Fast Chicken Soup Base

Boy, that was good! And easy. I used 3 tablespoons of Better Than Bouillon/Chicken with 3 quarts of water, and might cut back on the BTB next time because my daughter thought this soup was a little salty. Otherwise followed the recipe exactly. The rotisserie chicken (traditional) likely upped the salt level a lot too. But otherise, just a delicious soup that everyone loved.

Slow Cooker Carnitas

So very good! Wish I made more than a 2-pound pork loin roast. I did as others suggested and crisped it up for 10 minutes in a 400-degree oven. It dried it out a little bit too much for our tastes, but we all still devoured it. Maybe I was supposed to put it back in the juices after crisping it up! Next time, I think I'll forgo the oven and just serve it from the slow-cooker. A big winner!

Spicy Honey Mustard Pork Roast

This was ok. I didn't follow recipe exactly, and I wish I did, with the exception of the amount of pepper. I didn't use the full amount of pepper because of the kids. Put a foil tent over the meat and I used about 3/4 cup of water to help make a sauce with cornstarch after I took the roast out. Though it tasted pretty good, it looked very unappetizing, just kind of gray. I may make again because my husband and kids liked it fairly well, only I'll follow the recipe more closely and not add the water until maybe towards the end.

Spicy Sweet Potato Chips

Very tasty, though I avoided all but a pinch of cayenne because of the kids. A little too labor intensive for me and not enough bang for the buck. I think I'll try the EVOO and syrup combo next time I do baked sweet potato fries like I usually do them: cut into about 2.5 inch-long, 1/2-inch thick sticks. Husband and daughter prefer those to these.

Easy Baked Tilapia

Excellent and easy. Mix and match your own herbs. I used garlic 'n herbs, some seasoned salt and dried parsley and mixed it with about 1.5 tablespoons of butter. Melted it all and poured it over the fish. Added lemon slices, covered the dish and tinfoil and baked for 25 minutes. Sprinkled with shredded parmesean when it was done! YUM!!

Beer-Baked Irish Beef

oh, my! absolutely delicious. better than pot roast, because there's no chuck roast-type fat running through it and getting in the way of pure meat deliciousness. the stew meat, which i bought already cut in chunks from whole foods, was falling apart tender. only changes i made were adding some yukon gold potatoes and celery, and also, didn't have guinness on hand so i used a bottle of corona, and used dried parsley too. everyone loved it, even my 6-year-old who won't eat pot roast because of the fat that you encounter. i know some folks mentioned the allspice, but i found it wasn't a factor at all. it blended with the meat seamlessly and deliciously.

Soft Oatmeal Cookies

Excellent recipe. Cut back the white sugar to just slightly less than 1/2 cup, otherwise followed ingredients list through the adding of the oatmeal. Did as some others described and made a third of the batch with golden raisins, another third with craisins and white chocolate chips and the final third with M&Ms. Big fan of the raisins and M&Ms. I think I'll try another type of combo instead of the craisins/white chocolate chips next time.

Soy Sauce Substitute

This worked very well for a soy-allergic person like myself. But folks are right: This stinks when you're making it. My 6-year-old, normally a very easy-going little guy, made a point to hold his noise and run away to the basement because he said it smelled so awful. :)

Chicken and Red Wine Sauce

Awesome! Did a mushroom/onion saute first. Then cooked chicken breasts dredged in paprika/seasoned salt. Removed after about 5 min. per side and then made the sauce: Used the full 1 cup of wine, cut back the sugar to 1/4 cup and added 3/4 cup chicken broth and 1 tbsp cornstarch. Added back chicken/mushroom/onion and simmered for 20 minutes. Came out fantastic!

McCormick® Gingerbread Men Cookies

Excellent cookies for ease of making and taste. Chilled dough in fridge overnight and then let sit out about 10-15 minutes before rolling. Used normal amounts of flour to roll. Loved this recipe and have already had requests for it after making this Christmas.

Hard Cider Pot Roast

Excellently tender meat and vegetables. I'm gluten-intolerant, so I skipped the flour and braised it in a cast-iron pan. I used beef broth instead of water, adding another 1 cup of red wine/broth combo when I put in the vegetables. There was a little something lacking for me with this dish; maybe I needed to add more salt. But overall, very delicious and I will make it again.

Chocolate Cut Out Cookies

Loved these. Went with previous suggestions to go with 2 eggs, 11 tablespoons of cocoa powder and used a mix of predominantly powdered sugar and a bit of flour to roll them out. Definitely comes out best to get your rolled dough out to 1/4 inch high. That's the perfect height, though thinner cookies with their crisp were mighty fine too.
