Chicken Riggies I

The first time I had this dish was last year at a restaurant in Utica, NY, while visiting for a family reunion. The dish was a hit with all who tried it! Since then I have made this dish a few times for potluck dinners --everyone absolutely loves it and it's requested now at every gathering!! Sometimes I will make two batches, one extra spicy and one less peppery for those who can't take the heat!

Stuffed Mega 'Shrooms

Awesome - made a couple of minor adjustments. Used just enough butter to moisten the mixture and substituted Parmesan and Romano cheeses for the Montery Jack. Didn't use the alfredo sauce either. Yum!!!

Pasta with Greens N Beans

Quick, tasty and healthy! I added the escarole to the boiling pasta the last few minutes of cooking time instead of sauteeing with the sausage. Also, I reserved a cup of the cooking water once I drained it and added it to the mixture at the end. Cooked parsley- cheese sausage in some olive oil and then added a can of diced tomatoes along with the beans for added flavor. Sprinked in some freshly grated asiago cheese and then combined all with the pasta and escarole. Added extra cheese at the end - yum!
