Mushroom Orzo

This recipe was awesome! Like a mini-Risoto! I also used chicken stock instead of water, and because I added asparagus and chopped chicken breast, I added about 1.5 cups more broth to the pasta, and cooked it about twice as long. No big deal, just be prepared in case this happens to you. I will definatley be making this again...I almost liked this more than the traditional risoto, a little less starchy and heavy.

Double Layer Pumpkin Cheesecake

My first cheesecake, and it was pretty good! Maybe it's just me, but it didnt seem to have alot of pumpkin taste. Actually, I dont mind because pumpkin isnt my all-time favorite, but if you really like pumpkin, maybe add more spices, and/or pumpkin to the recipe. Also, I had to cook mine for about 65 minutes, no big deal, but good thing I had the time and wanst in a rush. Definate two thumbs up for the presentation, I love the double layer look!

Slow Cooker Beef Stew IV

This was great!!!!! The "extra steps" arent that bad at all...youre essentially using the same pot to cook everything before hand. No biggie! Just be aware it takes some time, if you were planning on cooking this in the AM before rushing out the door for work! Did everything exact, except added some worchestershire sauce....yum! A previous commenter noted anchovies give this a little extra kick, and worchestershire sauce does have anchovy....so try it out!

Irresistible Irish Soda Bread

I saw Irish Soda Bread on a Julia Child show on PBS, and it looked so easy, I thought I would try it! This bread is delicious...honestly the dough has a very thick consistency that tasted like pancake batter (yum) and the end result reminded me of a cornbread consistency. I hope that's what it's supposed to be like! (haha) Bottom line, this is a very quick, very easy bread..even my boyfriend liked it and he's not a bread guy. I will definatley make this again!!! P.S. I did let the dough sit at room temp for 30 minutes, before baking

Blueberry Shortbread Bars

great recipe!!!!! I used blackberries, which are my favorite (oh why must they be cursed with so many seeds?!) I liked this recipe because of the shortbread crunch at the bottom, it really set it apart from a usual crisp. I didnt have 5 spice, so I added nutmeg and cinnamon. I also added a bit of vanilla and 1 tablespoon water to the dough. I think I freaked out on the consistency of the dough, and I thought more water was needed, but it probably wasnt. It turned out great, and once all those little butter balls melted in the oven, the crust turned into crispy, buttery goodness.

Apple Muffins

These were great! Now that it's fall (even though it's still 77 degrees outside-ugh) I am in the mood to bake, so something apple-y would hit the spot. I know some people don't like changing ingredients, and yes, I changed some (used half brown sugar & half white sugar; half wheat flour, half unbleached white, added some ground flax seeds) I am still giving it 5 stars becuase I would never known the proportions, or to use apple juice (I used Simply Apple--so good)! I say there's nothing wrong with playing around with the ingredients a little....see what works for you! If it wasnt for this recipe, I would ended up with apple hockey pucks, no doubt!

Brussels Sprouts in a Sherry Bacon Cream Sauce

I have a whole bottle of cream sherry that I had no idea what to do with....and found this recipe, very good! Cream Sherry is such an interesting flavor, combined with the bacon, cream and mushrooms, it's even better! This sauce would taste good with any kind of green veggie, or maybe pasta?! Thanks for sharing!!

Gourmet Mushroom Risotto

I had always been intimidated by Risotto (Hell's Kitchen, anyone?! lol) but this recipe was very easy to follow and surprisingly easy to make! Just get ready to stand and stir, stir, stir your life away and the result will be sooooo worth it!!! I followed the recipe exactly (which I never do) and it was delicious! Can't wait to make it again!!

Simple Country Ribs

I've never made ribs before, but I always heard boiling them is the death of a good rib. This recipe was so easy and full of flavor, it was a great starting off point for ribs! Boiled for 45 minutes on medium, then finished them on the grill (grill was SUPER hot, so only about 4 minutes per side) They were great!!!!!!

Peanut Butter Noodles

This was great!!!! Used Thai Rice noodles (medium width) and tons of veggies (broccoli, bean sprouts, snow peas, and cabbage) Sprinkled some seasame oil on it right before serving (it burns very easy so don't add it till the very end) The peanut sauce gets really thick as it sets, so I added a little bit of water and it was great.

