Absolute Mexican Cornbread

Good. I didn't have any yellow cornmeal mix so I skipped the flour and baking powder and just used self-rising cornmeal mix. Texture was fine with the substitution.

I used black beans and added additional salsa. My husband also tweeked the recipe and it turned out great. I think this is a good recipe but it did lack tomato and pepper flavor that I prefer.

These were plain but not bad. I melted leftover chocolate morsels (w/ some chocolate hazelnut spread and a little oil) and spread over the top. Very tasty!

Chicken Marsala

I left out the sherry, using the marsala wine instead. I also added a little chicken and beef bouillion to cut the sweetness. Turned out to be great and tasted almost exactly how I used to get it at an Italian restaurant.

Sausage Stuffed Jalapenos

Delicious! I used a mix of jalapenos and banana peppers, and I believe the banana peppers won the taste contest. I also wrapped these in half a piece of bacon because I could. These were so good on their own I did not use the ranch dressing.

These were great! I completely omitted the barbeque sauce and I'm so glad I did. This was the easiest "popper" I have ever made and the most delicious. No one could stop eating them. I will make these every chance I get.

Red and Green Christmas Jalapeno Jelly

I used a cup and a half of jalapeno, omitting the red pepper. I removed all seeds and ribs - next time I will leave the ribs to add some heat as this was very mild. Good jelly and I received numerous compliments. I'll definitely make more. WEAR GLOVES!!! I didn't even think about it as I have chopped jalapenos before with no issue, but not in this large amount. It came on very gradually but my fingers were on fire all afternoon and night. This was after washing them repeatedly, applying aloe, soaking in milk, cleaning with alcohol then Goop, applying A&D ointment (don't do this), pressing lemon/juice onto them and finally resting in sour cream. Not a joke folks.

Cilantro Chicken and Rice

This was simple and delicious - a great way to use up cilantro. I only used 3 chicken breasts (so obviously I cut down the amount of flour), which I cut into strips, just preference; and I eliminated the pinto beans. I'm glad I did because the meal cooked perfectly. I'm not sure how the rice would have turned out with an extra can of beans. I will be eating the leftovers for lunch.

Extreme Banana Nut Bread 'EBNB'

The only reason I don't give this 5 stars is because it looked almost burned when I took it out of the oven. However, it was moist and tastes delicious. For full disclosure, I used 3 overripe bananas, not sure how that measures out.

Irish Cream Bundt Cake

I'm giving this a 4 for taste - it was delicious. However, the glaze seemed to be a little too much and when I tried to move the cake onto a serving dish (I probably should have left it alone) it fell apart. Poor execution on my part but I made this for a St. Patty's celebration and everyone loved it despite it's appearance. One note, the Irish Creme isn't cheap so if cost is an issue, make sure this is the cake you want to make.
