Scalloped Corn

Dynamite! I was short on sour cream (only had about 4 of) so subbed in a splash of milk. Otherwise, no changes. I drained the corn but not the can of creamed corn. Delish. Will make again..and again...and...

Barbeque Beef Casserole

Easy, quick and yummy. Like other reviewers, I only used about 1.5 boxes of corn bread mix. Added chipotle seasoning for a little kick. Otherwise, I pretty much followed the recipe. Will be making this one again.

Baked Soy Lemon Chops

Loved! Used bone-in pork chops (thin cut) and baked for 30 minutes, basting every ten min or so. I used low-sodium soy, but otherwise didn't change a thing. Served with wild rice and grilled zucchini. Definitely adding this to the dinner rotation.

Tangy Slow Cooker Pork Roast

I made this almost exactly as written, except that I substituted apple cider vinegar for red wine vinegar. It was fantastic! Apple pairs so nicely with pork anyway, I can't imagine making this any other way. Next time I may throw some thinly sliced apples in the slow cooker also. I also drained off the liquid to make a sweet and tangy gravy, which I poured over top of the pork and served alongside mashed potatoes. A great fall comfort food kind of meal.

Baked Asparagus with Balsamic Butter Sauce

WONDERFUL! I'm only giving this four stars because I had to modify slightly. I doubled the recipe, but otherwise followed the recipe exactly - until I tasted it. Then I added more balsamic (basically double what the recipe calls for) and added a splash of lemon juice. After that, it was perfect! Flavorful and bright. Will definitely make this again.

Easy Sugar Cookies

These were great! And, yes, the key is to soften the butter completely. Also wish the directions had specified to coat the dough balls in sugar before baking.

Slow Cooker Chicken and Dumplings

YUM! The only reason I didn't give 5 stars was due to the number of modifications I had to make, similar to other reviewers. Definitely not a "light" meal, but delicious on a chilly Sunday evening. Will be making this again.

Hot Bacon Dressing

This was delicious! I added about a teaspoon of the bacon drippings and instead of using only white vinegar, I used about 1/4 c white vinegar and 1/4 c apple cider vinegar. I served over a spinach salad with honey roasted pecans and cranberries. Will definitely be making this again!

Sweet, Sticky and Spicy Chicken

Wowsers! I didn't follow the recipe to the letter (no honey, so added more brown sugar; no ginger, so omitted), but this was a winner nonetheless! I followed others' suggestions and dredged the chicken in flour, which was a great move. My fiance loved this too and it will definitely be a regular dish in our house. (In fact, we liked it so much that I ended up making this two nights in a row!)

Pleasing Peas and Asparagus

I can't believe how delicious and simple this was! I added a bit of chopped onion, a drizzle of olive oil and cooked the whole thing in an aluminum pan on the grill. Other than that, no major changes. Will definitely be making this again!

Quick and Easy Chicken

Very quick, easy and tasty! I doubled the recipe as suggested by others, and was very glad I did. Would probably make a nice marinade for any meat. I also poured in a little bit of store-bought teriyaki marinade into the sauce for some added depth. Will definitely make again.

Zucchini and Potato Bake

This came out much more flavorful than I was expecting. I didn't have any garlic cloves, so I thinly sliced some onion and tossed the veggies with garlic powder. I also topped the dish with some grated parmesan and a bit more bread crumbs and olive oil before baking. Very easy and tasty!

Chicken Pot Pie IX

Absolutely loved it. Made a few modifications, per other reviews - used chicken stock to cook the chicken and veggies - added 1 diced potato. Also included a bay leaf with the chicken/veggie boil. Left out the celery seed and added garlic powder instead. Had to cover the edges of the pie crust with foil the last ten minutes or so, as it was starting to burn. Boyfriend went back for thirds, so I'd say this was a success! Next time I want to add a little white wine to the sauce; I think it will brighten it up a bit.

Cheese Dip with Beer

DEEEE-LICIOUS! I added a few dashes of Frank's Red Hot (because my boyfriend loves Frank's on everything), but otherwise followed the recipe exactly. Used a mild wheat beer. Instead of serving in a breadbowl, I served as a dip with soft pretzels. A total crowd-pleaser - I'll definitely be making this again.
