Broccoli Bites

Having read the previous comments about the watery batter, I doubled the flour to 1 C and baking powder to 1 t and the salt to 1 t. They turned out perfectly - light and crispy. The kids loved them dipped in Ranch dressing. Thanks for all the helpful comments and an original recipe with so much potential!

Party Punch III

Being tired of the same old heavy sherbert punches, I thought this looked like a good recipe to try. It did seem a little tart, so I added some lemonade to it. That kept it refreshing but gave it a hint of sweetness. Thanks for a good, basic recipe that is easy to tweak!

Gram's Chicken Pot Pie

Good basic recipe. I did make a few changes: substituted cream of chicken soup for the mushroom, added a variety of vegetables - thawed corn, green beans and chopped carrots, as well as the peas,and added some spices - garlic powder, basil, oregano, sage and pepper. It's great for using up leftover frozen vegetables and leftover chicken. Thanks!

Wedding Soup

Overall, we liked this recipe. The flavors were very good, but next time I will leave out the tomato paste. We think it will be more appealing with a golden broth color instead of the red of a vegetable soup. Also, I substituted spinach for the cabbage because all wedding soups I have had previously used spinach. Very good basic recipe, easy to tweak. Thanks.

Fish Fillets with Stuffing

I loved the flavor and crunch of the stuffing. I also baked the fish instead of microwaving it. I think I might bake the stuffing for a few minutes separately, then add it to the fish and broil the whole thing. It's a great recipe and I think it will be fun to experiment with it.

Pork Medallions with Sauteed Apples

We loved this. I sauteed instead of broiled, added mushrooms just because I had some left over and neeed to use them up and used half a yellow onions because I didn't have green onions. Really good, lots of flavor and pretty quick for a week night dinner. It has been requested that I make it again soon.

Frozen Crescent Rolls

Very tasty. Thawed well and baked up golden and yeasty. The kids gobbled them up in a flash. Love the fact that you make a bunch and keep them in the freezer for that homemade taste. Infinitely better than Pilsbury! The only drawback is remembering to take them out 3-4 hours before you want them, but you can't have everything. They are worth the effort.

Easy Cranberry Chicken

Have to say this bombed at my house. Not one person in my family of 6 ate more than a few bites. It had a strange unappetizing color and a very odd taste. Sorry, I couldn't think of anything to tweak to make it more appealing.

Freeda's Fabulous Fish

Great tasting dish. I did change a few things to accommodate time and available ingredients. I seasoned the fish with garlic powder and rosemary, quickly sauteed it in a little butter, dumped in a little soy sauce and a can of drained canned tomatoes and let simmer until the fish was flaky. The sauce was great on rice. It looked pretty and tasted "fancy". Family all enjoyed it, even the pickiest eater. Thanks for an easy to adapt recipe with great flavor.

Old-Fashioned Italian Zucchini Fritters

Very tasty. I cut the recipe in half and it was plenty to feed a family of 4. I added a little more parmesan (but will probably add even more next time)and used dried basil because that's what I had on hand. We dipped them in ranch dressing and/or soy sauce. Thanks!

Fideo (Mexican Spaghetti)

Southwest-Style Egg Rolls

Wonderful, flavorful filling. Couldn't find egg roll wrappers so I used the 7" tortillas an earlier reviewer suggested and very glad I did. Instead of frying, I sprayed with Pam and baked at 375 for about 15-20 minutes, until the filling was bubbly. We ate these with the cilantro cream dip and it was phenomenal. Need to add this to our menu rotation!

Zucchini Pancakes

Great recipe to work with. I squeezed out the water from the zucchini before I added it. If it's too loose a batter, add a bit more flour. I also used half parmesan half shredded mozzarella because that's what I had on hand. The oregano was a nice addition. I substituted Ranch dressing for the mayo. So good, didn't need a topping!
