Spanish Rice II

This rice was delicious and I will make it many more times. Also, I could not find the right size tomato and chili can, so I bought the 14 oz can. I added the whole thing and the rice still cooked perfectly. I made this to go with the Viva Madrid Spanish Chicken - absolutely delicious!

Viva Madrid Spanish Chicken

I made this with Spanish Rice II. It was a great combination. The sauce for this chicken was very good. Next time I will thicken it up a little more. Otherwise, this was a delicious meal and even better the next day.

Golden Pork Chops

I was totally shocked at how good this was. I was looking for an easy recipe and thought this one would do. However, with some homemade mashed potatoes this was very good. This will be a staple in my home from now on. Made again with cream of mushroom (added some additional flavor) with rice - still good.

Best Lemonade Ever

BBQ Pork for Sandwiches

Tasty. I did rub salt, pepper and steak seasoning on before slow cooking. And I cooked this on medhigh for 6 hours. Really simple and delicious.

Grilled Pork Tenderloin

Simple and delicious. I did add some Adobo seasoning and next time we'll cut down on the cooking time on our gas grill, though the time called for in the recipe was almost exact for us. The meat was very good and so easy to prepare.

Savory Vegetable Beef Stew

This was delicious and super easy. I sprinkled the flour over the meat as it browned instead of mixing it with the water. I bought some crusty bread, topped the stew with parmesan and it was wonderful.

Coffee Butter Frosting

This icing was delicious, though I added a tiny bit of extra instant coffee granules to the coffee. I wanted a stronger coffee flavor. I used this to ice the Chololate Mocha Cake I. We had friends over and they each enjoyed theirs, raving especially about the icing.

Apple Butter Pumpkin Pie

Even though I was only able to eat a small sliver of a piece on a very full stomach, I could tell this was delicious and cooked perfectly. It disappeared quickly. I will definitely make this again. Not a recipe for a deep dish pie plate/shell.

Pecan Pie V

Barely got to taste this as it disappeared so quickly. I really enjoyed this and my guests ate it right up (even with an assortment of 7 other desserts). It is not as sweet as a traditional pecan pie. Not for a deep dish/pie crust.

Absolutely wonderful. My grandmother made a simpler version of this when we were growing up and this is the first recipe I've tried that came close to the flavor of hers. DO NOT let the anchovies and number of bold flavors intimidate you. You won't even know the anchovies are in there and as long as you like olives, capers, etc. you will enjoy this. It's amazing how the flavors mellow out and just work together.

Three-Meat Stromboli

Made this as a last minute dinner and was impressed with how simple this is. I used refridgerated pizza dough and simply folded in half, sealing sides. I also added a little tomato sauce. Cooked perfectly. I think you could put just about anything you desired in here.