Boilermaker Tailgate Chili

This is a great recipe, everytime I make it I get rave reviews from everyone. This is probably the only recipe that I actually use every spice, and measure them out exactly!!! The only things I chaged were using real bacon (4 slices) , then sautee the onion, celery, and peppers in the bacon fat. Also, for one of the cans of "chili beans" I substitued a can of "tri-colored beans" (black beans, pinto beans, and kidney beans) just to give some extra flavors and colors to the pot.

Honey Cornbread

This is a great recipe, but it definatley needs salt. At least 1 teaspoon. I spread some salted butter on the cornbread and it made a huge difference, and I also added 1 cup thawed frozen corn to the batter before cooking. I will be making this again.....but next time, with the salt!!

Shepherd's Pie VI

Very good!!! Instead of simmering the meat with beef broth, I used 1 beef boullion cube and about 3/4 cup water. Did everything else exactly.....very easy and not daunting at all. My boyfriend said it was better than the Shepherd's pie at our local Irish pub. I think he's being nice :) but still... YUM!!

Slow Cooker Chicken and Dumplings

This was crazy good!!! I used all chicken thighs (boneless and skinless) because I love the flavor, and they don't dry out like breasts do. I added 1 can of buttermilk Grands biscuits (16 oz)for the last 2 hours...they were pretty well done, so prehaps 1.5 hours would give a more doughy dumpling. I also added some mushrooms, but it would be good with any veggie!!!

Johnsonville® Three Cheese Oven-Roasted Pasta Primavera

This was crazy good! Great way to eat your veggies. The only changes I made were adding more seasonings (1 teaspoon each: Basil, Oregano, Minced Garlic) and I instead used Whole Grain Rotini. Sprinkled some shaved parmesean after it was cooked..yum! Had the leftovers for lunch today, and they heated up nicely! Will definatley add this to my dinner rotation.

Pizza Dough III

This was a great, and fast dough with little ingredients. I am new to baking, so I've been finding Rapid Rise yeast gets a good rise every time, for every bread. Works great for this recipe when youre in a rush and dont have time to wait. I added more flour which wasnt a big deal. Just keep 1/2 cup at hand just in case. I also added spices to the water/yeast mixture which turned out great! I also upped the oven temp to 400 and baked the dough alone in the pan for about 5 minutes before adding the toppings.....I do this for ALL my pizza dough recipes.

Bubba's Jambalaya

This was absolutley amazing! I'd always been scared to try Jumbalaya, I thought too many ingredients, too many steps, and too long to make. I was wrong!! I did everything to a tee and it came out great. The only thing I did different was use Smoked Turkey Sausage, and instant brown rice instead (I'm horrible at rice!!) Everything came out so good, I simmered it for about 2 hours, but honestly the flavors were so good it'd be good at 20 minutes as the recipe said (if you are short on time) Also, I had to keep some extra stock / tomato sauce ready because that instant rice just sucked up all the liquid. No biggie, just a word of warning if someone else wants to use brown rice.

Soft Pretzels

These were great!!!! The dough was perfect....easy to roll into as thick or thin a rope as you want, very strechy and pliable. I'm a baking newbie so I wasn't sure about refrigerating the dough. Would it rise? Yes it did! I did boil the pretzels in water, baking soda and half a bottle of beer for about 20-30 seconds and placed them on the baking sheet. Then I basted in melted butter (I used the egg wash and butter methods...didnt really notice a difference as far as outer color/crunch between the two, so stuck with butter for the flavor) then sprinkled kosher salt, garlic powder on top. Finally, baked at 400 for only 13 minutes since the boiling water bath seemed to jump-start the cooking process. P.S. I cut the recipe in half and got about 18-20 medium sized pretzels.

Easy Sugar Cookies

These were very good!!!!! I chose this recipe because it didn't need refridgeration, or rolling. Sugar cookies are my all-time favorite. I followed the recipe to the tee and they came out pretty buttery (never thought I'd say that) but maybe next time I will use less butter, or up the vanilla like another person suggested. Also, I ended up cooking mine for about 13 minutes...and I love my cookies very chewy and barely cooked. Maybe because my cookies turned out so big, they needed extra time. Either way, this will be my go-to sugar recipe!!

Sweetened Whipped Cream

This was great!!! Never would have thought of powdered sugar, so Im glad I looked, haha. I whipped this up in the Kitchen Aid mixer, with bowl and whisk that had been chilled in the freezer. Whipped it on about 8 speed, for 1 min 30 seconds or so. Very good!!! No more Cool Whip for me
