Chocolate Cut Out Cookies

Loved these. Went with previous suggestions to go with 2 eggs, 11 tablespoons of cocoa powder and used a mix of predominantly powdered sugar and a bit of flour to roll them out. Definitely comes out best to get your rolled dough out to 1/4 inch high. That's the perfect height, though thinner cookies with their crisp were mighty fine too.

Baked Spaghetti Squash Lasagna Style

Really excellent recipe. I did not use the bouillon cube and it was still outstanding. Used much less cheese than called for as well. Next time, I might go full bore with the cheese and try some other ingredients too. This is a very adaptable recipe.

Applesauce Bars

Followed almost exactly, except added 1/3 cup raisins to the applesauce and let them sit about 10 minutes before mixing it in and made my pumpkin pie spice as per others suggestions. Haven't frosted them yet and don't know that I will! So yummy plain. May just sprinkle with powdered sugar before bringing to a bake sale tomorrow.

Eggplant Delight

I loved how this tasted, but I tweaked the recipe by cooking the eggplant rounds a bit in advance of dinner and then placing them in a 13X9 glass pan, covering them with the sauteed onions and sprinkling it with 1/2 cup of mozarrella shreds. I then put it under the broiler for 3 minutes. Very delicious.

Salsamole!!

Excellent recipe. I used just one jalapeno pepper (seeded and deveined) to keep it mild. Really loved it, but next time, I plan to use lime juice and add cilantro. Someday, when the kids are all grown up, I'll try it with all the fancy peppers!

Savory Pork Roast

So easy and delicious. Added a bit of olive oil to make it an easy rub all over the meat. I had a 2.3 pound roast and put it in the over for 1 hour. Meat thermometer was still low, so I left it in another 20 minutes. By then, the roast temp said almost 170 and I thought it would be overdone. But I let it sit about 30 minutes and it was outstanding (we do like it on the well-done side, though not dry and tough)! I've had trouble with pork roasts before, but I've finally found a winner.

Chicken Creole with Chile Cream Sauce

I loved this and didn't even use the full 2 teaspoons of creole seasonings or the chiles because of the kids. I did add some chopped pepperoncini to mine once it was on the plate. This was outstanding, though I'll have to make it next time without the flour because I'm gluten-intolerent and threw caution to the wind. Not the best move on my part. Hoping it's just as delicious when I make it with a flour substitute.

Kale Krisps

Surprisingly delicious. Even my 11 year old loved it. I sprinkled sea salt, pepper and garlic powder over chopped kale leaves then topped with a mix of shredded jack/colby and mozzarella cheeses. I used a plastic box of precut kale, which filled one baking sheet after I chopped it up. I used probably a cup of cheese sprinkled on top. Absolutely yummy!

Honey Glazed Ham

Outstanding taste. I used brown sugar instead of corn syrup and only used 1/3 cup of butter. This was a HUGE hit for Easter. So easy, so good!

Feijoada (Brazilian Black Bean Stew)

On a taste level, this is beyond 5 stars. Used our leftover ham bone from Easter and cut up the remaining meat. I used 2 cans of rinsed and drained black beans and added a third can of drained beans that I pureed. Still it was a little too soupy for me. I used a slotted spoon to serve it. And as others have said, it didn't look particularly good in the pot. Regardless, we all loved it, even my 11 year old. I will make this anytime I can get my hands on a ham bone!

Spinach Stuffed Chicken Breast

Terrific recipe. I used Greek yogurt instead of sour cream and mostly shredded mozzarella along with a chopped up slice of pepperjack cheese. Would suggest salting and peppering the pounded out chicken breasts before stuffing and wrapping though. Otherwise, my husband and I loved this! Will be making it for my MIL when she comes to dinner in a few weeks.

Easy Tilapia with Wine and Tomatoes

excellent and easy. used olive oil and a can of diced tomatoes with basil and oregano. did not drain it. i think i should have. i minced the garlic just because i forgot that the recipe said to press the cloves! (computer is in next room over from the kitchen!) also covered in foil and baked in the oven at 425 for 20 minutes as well. dish was extremely tasty but the fish, while wonderfully moist, was still too moist for my husband and me. next time, maybe i should ditch the foil and bake it uncovered?!

Chicken Tikka Masala

Enjoyed this dish and think I would have liked it more had I gone with the full pepper amounts and used the jalapeno. But with two kids, sometimes you gotta sacrifice. Also, cut the chicken into chunks and broiled them. Might try skewering them and broiling them next time and look forward to grilling them outdoors this summer.

Chicken Breasts with Balsamic Vinegar and Garlic

Excellent recipe. Very easy. I omitted the flour and used two pans for the 4 chicken breasts, adding garlic and mushrooms to each pan, and then consolidating into one pan after they were browned. A good move. The breasts browned beautifully and then all fit nicely into the pan with the broth/vinegar to simmer. Definitely has a vinegar kick, so if you're not a fan, this might not be the dish for you.

Herbed Pork Roast

Grandma Jeanette's Amazing German Red Cabbage

Very good dish. My husband and I loved it; kids didn't even want to try it, unfortunately. I think I cooked it too long though. Was a little mushy and I would have preferred it a little crisper. Will watch my cooking temp and time next time.

Honey Baked Chicken II

Delicious and easy. I also cut back to 1/4 c butter and honey each, 2 tbsp spicy brown mustard and 1/2 tsp salt and curry powder. Husband and kids loved it. Will definitely make this often, especially during the winter months. Excellent with rice and a red cabbage/apple dish also found off this site.

Crustless Pumpkin Pie

wow! this was a big hit tonight for dessert. easy to make and easy to eat. i substituted quinoa flour for the wheat flour, which gave this a slight earthy quality. we used whipped cream to top it off. nobody but my nephew missed the crust. excellent. i think i might make another one this weekend.
