Chicken Breasts with Balsamic Vinegar and Garlic

Very tasty and not too time consuming. We were looking for a flavorful chicken dish that wasn't cream based - this was perfect. The basalmic is such a nice flavor when it is reduced. Warning: the smell in the house remains pretty vinegry, but the flavor of the food is worth it.

Creamy Cajun Shrimp Pasta

Delicious and easy. I doubled the garlic and added a dash of basil, oregano and parsley for a little color. My pickiest eater had seconds and said it was great. Thanks!

Chicken A La King

My husband and I liked this, my 13 yo not so much. I used an orange pepper, garlic powder and more mushrooms, finely chopped. I served it over baked potatoes and it was excellent.

Pan Seared Lemon Tilapia with Parmesan Pasta

Not our favorite, the fish was a little bland. I also had a problem with the parmesan clumping at the bottom of the pan. If I did this again I would save a little pasta water, add the seasonings and olive oil then sprinkle the parmesan cheese over the past once it was plated.

Quinoa and Black Beans

This was good. The spices help mellow the bitterness of the quinoa. I have made this type of sidedish with white rice, but I think the quinoa makes an interesting change. I did toast the grain before adding it to the liquid.

Zucchini Pancakes

Great recipe to work with. I squeezed out the water from the zucchini before I added it. If it's too loose a batter, add a bit more flour. I also used half parmesan half shredded mozzarella because that's what I had on hand. The oregano was a nice addition. I substituted Ranch dressing for the mayo. So good, didn't need a topping!

Creamy Chicken Lasagna

My husband and I really enjoyed this. I added chopped sauteed onions and garlic to the poached chicken. I also used the poaching liquid instead of water to add to the bouillion. I increased the liquid because I was using the no boil lasagna noodles. It turned out great! I prefer it to the heavy beef ricotta "regular" lasagna. Thanks!

Delectable Carrot Fritters

Wow! We loved these. I was in a hurry & didn't even rest the batter-they still turned out delicious. The spices are really important or they will be bland. I didn't have hollandaise so we used Ranch dressing. My picky non-veggie eater ate several. Thanks!

Grilled Chicken and Angel Hair Pasta

We liked this. It was quick, pretty simple, used common ingredients and was tasty. I think the toasted almonds added some good texture to keep the pesto from becoming overpowering. Good weekday meal.

Spicy Flank Steak

Tasty, quick and reasonable number of ingredients. I toasted the spices first since I used whole coriander and cumin, then ground them with my pestle. Not too spicy, but good flavor.

Freeda's Fabulous Fish

Great tasting dish. I did change a few things to accommodate time and available ingredients. I seasoned the fish with garlic powder and rosemary, quickly sauteed it in a little butter, dumped in a little soy sauce and a can of drained canned tomatoes and let simmer until the fish was flaky. The sauce was great on rice. It looked pretty and tasted "fancy". Family all enjoyed it, even the pickiest eater. Thanks for an easy to adapt recipe with great flavor.

OREO® and Fudge Ice Cream Cake

Outstanding! Beautiful, easy and rich. We don't need to purchase expensive ice cream cakes anymore. Can easily adapt by changing the type of cookies, pudding and/or ice cream sandwich flavors. I think the third layer is necessary to get the full "wow" impression.

Breakfast Casserole I

We doubled the bacon and broccoli. It turned out really well for Christmas breakfast. It's nice to be able to get it ready the day before and just pop it into the oven before all the Christmas morning festivities.

Raspberry Ribbons

This is a nice change of pace and it does look pretty on the plate. I substituted strawberry jam and drizzled chocolate syrup instead of the white glaze. This is a versatile cookie that can be adapted to lots of different flavors. Delicious.
