Spinach and Artichoke Dip

Reviewed: Sep. 23, 2013
Addictive and delicious. Used pepper jack shreds and cut it back to 1 cup; used marinated artichoke hearts; and added 3 cloves minced garlic. just before baking, sprinkled about 2 tablespoons of parmesean shreds on top. A big hit at my party!

Colleen's Slow Cooker Jambalaya

Reviewed: Sep. 23, 2013
awesome! substituted ham for the shrimp and followed another suggestion here and added a can of tomato paste and eschewed the individual spices for a bay leaf and 1.5 tablespoons of Creole Seasoning made from this site too. Made for a party of about 10 adults and 4 kids and unfortunately two of the kids liked it, so I have no leftovers!

Banana Crumb Muffins

Reviewed: May 14, 2013
Woah! These are fantastic. Used canola oil instead of butter in the batter and put the topping on the muffins half-way through the bake time. Might put them on at beginning as specified next time; too sloppy putting them on midway through.

Crustless Spinach Quiche

Reviewed: May 14, 2013
Outstanding. Used a mix of Gruyere, Asiago and Mexican mix cheeses. Might cut down on the cheese next time.

Very tasty. Will definitely make again. Used full cup of dried lentils, added a shredded carrot and used 3 cups of chicken broth instead of water.

Red Velvet Cupcakes

Reviewed: Feb. 19, 2013
Terrific cupcakes. Glad I read through reviews that said to persevere when seeing how icky/glumpy the batter looked before adding the flour. It did not look promising to me, but the end result delivered.

Slow Cooker Chicken Taco Soup

Reviewed: Jan. 26, 2013
Liked it very much. Used fire roasted diced tomatoes, but next time will try at least one can with green chiles. It could use the punch of heat, which I opted to avoid due to my children. Served it over mixture of brown and black rice. Very tasty!

Pasta Sauce with Italian Sausage

Reviewed: Dec. 2, 2012
I used a half-pound of italian sausage meat instead of round beef in the sauce, but otherwise followed exactly. Wow! Absolutely delicious.

Chicken and Red Wine Sauce

Reviewed: Oct. 13, 2012
Awesome! Did a mushroom/onion saute first. Then cooked chicken breasts dredged in paprika/seasoned salt. Removed after about 5 min. per side and then made the sauce: Used the full 1 cup of wine, cut back the sugar to 1/4 cup and added 3/4 cup chicken broth and 1 tbsp cornstarch. Added back chicken/mushroom/onion and simmered for 20 minutes. Came out fantastic!

Pumpkin Chocolate Chip Cookies III

Reviewed: Oct. 6, 2012
Outstanding! I added 1/8 tsp of nutmeg and 1/8 tsp of cloves. Would also use just 1 to 1 1/2 cups of semisweet chips. 2 cups was too much. Upped the oven temp to 365 and baked for 12 minutes as per other reviewers.

Grandma's Corn Chowder

Reviewed: Jun. 1, 2012
Made this with regular corn and no dairy at all. Used 3 cups of chicken broth instead of water. I also pureed about 3 cups of it. Saved the crumbled bacon to sprinkle on top after ladling it into bowls. We loved it! Next time, I'll cut the potatoes much smaller.

Cardamom Granola Bars

Reviewed: Apr. 29, 2012
Great stuff! I used craisins and since I'm allergic to nuts, used some gluten-free chocolate rice puff cereal and coconut flakes. Added a 1/4 cup of Enjoy Life chocolate chips too. Will add them well after mixing in the heated butter/sugar/honey mix so they don't melt! Can't wait to try this basic recipe with cinnamon instead of cardamom, which my 7-year-old didn't care for.
