Cardamom Granola Bars

Great stuff! I used craisins and since I'm allergic to nuts, used some gluten-free chocolate rice puff cereal and coconut flakes. Added a 1/4 cup of Enjoy Life chocolate chips too. Will add them well after mixing in the heated butter/sugar/honey mix so they don't melt! Can't wait to try this basic recipe with cinnamon instead of cardamom, which my 7-year-old didn't care for.

Pumpkin Chocolate Chip Cookies III

Outstanding! I added 1/8 tsp of nutmeg and 1/8 tsp of cloves. Would also use just 1 to 1 1/2 cups of semisweet chips. 2 cups was too much. Upped the oven temp to 365 and baked for 12 minutes as per other reviewers.

Oh-So-Good Chicken

Did not use mushrooms (because of the kids), used about 1 1/4 cup of salsa and substituted brown rice for the white. Also added about 1 cup of thawed frozen corn. Very easy and very delicious. The next day, my 13-year-old daughter had it for lunch and dinner again!

Italian-Style Baked Crispy Chicken Breasts

Very nice and easy dish. Cut back on the lemon juice to 1 tablespoon and wound up baking it at 375 for 50 minutes. Also used half Spectrum canola mayo and half sour cream. Next time, I'd use canola mayo and Greek yogurt.

Baked Slow Cooker Chicken

Could anything be easier? I tried it two ways: first, I used about 2 cups chicken broth and a layer of carrots and celery instead of tinfoil balls. It came out terrific. Second time, I tried it without the broth and used the tinfoil balls. I still supplemented with some aging carrots/celery to form the base. Turned out delicious and easier to not use the chicken broth. I think this is a better way than the oven to cook chicken. Just SO easy!

Quinoa with Chickpeas and Tomatoes

Really enjoyed this soup. Used 4 cups chicken broth and skipped the water. Also used combo of tomato sauce and stewed tomatoes. Skipped the zucchini and used kale instead of spinach. Really, really tasty.

Glazed Country Ribs

Followed almost exactly, except for marinading time. Only got about 4 hours in instead of 8 or overnight. Will aim for the longer time next time. Also would slather on some BBQ sauce during the last 20 minutes of cooking. Excellent recipe though.

Sweet Restaurant Slaw

Outstanding recipe. Everyone loved it at our bbq. Used 2 bags of shredded slaw and kept the original measurements for the dressing (made this the day before serving it). I can't imagine if I had doubled the dressing! Yikes! That would have been way too much. I think I could have used 3 bags of cabbage shreds and it still would have melded greatly overnight.

I halved the recipe and added some garlic powder to the sauteed onions. Otherwise followed to a T. Loved it! Sprinkled some bacon bits on top once plated. Delicious.

Lime Chicken Soft Tacos

Used cilantro instead of oregano and used leftover broiled chicken (that had a balsamic marinade). Sliced the chicken very thin and sauteed it with the sauce. We LOVED it! Will double or triple the sauce next time. Needs more moisture for the soft tortillas.

Slow Cooker Italian Beef for Sandwiches

Wow! This was so delicious. Substituted beef broth for the water and used 2 tablespoons of the Italian Dressing Mix recipe from this site instead of store-bought. Halved the other herbs because I was using a 2.25 pound rump roast. Just outstanding! After 8 hours on low, took the meat out and shredded it and returned it to the cooker for another hour or so. Next time, I'll use a bigger roast!

Slow Cooker Pork Chops II

An excellent, easy dish. Instead of 1/4 cup of oil, I mixed all the dried spices and herbs and mixed about a tablespoon or so of olive oil to make a rub that I put on 6 thick-cut boneless pork chops. I used 2 cups of chicken broth made from Better Than Bouiillon and skipped the garlic cloves. 2 hours on High and about 2 hours on Low. Outstanding! Might do better just doing 4 hours on Low next time. Very delicious. I will use this mix for other meats for sure.

Fast Chicken Soup Base

Boy, that was good! And easy. I used 3 tablespoons of Better Than Bouillon/Chicken with 3 quarts of water, and might cut back on the BTB next time because my daughter thought this soup was a little salty. Otherwise followed the recipe exactly. The rotisserie chicken (traditional) likely upped the salt level a lot too. But otherise, just a delicious soup that everyone loved.

Slow Cooker Carnitas

So very good! Wish I made more than a 2-pound pork loin roast. I did as others suggested and crisped it up for 10 minutes in a 400-degree oven. It dried it out a little bit too much for our tastes, but we all still devoured it. Maybe I was supposed to put it back in the juices after crisping it up! Next time, I think I'll forgo the oven and just serve it from the slow-cooker. A big winner!

Spicy Honey Mustard Pork Roast

This was ok. I didn't follow recipe exactly, and I wish I did, with the exception of the amount of pepper. I didn't use the full amount of pepper because of the kids. Put a foil tent over the meat and I used about 3/4 cup of water to help make a sauce with cornstarch after I took the roast out. Though it tasted pretty good, it looked very unappetizing, just kind of gray. I may make again because my husband and kids liked it fairly well, only I'll follow the recipe more closely and not add the water until maybe towards the end.
