Jenn's Stuffed Pork Roast and Veggies

I used a 2 lb. boneless pork roast and cut huge slits in it about 1 inch apart. I didn't have dried pineapple on hand, so I used raisins, which worked out well. I had a huge container of fresh spinach from Sam's Club, so I stuffed as much spinach as possible in each of the slits, along with the raisins from a snack size raisin box. Take note that the recipe contains no liquid. I added about 1/4 C of water to the roaster, but that wasn't enough. Two hours later I returned from running errands to find the smell of something burning. The vegetables were burned black and had to be discarded. However, the roast survived and tasted great. Be sure to add some sort of liquid, probably 1 cup would have done it, to the roaster of pork and vegetables in the oven- water/wine/broth/juice, etc. Perhaps sliced apples roasting with the pork roast would also be good. Great recipe, just needs some tweaking.

Megan's Granola

I've been making this Megan's Granola for about a year now. I eat it most every morning topped with vanilla yogurt and fresh blueberries and keep it in a 1.5 Gallon Rubbermaid Flex & Seal Container. I buy dried fruit, including apricots and cranberries for $1 a box at Walgreens. I buy small bags of nuts at Aldi for a good price. I also buy snack packs of raisins instead of a big container. I prefer to shop at a grocery (HyVee) that sells interesting bran, seeds, etc. in bulk and where I can experiment with different ingredients and buy just the amount I need. Some things I add include pumpkin seeds, sesame seeds, flax seed, and pine nuts. I delete the salt, cinnamon, and brown sugar. As another reviewer suggested, I put 2T of water in measuring cup before adding the oil. Add the coconut with 10 min. left to bake and add flax seed after cooking to preserve the nutrients. Know that it clumps after it cools.

Gee-Gee's Chicken Salad with Cantaloupe

I didn't have sour cream so I used vanilla yogurt, didn't have grapes so I used kiwi, didn't have celery so I used 1/4 t celery seed, didn't have lemon so I used lemon juice. I cooked some breaded chicken tenders I had in the freezer and cut them up for "chicken". I wanted to make sure my family ate the cantaloupe and didn't just eat out of it, so I cut the cantaloupe in chunks and mixed with dressing mixture .Served it on a bed of fresh spinach along side French bread and with soup.

Penne Rosa with Parmesan Crusted Chicken

I tweaked the recipe and it was a hit. I had cooked chicken on hand so I got water for the pasta going and started with step #9. I didn't use the egg whites, tomato sauce, or crust the chicken in Parmesan cheese. I used only 1 jar of Alfredo sauce plus added an Alfredo jar of milk. Each person added their desired amount of freshly grated Parmesan at the table.

Barbara's Salad

Having ham left over from Easter, I made this salad. I used only ham, not chicken, and served it on a bed of fresh spinach, with fresh pineapple cubes, sliced grapes, dried cranberries, and blue cheese dressing. It was excellent and a fast fix.

Christmas Morning Pie

I made one pie. I crumbled 3 sausage patties left over from breakfast. Now I know what to do with left over breakfast sausage! I had some pepper jack cheese slices about to expire so I tore them into pieces and used instead of shredded cheese. In addition to the peppers and onions I added fresh spinach and fresh mushrooms which we had on hand. I didn't saute anything - just threw it all in the pie shell. It was a fast dinner and very tasty.

Zippy Beef Bake

Instead of rice I used up an assortment of noodles I had on hand. I cooked the pasta before putting it in the mix and followed the baking instructions as directed. I omitted the butter - no need for it. I didn't have any cheese, but didn't miss it. In addition to the ingredients listed, I added a couple of jalapeno peppers I had on hand, yellow summer squash, and black olives. Yum! The jalapenos made it live up to it's "zippy" name.

High Protein Peanut Butter Balls

I renamed them "POWER BALLS". They are a yummy snack and a great way to consume the the whey protein powder aside from putting it in beverages. I had vanilla whey protein powder (1 scoop = 4 T) so as others suggested, I added 2 t of Hersheys COCOA POWDER to make it chocolate. I also added about a tablespoon of HONEY. I'll try adding WHEAT GERM, OAT BRAN, next time and CINNAMON to make them even more healthy. After making the balls I rolled them in an assortment of toppings that I had on hand - dry roasted PEANUTS, ALMONDS, COCONUT, CRANBERRIES, crumbled dark CHOCOLATE candy bar. To keep their shape and avoid them sticking together I froze them on a cookie sheet, then when frozen transferred them to a Ziploc bag to be eaten straight from the freezer.

German Apple Cake I

I've made a similar apple cake for years with a few adjustments: Add 1 teaspoon of nutmeg. I use my handy apple/peeler/corer/slicer and don't dice the apple slices - I like to see and taste apple. I bake the cake for 1 hour. For our children I make it in a bundt pan. Remove cake from the pan and cut the cake in half, making the shape of the letter "S" which resembles a worm. I put gummy worms around the plate for decoration. Frosting: Beat 3 oz. of cream cheese and 1 T butter until soft and fluffy. Add 1 t vanilla, a dash of salt, and 1 3/4 C powdered sugar. This cake is very good and easy to make.

Radish Revival

Adding cilantro, sea salt, and pepper provided good flavor. The red radish, with the white trimmed ends, and the green cilantro is a colorful dish with kick. I liked the radishes prepared the way the recipe is written. I also liked it when I added a squirt of fresh lime. It took me 5 minutes to make this healthy snack. This radish fan loved it!

Mediterranean Kale

My husband made a side dish of sauted sweet peppers, onions and peanuts. We decided to combine the kale dish with the pepper dish. I liked the way the sweet peppers mellowed the kale. The peanut crunch was also good. I used 3 cloves of garlic as I love garlic!

Easy Turkey Taco Soup

I served it over left over Spanish rice from this site and also made taco seasoning and dry ranch dressing from this site. Awesome! Served topped with sour cream and shredded cheese with good bread on the side.

Carrot, Potato, and Cabbage Soup

Rather than half a cabbage, I use a whole green cabbage and I leave the vegetables unblended. I use a sweet potato instead of a white potato and add crushed red pepper. As another reviewer suggested, I add a splash of Bragg's Apple Cider Vinegar and 1 t of curry plus whatever is in my vegetable bin that needs to be used. I like this recipe and have made it 3 - 4 times because I typically have everything needed on hand.

Coconut Persimmon Smoothie

Ive made this twice and find it refreshing. These are my modifications: I use unsweetened almond milk, no ice, a frozen banana, (I keep a bag of peeled bananas in the freezer for smoothies.) Bob Red Mill unsweetened flaked coconut, about an inch of fresh ginger, and I used less honey - about a teaspoon. I used the persimmons, cinnamon, and nutmeg as directed.
