Mom's Apple Fritters

Excellent - airy and not greasy. Halved the recipe just to make as an evening snack and it worked perfectly. Only needed one pink lady apple and it was just "applely" enough. Wouldn't change a thing (and that's a rarity - I love to tweak recipes!)

Emerald Green Risotto

Great recipe. Very flexible and adaptable - use any combination of veggies. We subbed parm for feta - personal preference. Only had Jasmine rice on hand. It worked but took a significant amount of time longer to cook. Loved how it stretched a cup of rice into several servings and boosted the nutritional value. Will make again

Elbows with Cauliflower and Brussels Sprouts

Good recipe that's easy to adapt to personal taste. I was trying to use up leftover pasta and this made it taste "new." I shredded the sprouts instead of quartering them so that they would brown more quickly and they are easier to eat. A little squeeze of lemon juice and some garlic were a couple of other minor changes. Also, we didn't have any cauliflower on hand, but it was still very good.

Carrot, Potato, and Cabbage Soup

I had some leftover cabbage and my family is not very fond of that vegetable so I was happy to find a soup recipe where I could "hide" it. I took some other reviews rec's about sauteeing the veggies; since we were adding olive oil anyway it seemed to make sense to do a quick sautee to bring out the flavors of the garlic and onion then dump everything else in. The results were great - a quick, easy soup made up of items I usually have on hand. It's light, healthy and delicious. Can't ask for more than that!

Smashed Cauliflower Side Dish

We liked this. I thought the garlic added a necessary dimension that kept it from being bland. I also threw in some leftover bacon at the last minute. Will definitely make this again.

Buttermilk Syrup

I didn't want to add corn syrup so I just left it out. I don't think it's necessary as long as you cook it long enough. Very nice flavor and pretty caramel color. I might get some maple abstract to give it a more traditional maple flavor, but overall we really liked this. It's nice to make something with simple ingredients to replace the store-bought syrup full of "stuff"

Tropical Sweet Potato Fries

This is great. It's not greasy like sweet potato fries can be. The combination of the heat of the spices and the tartness of the zest is unusual and delicious. We thought the texture was good, too. The larger size of the cuts made it tender on the inside but a little crispy on the outside. I did bump up the oven temp to 425 for the last 5 minutes or so to brown them. Will make often.

Perfect Ten Baked Cod

Delicious and easy. My changes were small: seasoning the fish with garlic powder, adding the panko/cracker crumb sooner than the recipe called for to make it crispier, and subbing lime for lemon (personal preference. Will definitely make again.

Amazing Greek Pasta

I will add a few more olives because I like their meatiness and saltiness in this dish. I also added some feta to the sauce at the end to let it melt and add some creaminess. The red pepper flakes give it another interesting dimension. This was really good and pretty easy to make. Thank you!

Cocoa Cherry Pork

Wow! This is extremely delicious. The pork is very tender and flavorful. Having that meat thermometer hit 145 is critical - it keeps you from drying out that expensive tenderloin. My only gripe is with the vinegar sauce. I cooked it longer to let it thicken and burn off that sharp vinegary flavor. In fact, next time I will use balsamic vinegar instead. Will definitely make this again for my hard to please brother-in-law and see how that goes.

Fasoliyyeh Bi Z-Zayt (Syrian Green Beans with Olive Oil)

We loved this. Wish I had had fresh cilantro, but even the dried made this dish so tasty. This is a very good way to make frozen green beans taste less watery

Honey Dijon Brussels Sprouts

I wish I had doubled this recipe. I was dispappointed that they were all gone when I went back for seconds. It was that good. The flavors really came together well and complemented the cabbaginess of the sprouts. I didn't change the sauce at all, but I did saute/steam the sprouts. When they were almost tender I dumped the sauce on them to finish cooking. I did have to add a bit of water to stretch it.It seemed to soak in a little. Really delicious. Thank you!

Apple-Stuffed Acorn Squash

I really like the flavors of this dish, but I think next time I will scoop out the squash flesh and mix it with the apple mixture, then put it back in the shell for the final cooking. I think it will integrate better and also be easier to eat. Thanks for something different from the same old butter/brown sugar squash recipe.

Black Beans and Pork Chops

Delicious, easy and quick. Love this treatment for pork chops, never one of my favorite meats, but this is oh, so good! Make sure to season the chops prior to cooking, then it all comes together quick and filling.

Salmon Rosemary Burgers

Yum! Very good as written. Probably used a little more bread crumbs because the patties seemed wet. (May have had more than the 2 1/2 lbs. Hard to say when you're working from a freshly caugh salmon. But the flavors were very good and I like the suggestion of food processing the minced fillet - made the flavors mix together better.

Cream Puffs

Not that it needs another rating, but YUM! Fantastic fresh flavor, with the addition of a splash of vanilla. We didn't use parchment paper and they still turned out fine at 21 minutes. Keep the batter balls small - they puff up beautifully.

Polenta with Italian Sausage

We liked this. It was easy and tasty. I added more herbs to flavor the tomato sauce -basil, oregano and pepper, and more garlic. I also added some mozzarella, but I won't do that next time. It didn't add anything and the texture was too much like the polenta. If anything, I would add more parm. It was a great work-week meal.

Really good with the addition of the recommended broth. I used olive tapenade and a touch of crushed rosemary in addition to the oregano. The other reviewer was right - no bun needed.
