Butternut Squash Soup

Yum! Roasted quartered butternut (drizzled with olive oil and sprinkled with salt and pepper), peeled and added as directed. Cooked for ~10 min with broth before pureeing.

Mom's Zucchini Bread

Alterations 1/2 unsweetened applesauce, 1/2 oil for the oil 1.5 cups brown sugar for the white sugar 2 cups all purpose flour + 1 cup whole wheat flour for the flour I wanted to add more zucchini, but all I had was a bit over 2 cups. I made two loaves and froze one. It defrosted perfectly.

Mexican Rice III

I mince the garlic, double the tomato and add extra green pepper and jalapeno. It may look like a lot of vegetable when you start cooking but it's not overwhelming in the final dish.

Quick and Almost-Professional Buttercream Icing

Doubled the recipe to frost 24 cupcakes and had plenty left. Flavored with kahlua. Piping shapes was okay as long as they were pretty flat. When I tried for more volume, the shapes sagged.

Grilled Broccoli

I love grilled broccoli! Every time I make it, no matter how much broccoli I buy, it all gets consumed. I definitely use less cheese than the recipe and have gone without it (vegan version). Grill the broccoli over charcoal and add some wood chips to give the broccoli a slight smokey flavor.

Suki's Spinach and Feta Pasta

Pretty good with a few tweaks. Reduced the feta by at least a quarter, added almost a lb of sliced mushrooms and used 4 cloves of garlic. I also replaced the chopped tomatoes with a 28oz can of diced tomatoes, drained. This help give the dish more of a sauce, which my fiance prefers. Served with some spicy italian sausage.

Basil Tomato Soup

Very good! I doubled the recipe and froze half. I used more basil than called for, replaced the heavy whipping cream with 3 parts half and half and 1 part milk, reduced the butter by half and slightly decreased the sugar. I also sauteed about a quarter to a half of yellow onion with 2 crushed cloves of garlic and added that to the tomatoes and broth before simmering.

Marinated Pork Tenderloin

Devoured by my family. Don't make just one. Didn't have sherry, so I subbed rice wine but slightly less than the amount of sherry called for. I used fresh onion and doubled the marinade (except the cinnamon), which was became a tasty gravy.

Apple Hermits

Add Oatmeal!! Used Sweetened Dried Cranberries instead of raisins and soaked them in hot water to soften. Ended up adding a bit too much liquid and they turned out slightly more like cake.

Chantal's New York Cheesecake

Despite two layers of foil, the water from the water bath leaked in. Next time, I'm trying an oven bag. However, the slightly soggy crust didn't stop anyone from devouring the cheesecake. Made Blueberry Sauce to go with it.

Tres Leches (Milk Cake)

Tasty Tres Leches! If anything I would increase the volume of the milk mixture. I added a 1/4 tsp. of baking soda with the baking powder, added only 3/4 cup sugar with the butter and separated the eggs (mixed the yolks with the creamed sugar mixture and beat the whites until soft peaks formed and added the 1/4 cup sugar, beat until stiff peaks, folded into egg yolk/sugar mix). Served the cake with strawberries and bluberries. Had the cake for desert one night, then brought the remainder to the office. I went to see what was left at the end of the day and found the clean cake pan drying by the sink.

To Die For Blueberry Muffins

I made the streusel that one of the other reviews mentioned, added a bit of lemon zest and used more blueberries. Filling the cups to the brim made big, beautiful muffins that disappeared quickly. I doubled the recipe and it made 14 big muffins in my normal muffin pan.

Chicken Pot Pie VIII

Very Good! Used some leftover roasted chicken. I halved the recipe and it almost overflowed one pie crust (although I did added probably a full 1 1/2 cups of mushrooms and 2 tbsp of onion). Also, I used store-bought crust as I was short on time. Still came out amazing.

Wine Fondue

A bit strong at the beginning, but mellowed as it cooked. Our fondue pot set the wine on fire twice which made for some entertaining moments. Mushrooms cooked in the wine were wonderful. We used Chardonnay and cooked scallops, shrimp, pork tenderloin, beef sirloin, chicken breast, broccoli, potatoes and mushrooms. Also made a curry sauce, cocktail sauce and lemon-garlic sauce to go with the meal.

Maple-Garlic Marinated Pork Tenderloin

I'm giving this recipe the benefit of the doubt as I only marinated this for 6 hours and the flavors had quite penetrated as much as I would have liked. Despite this, the pork was very delicious and we ate it for dinner two nights in a row. Definitely make the leftover marinade into a sauce. The good maple syrup is too good to toss. Used a spicy brown mustard and low heat to cook so the marinade wouldn't burn.

Amber's Sesame Chicken

Definitely not restaurant quality, but still pretty good. Needed more sauce, so I added more teriyaki sauce, a little soy sauce, and a couple dashes of hot sesame oil. Definitely doesn't need more honey. Also used more oil than in the recipe and subbed green beans and some shitake mushrooms for green pepper and pan fried chicken in a mix of vegetable and sesame oil as suggested.

World's Best Lasagna

Turned out great! Plenty of leftovers. I made this in two pans and froze the second pan for another meal. Modifications -1lb ground beef -mild italian sausage -Extra 14oz of diced tomatoes with basil -used fresh herbs (1/4 cup fresh basil chopped) -2 small yellow squash,1 zucchini and a few handfuls of mushrooms chopped and sauteed before adding to the sauce -shredded mozzarella -soaked the noodles in hot water for 20-30min before using -~1 tsp salt and ~1 tbsp white sugar(sauce) -2x the onions -3x the garlic Definitely add the fennel seeds.
