Chicken With Orange Sauce

If you are looking for an Orange Chicken recipe... similar to Panda Express type, look elsewhere. The sauce is way more like a sweet and sour sauce than an orange sauce, absolutely nothing like popular orange chicken recipes. None of my hungry, chinese-loving family liked it at all. It's not me, either, because I followed the recipe to the T! I'll keep looking, thanks! :)

Creamy Pumpkin Pie

Ah, so delish! To my family, pumpkin pie has always been mediocre at best: the dessert that is only present at Thanksgiving because of its indelible status as a fall staple. A devout lover of all things pumpkin, I set out to change their minds about the power of this delightful orange fruit... and succeeded with the help of this recipe! It was my first attempt to make a pie from fresh pumpkin, and this recipe turned out beautifully... it has such a different texture than canned pumpkin pie. It is lighter and fluffier, less dense, more natural tasting and a different kind of sweet - the kind not achieved by syrups from a can. I used Nilla Wafer pre-made pie crust, but this was only a practice run for Thanksgiving and I plan on making my own pie crust next time. This was a smashing success - recommend to anyone! Baking the pumpkin seems like a lot of work, but it actually doesn't consume that much time and it's kindof fun. Only thing I would change - I think it needs more spice. If you like a milder pie, stick with the amount in the recipe, for a more traditional, cinnamony, gingery pie I would increase it a bit.

Apple Pie Muffins

These are DEE-EEE-LICIOUS. Plenty of little apple chunks in every bite - and the streusel on top makes them just heavenly. The batter may seem stiff when you put them in, but they turn out nice and moist and fluffy, no worries. I added chopped pecans to the streusel for a nutty crunch. Used Pippin apples - they were the BEST! Just the right combination of tart and sweet, and held their shape in the muffins. I have never tasted a better apple cinnamon muffin!

No Bake Cookies III

This is one of our all-time family faves - my dad has been making them since I was a toddler. What makes them REALLY good? Put them in the freezer instead of on the counter, then they not only get nice and firm and easy to eat but taste AMAZING! Make it like the recipe says, don't change half the ingredients and still expect them to be good. Don't forget to use parchment paper though! :)

Grain and Nut Whole Wheat Pancakes

Absolutely delicious. Despite the initial fear that loyal "all-purpose" white flour users may feel upon seeing the ingredients, never fear. I have an entire family of picky eaters, difficult to please with healthy choices that involve brown flour, oats, and reduced fat. These pancakes are entirely satisfying just as regular buttermilk pancakes, and with a wicked punch of healthy and wholesome ingredients, hardly any fat, and (the best part) they are so easy to cook. The only adjustments I made were: I didn't have any buttermilk, so I used 1/2 cup of nonfat vanilla yogurt and regular (1%) milk, but cut it down to about 1 2/3 cup. I used 1 egg plus 1 egg white for a fluffier texture. I also used 1/2 cup applesauce in place of the oil, but it didn't compromise the taste. Just use nonstick cooking spray on the pan and you're good to go. Also add about 1 tsp cinnamon if you like, for some extra flavor. Don't worry if the batter seems ultra-thick, almost an oatmeal consistency - they turn out just fine. Serve with sliced bananas and boysenberry syrup on top - they're to die for!!!

Gourmet Sweet Potato Classic

OH MY GOSH this was just DELICIOUS. I absolutely LOVE sweet potatoes, I can eat them plain baked with no toppings. However, I have some sweet potato haters in the family as well. I made these for THanksgiving yesterday, the first time straying from the marshmallow topping tradition, and everyone JUST FREAKED. It was most people's favorite dish, the first thing we ran out of, and everyone asked me how I did it. The texture is so fluffy, the sweetness is perfect, the crunchiness of the brown sugar and pecans just made the dish. The key is using the fresh potatoes and not buying the garbage from a can. It is literally heaven in a casserole dish!

Holiday Cranberry Sauce

Okay, no one in my family even likes that canned cranberry sauce stuff, including myself. I just knew there was more potential for deliciousness rom fresh cranberries. This was one of the biggest hits of the Thanksgiving table this year - everyone LOVED it, cranberry haters included! When I took it off the heat it was pretty soupy and sloshed around everywhere, but it definitely sets into a jelly-like consistency in the fridge overnight. Perfect amount of spices and sweetness. It's great!

Taco Seasoning I

This makes some GOOOOOOD taco meat!!!! My mom who HATES the store bought "" loves when I make taco salad using this recipe. I cut the salt by 3/4, still tasted good, because my whole family watches our sodium intake. Way better than packaged mix, easy to make, very flavorful and aromatic while it's cooking - definitely!

Classic Bran Muffins

DEE-licious!!! These babies can convert even some of the most whole-grain hating family members into fiber fanatics!! Haha, excuse my insane nerdiness, please :) I didn't have any buttermilk so I just used regular milk, and to cut down on fat I reduced the oil to just 1TBS, and added 2/3c mashed banana because I just LOVE bananas. They were absolutely wonderful muffins - moist, fluffy, sweet... yum. And healthy, too? Who knew? Americans need for fiber in their diets... and this is a perfect way to get it. Highly recommend.

Whole Wheat Blueberry Pancakes

SO AMAZING! I didn't change anything - except replaced artificial sweetener with applesauce b/c i'm an all-natural girl. I used white whole wheat flour - milder taste, same nutrition. THey didn't taste like typical dense, healthy pancakes - they were fluffy and light like regular pancakes! So delicious. Will make these every weekend!
