie, and it turned out perfect. The tips in the reviews about cooking to a temp of 160° were perfect. I was searching for recipes to use up milk, so I used 3 cups of milk milking ended up having too much for one pie and not enough for two, so I made some more and ended up having three. I took one to my event, shared one with my family and ate the third by myself... -_- I used fine grated coconut so it floated while baking, making an awesome 2 layer custard. Yum!

Ricotta Cake

Reviewed: Nov. 27, 2014
The ricotta didn't sink, instead it seemed to evaporate? What little was left stayed on top. The cake layer dried out really bad. Thankfully I put chocolate chips in one side and berries in the other, the added flavors kind of salvaged it. Kind of. Wasn't horrible but I wouldn't make it again.

Easiest Egg Nog

Reviewed: Nov. 24, 2014
Was pretty good. Very thin. Didn't taste much like store bought egg nog at all, more like vanilla nutmeg milk... But I like those flavors so it was still good. Will search for another more traditional recipe to satisfy my eggnog craving.

Apple Dumpling Cake

Reviewed: Oct. 10, 2014
Yum! Used half brown sugar half white sugar, 3/4 cup applesauce and 1/4 cup oil. I tossed the apples in sugar and cinnamon before placing in the pan. Next time I'll try try adding butter shavings to the apples to soften them up more. I used apples from our tree and they didn't get as soft as I'd like. Hubby said it was like a pie and cake put together!

A Scotsman's Shepherd Pie

Reviewed: Sep. 30, 2014
This was AMAZING! My first time making Shepherds pie. My carrots went bad so I used a can of corn instead. I also used ground beef instead of lamb because we're on a budget. I made a double batch to freeze one and only had an 11.2 oz Guinness, so I added 5 oz of water to bring it to the required 16 oz. Definitely going in my rotation.

Best Chocolate Chip Cookies

Reviewed: Sep. 21, 2014
Melted into a puddle of flimsy dough when baked. Edit to add: after the first batch, I added added another 1/4 cup or so of flour to tote dough & the next batch baked up nicely. So about 2.5 cups of flour and 1 cup of oat flour.

Mayonnaise Biscuits

Reviewed: Jul. 21, 2014
Super fast and easy, which is a huge bonus to me. I used the sub flour and was very careful to not overmix it. Texture and fluffiness was right on. Flavor lacked a little, probably could've used some salt or a little butter or something else? Will make again.

Lana's Sweet and Sour Meatballs

Reviewed: May 21, 2014
Meatballs were great, flavorful. Sauce was great as well. I had to use flour instead of cornstarch as it's what I had on hand. I also used fresh pineapple so I didn't have any juice. I used the juice from a can of pears to make sure the sauce turned out ok. Satisfied my craving, I will make it again!

Good but fairly sour. Loved the lemon in the crust, will keep this recipe just for the crust.

very dry and crumbly, not as flavorful as I would like. I think I'll stick to the gyro place in town.

World's Best Lasagna

The sausage flavor was a bit overwhelming, but other than that it was really good. I would make it again with less sausage.

Hawaiian Fish with Pineapple

Reviewed: Oct. 18, 2011
Followed SMILIE224's suggestions as well and added pepper, minced onion, minced garlic, Parmesan cheese, pineapple juice, and 1 cup of lemon juice. Used 5 fish filets, 3 mahi mahi and 2 ahi tuna. We also omitted the milk. The lemon flavor was still strong even though it was diluted by the pineapple juice and used less than the recipe called for. I can't imagine how bad it would have been if we'd followed the recipe as written. I can see why it only has 3 stars overall. I would give this recipe 4 stars with the adjustments I made. I normally at least try to make a recipe as written so I can give it a proper review, but this one just seemed like a fail from the get-go. Was a good base though.

Super-Delicious Zuppa Toscana

Reviewed: Oct. 8, 2011
I was a little concerned when I got almost all the way through cooking this and realized there isn't really any seasoning in it (I cook with a lot of herbs normally) but I assumed that most of the flavor would come from the sausage. The sausage stayed in larger chunks despite my best efforts to cut them down and it was a little overpowering. The rest of the soup had a good flavor base and the spinach was wonderful, but it just seemed to be missing something I couldn't quite put my finger on. I will certainly make this again, but will likely reduce the amount of sausage (not a big fan of it to begin with) and try to fill in the missing flavor (perhaps fresh ground pepper, some salt, maybe a little grate cheese on top?)

Tina's Fruit Dip

Reviewed: Oct. 8, 2011
Tastes like caramel. Don't even notice the sour cream (my fiance hates it but loved this dip... I didn't tell him what was in it) I made this because I had the ingredients on hand and wanted dip for my fruit, however, I think I prefer the more traditional flavored fruit dips.
