Seared Tuna with Wasabi-Butter Sauce

Reviewed: Mar. 11, 2007
Excellent flavor that doesn't overwhelm the tuna. It's also easy and doesn't take very long to pull together. I had to substitute rice wine and red wine vinegar for the listed ingredients (that's what I had on hand) and did cut the butter in half - that was plenty, but otherwise followed the recipe and was very pleased with the results. Will definately make again. Thanks!

Mild Cheesy Chicken Enchiladas

Reviewed: Mar. 7, 2007
Versatile and easy recipe. I added green chiles to the chicken mixture and topped it with enchilada sauce. 2 out of 3 kids loved it. Thanks!

Creamy Veggie Fondue

Reviewed: Feb. 19, 2007
Very tasty. Will make this again. I melted the cream cheese in the wine first, then added the other cheeses, stirring in a zig-zag motion to keep the mixture from turning into a glutinous mess the way some of my previous attempts at fondue did. Thanks for a good recipe!

Brandy Flamed Peppercorn Steak

Reviewed: Jan. 27, 2007
Very tasty, but cut back a good bit on the peppercorns unless you are a big pepper fan. The sauce is fantastic. We served it over the steak and rice. Very impressive presentation. Thanks for a delicious meal.

Deluxe Chocolate Marshmallow Bars

Reviewed: Dec. 19, 2006
Very good. Lots of interesting tastes and textures rolled into one easy to make bar cookie. The kids seem to enjoy this more than the adults.

Fresh Ginger Cookies

Reviewed: Dec. 17, 2006
Delicious - chewy and very gingery. Only cooked them 10 minutes and that was just right. If you are not a big ginger fan you may want to cut back a bit, but overall they were wonderful!

Frozen Crescent Rolls

Reviewed: Nov. 21, 2006
Very tasty. Thawed well and baked up golden and yeasty. The kids gobbled them up in a flash. Love the fact that you make a bunch and keep them in the freezer for that homemade taste. Infinitely better than Pilsbury! The only drawback is remembering to take them out 3-4 hours before you want them, but you can't have everything. They are worth the effort.

Honey Chocolate Pie

Reviewed: Nov. 21, 2006
This wasn't bad, but it was overly sweet. I would probably cut the honey by half next time. It had a nice flavor. The consistency was a little soft. I might try to beat the egg whites stiff before adding the honey. Overall, not bad, but not great.

Pleasant Pork Chops

Reviewed: Nov. 12, 2006
Very tasty and easy. Reminded me of chicken paprikash. Didn't feel like I needed to make any changes. Served over egg noodles. Thanks. Will make again.

One of those rare, wonderful recipes that requires no changes or tweaking and is made up of ingredients we always have on hand. Entire family loved it. Thanks!

Mexican Pasta

Reviewed: Aug. 31, 2006
Great dish! Lots of flavor and very easy. My 12 year old son made this by himself. We also added shredded cheese and some extra cumin. Thanks, we'll make this again.

Homesteader Cornbread

Reviewed: Aug. 20, 2006
Loved this. Made this recipe with the exact ingredients, but let the batter rest for 30 minutes and used muffin tins. Very moist and full of flavor, sweet but not overly sweet - just perfect and easy to boot. Will definitely make this again.

Jeera Fried Rice

Reviewed: Aug. 10, 2006
This was so good. The flavors are so complex and wonderful together. Because my family is picky and prefers plain white rice, I cooked the rice alone (for them) and then followed the rest of the recipe, only skipping frying the rice. I added some of the cooked rice into the skillet with all the cooked spices and onions. Yum! Thanks.

Peanut Butter Chocolate Chip Cookies III

Reviewed: May 17, 2006
Not bad, a little dry but tasty. The family ate most of them in one sitting. I found 11 minutes to be enough baking time.

We did not care for this. The flavors just did not go together well. Sorry.

Chicken Dijon

Family loved this. Husband said to add it to our menu frequently. My only changes was to add a bit more mustard, sprinkle with bacon bits & mozzarella cheese and broil to melt the cheese. Outstanding flavor!

Grilled Salmon Kyoto

Reviewed: Apr. 24, 2006
This was great and very easy. My only changes were substituting orange juice for the concentrate and chili oil for the tomato sauce. Next time will let it marinate a little longer since my fish was thick.

Blackened Salmon Fillets

My non-fish-liking husband enjoyed this dish. In fact, it's the only time I remember him eating his whole serving. Worked well blackening it on a cast-iron skillet on the grill. Thanks!

Breaded Pork Tenderloin

Reviewed: Jan. 10, 2006
Family raved over this. Made only minor changes - olive oil replaced vegetable oil, added minced garlic to flavor the oil, no milk, just a bit of water added to the beaten eggs. Thanks for a very tasty recipe!
