Black Bean Spread

Sugarless Applesauce Cake

This cake came out exceptionally well and tastes great! I layered the bottom of my springform pan with apples in concentric circles. When removed from the pan, the top of the cake looked beautiful with the fresh baked apples. I sprinked some cinnamon on top and it's perfect for guests. No one can believe it is without oil, butter or sugar!

Paula's Polenta with Mushroom Topping

I liked the simplicity of this meal. The polenta may be used as appetizers. Broiling the polenta until browned gave it an oily flavor which was similar to fried tortilla chips. Baking lightly gave a great flavor.

Aztec Casserole

Sicilian Lentil Pasta Sauce

I am impressed with the quality of this sauce. It is thick and hearty. I added hot sauce and Italian seasoning for added zest. It can be eaten as a topping on pasta, rice or tastes delicious by itself with crusty bread.

Chicken Enchilada Casserole II

This was such a simple, yet great recipe. For greatest ease, I boiled the chicken. Basically the meat will fall off of the bone and is quite easy to shred. The chicken broth makes a great soup too.

Aloo Gobi ki Subzi (Potatoes and Cauliflower)

Fantastic recipe. To thicken the sauce, pureed poatoes may be added along with the potatoe cubes. I have found this gives the dish a more authentic flair.

Potato Pancakes I

I loved this recipe due to it's simplicity and nutritional value. Cooking spray worked well rather than oil to fry. I added herbs and used my food processor.
