California Cole Slaw

A terrific slaw and great option for those with dietary restrictions (dairy, eggs, etc.). I also was able to substitute 2 packages of stevia for the sugar with great results.

Cilantro, Avocado, Tomato, and Feta Salad

Loved this! But I gotta say 3 bunches of cilantro?! I used a half of one bunch I bought at the store and it was more than enough. Maybe I don't understand "bunch," but I take that to mean the full bunch that's twist-tied at the store. Three of those? Really?

Chip Chicken Lollipops

It's all that and more! Kids loved it, and even carb-averse husband wants me to make it for him too. I didn't even thread them on skewers or sticks. Just served them in little chunks. Excellent and easy. Thanks!

Awesome Red Wine Pot Roast

Excellently tender meat and vegetables. I'm gluten-intolerant, so I skipped the flour and braised it in a cast-iron pan. I used beef broth instead of water, adding another 1 cup of red wine/broth combo when I put in the vegetables. There was a little something lacking for me with this dish; maybe I needed to add more salt. But overall, very delicious and I will make it again.

Best Ever Party Appetizer

I did what many others did and just stirred all the ingredients up to make a spread that I put in a bowl surrounded by crackers. I did get many comments about how great it was, but it was a little thick/rich for my tastes. A very interesting combination of flavors, though. Not a typical cheese spread.

Roasted Sweet Potatoes & Onions

a very nice sweet potato recipe. added about a tablespoon of brown sugar, used orange juice instead of amaretto and skipped the nuts. maybe the last two omissions were why this dish, while delicious and able to stand as a side for a regular night, didn't earn rave reviews at my thanksgiving table tonight.

Crustless Pumpkin Pie

wow! this was a big hit tonight for dessert. easy to make and easy to eat. i substituted quinoa flour for the wheat flour, which gave this a slight earthy quality. we used whipped cream to top it off. nobody but my nephew missed the crust. excellent. i think i might make another one this weekend.

Honey Baked Chicken II

Delicious and easy. I also cut back to 1/4 c butter and honey each, 2 tbsp spicy brown mustard and 1/2 tsp salt and curry powder. Husband and kids loved it. Will definitely make this often, especially during the winter months. Excellent with rice and a red cabbage/apple dish also found off this site.

Grandma Jeanette's Amazing German Red Cabbage

Very good dish. My husband and I loved it; kids didn't even want to try it, unfortunately. I think I cooked it too long though. Was a little mushy and I would have preferred it a little crisper. Will watch my cooking temp and time next time.

Chicken Breasts with Balsamic Vinegar and Garlic

Excellent recipe. Very easy. I omitted the flour and used two pans for the 4 chicken breasts, adding garlic and mushrooms to each pan, and then consolidating into one pan after they were browned. A good move. The breasts browned beautifully and then all fit nicely into the pan with the broth/vinegar to simmer. Definitely has a vinegar kick, so if you're not a fan, this might not be the dish for you.

YUM! I used a whole small yellow onion, chopped, 1/3 cup chopped red pepper and 1/2 cup reduced fat cheddar cheese. Delicious!

Chicken Tikka Masala

Enjoyed this dish and think I would have liked it more had I gone with the full pepper amounts and used the jalapeno. But with two kids, sometimes you gotta sacrifice. Also, cut the chicken into chunks and broiled them. Might try skewering them and broiling them next time and look forward to grilling them outdoors this summer.

Easy Tilapia with Wine and Tomatoes

excellent and easy. used olive oil and a can of diced tomatoes with basil and oregano. did not drain it. i think i should have. i minced the garlic just because i forgot that the recipe said to press the cloves! (computer is in next room over from the kitchen!) also covered in foil and baked in the oven at 425 for 20 minutes as well. dish was extremely tasty but the fish, while wonderfully moist, was still too moist for my husband and me. next time, maybe i should ditch the foil and bake it uncovered?!
