Juicy Butt Steaks

Reviewed: Aug. 27, 2013
I have made this twice now, third time will be today. First time I made it, it was too ketchupy for my taste. The second time I did half ketchup, half bbq sauce and turned out perfect. Spoon the sauce over a side dish of rice. YUM

Pan-Roasted Chicken with Lemon-Garlic Brussels Sprouts and Potatoes

Reviewed: Oct. 5, 2012
I am giving this recipe 5 stars because my whole family loved it, and ate it up without complaining! But I must admit I had no bacon, so I skipped that step and also used drumsticks instead of breasts. I knew that the drumsticks would cook fast, so I baked at 375 C and cut my potatoes into eighths instead of quarters. Turned out great!

Health Nut Blueberry Muffins

Reviewed: Aug. 10, 2012
I didn't have any wheat germ, so I added 1/8 cup more oats and 1/8 cup more oat bran. Instead of the 3/4 cup white sugar, I used 1/2 cup brown sugar (packed). I omitted the nuts, and instead of a banana (cause I had none) I added 1/2 cup applesauce. I also just added a bit of vinegar to the milk instead of buttermilk and used olive oil instead of vegetable oil. I hadn't realized I was out of eggs until I had already started making these so I just added a bit of water to the mix. I also used saskatoons instead of blueberries. I guess as I am writing this I am realizing how much I did change the recipe. ( i usually don't leave reviews when I've made so many drastic changes). But if you are looking for a versatile recipe....HERE IT IS! They turned out great.

Grits a Ya Ya

Reviewed: Mar. 19, 2012
I have never made or eaten grits before. I wasn't even sure what grits were or what they were made out of until I googled them. I used a yellow cornmeal to make them. I also didn't have cream, so I used homo milk instead. To thicken the sauce I added a bit of cornstarch mixed with cold water. Tasted great, although I felt like I was eating cream of wheat cereal for supper. lol

Chocolate Mint Cookies I

Reviewed: Dec. 23, 2011
FANTASTIC! Don't leave them to cool in the fridge too long. I had to leave the dough on the counter for a good hour to "warm up" so it was pliable again. Another reviewer said she rolled the dough into balls & then refrigerated. I will be doing it that way next time. My cookies were quite small and I ended up with 96 cookies. I only baked them for 6-7 min. I used knockoff after eights cut into quarters. They turned out fabulous. I also sprinkled them with green coloured sugar(which I made with white sugar, green food colouring smooshed up in ziploc bag). They did not flatten out like other reviewers said there's did. This will be a Christmas cookie staple in my house from now on.

Bacon Chicken and Dumplings

Reviewed: Dec. 2, 2011
Turned out fantastic! I had to use up the remains of a chicken I had cooked for supper the day before, so I used the bones to make the broth,(used 5 cups broth) and remains of the meat instead of chicken breast. I also used 5 slices bacon and increased the potatoes to 6 instead of three. Instead of half and half I only had homo milk, so, as another reviewer suggested, I used a tbsp of cornstarch mixed with a bit of cold water to thicken it up. Turned out fantastic and was even better the next day for lunch.

Homemade Apple Cider

Reviewed: Oct. 18, 2011
Tastes great! As soon as the apples and water came to a boil I reduced the heat to low and covered for at least 3 hours. I also added a few whole cloves to the pot. update: I'm making this again....sort of. I am trying it this time without spices and sugar to make juice for my kids. ( mother-in-law has apple tree and I am trying to use them up )I have never canned before, so I am going to freeze is ice cream containers.

Buttery Soft Pretzels

Reviewed: Jul. 29, 2011
I used my breadmaker for the dough. It mixed up nicely, but I did need to add more water. I only needed to cook them for 6 minutes. My husband said they tasted great and thats good enough for me. I just made these again(2nd time in a week lol). They were a bit big the first time for my 3 small children. So I made 24 smaller ones and cooked them for about 5 min. a pan. I sprinkled sesame seeds on half of them instead of the salt. Both are good, but I like the salt better. I also used only a 1/4cup baking soda and 2 cups water.

Award Winning Soft Chocolate Chip Cookies

Reviewed: Jul. 19, 2011
they are soft. Not my favorite chocolate chip recipe. Kids had fun making them. But I am curious about what they would taste like with different kinds of pudding. I will make them again. Also, I only used half the amount of choc. chips (since mine were the mini ones) and found it to be plenty enough.

Alfredo Sauce

Reviewed: Mar. 22, 2011
Totally bland. I only used this recipe because I couldn't find the recipe booklet that came with my magic bullet. I ended up using pepper, at leave 5 more cloves of garlic and more parm cheese. I blend it all in my magic bullet, then take off the top and microwave for a minute, then blend, then microwave and so on until I get smooth consistency. My kids did like it though.

Shrimp Scampi Bake

Reviewed: Mar. 22, 2011
I really liked this recipe because it was very easy. Like another viewer, I added a healthy dose of white wine to the mix. I did find the butter overkill, but next time I will totally use the butter for a quick sauce over pasta.
