Roasted Garlic Cauliflower

Reviewed: Sep. 22, 2013
I only give it three stars because I tweaked it a bit. I roasted it uncovered for the first 15 minutes, then tossed in fresh spinach and covered for the next 10 minutes. I then stirred in the Parmesan cheese and roasted for another 10 minutes covered. Wow! so good and the roasted garlic flavor was amazing! Thank you for a great recipe!

Blueberry Scones

Reviewed: Aug. 5, 2013
This was the first time I've ever made scones and chose this recipe because of the simplicity. I absolutely loved the scones! Not too sweet and with fresh blueberries the flavor was amazing! I will definitely save this recipe to my favorites!

Artichoke Spinach Lasagna

Reviewed: Feb. 19, 2012
I loved this lasagna! I made some modifications. I only used 8 oz broth, added portobello mushrooms, used fresh spinach, and did not pre-cook the noodles. I also used one jar Classico's roasted garlic alfredo sauce instead of red sauce. The dish was not runny, it did over flow the 11x7 I used.

Peanut Butter Kiss Cookies

Best cookies ever and the kids can help put the kissess on the warm peanut butter kissess. I used different type of kissess to mix it up a bit.

BLT Salad

Reviewed: Jan. 29, 2012
This was such a good salad. I used some left over homemade ranch dressing (about 1/2 cup) with the 1 cup of mayo that the recipe called for. What a hit. I will definetly make this one again.

Creamy PHILLY Rose Penne

Reviewed: Nov. 17, 2011
I agree the sauce is a bit thin and I used a 10 ounce container of the new cooking cream cheese. I also added shredded parmesan, sauteed onion and garlic, oregeno and baby peperoni. I liked it though and think this is a great basic recipe that can be built upon.

Vicki's Hush Puppies

Reviewed: Sep. 1, 2011
I screwed this dish up royally! The oil was too hot, the puppies broke when turned. I will leave this dish up to the seafood houses. I'm sure they would have been fine if I had a baby fryer or something other then my cast iron skillet.

Grilled Marinated Shrimp

Reviewed: Jul. 17, 2011
This recipe is so simple and the shrimp tasted awesome. I marinated it over night by accident and it survived. I used the left-over shrimp in a sald and it was good cold as well.

This was a great dip after I added a tablespoon of taco seasoning mix (recipe from All Recipes)! I also only had 6 oz sour cream so I addedd mayonaise and that worked just fine!

Old Fashioned Onion Rings

Reviewed: May 4, 2011
The only reason I'm giving these a 3 is because of the mess and how tedious it was to make them. Don't get me wrong, they were delicious and worth the effort, but I won't make them again. I'll get them at a restaurant because they are just as good, if not better!

Mendi's Favorite Orzo

Reviewed: May 3, 2011
This was very easy to make but lacked flavor. I followed recipe exactly. Next time I will add more herbs, and add the peas at the very last minute. By the way, I used real onion instead of powder, very good.
