World's Best Lasagna

WOW ! This was very good lasagna. I love the sausage in it. I have always had 'beef only' lasagna in the past. We switched to cottage cheese instead of ricotta. All the mozzarella ... we love it cheesy. Definite, definite repeat !

Mom's Chicken

It was a hit. We both really liked it. Definite repeat. I used breasts and thighs only because I had to use them. Quick and easy, then into the oven for an hour. Had it with mashed potatoes. Use a good BBQ sauce.

Mexican Chicken I

This was one of my favorites. Cynjne was skeptical though because of the beans, but as it turns out she really liked it. We love cumin spiced dishes. She thought the adding salsa was a great idea and combined with the cumin she was willing to try it. In the end she really liked the beans in the dish. I used No Name brand medium salsa from the local store(Food Basics). Did not have enough time to make our own salsa from scratch, nor did we have everything needed. Definite, definite repeat. If you like chicken, you will like this I am sure.

Easy Spicy Mexican-American Chicken

Made this about a week ago. Went easy on the cayenne, about a third of a TBsp. The wife thought it might be too hot, it was not. Next time I will go with a bit more then half a TBsp see how that goes. Everyone liked this, it is a definite repeat. Made it again. The wife had steak, she does not like too spicy, so her son and I ate shared it. The sauce does not thicken up for me for some reason. This is the third time I have made it and the sauce always comes out like soup, although I have not tried a higher temp or longer cook time or both. I think I will try a higher temp when I make it next week.

Chicken with Chipotle

I made this couple of days ago and Tracy's tip from 2007 was helpful. Do not go over board with the peppers. Everybody liked the dish and it is a definite repeat. I had to go with a bit more milk because I did not have enough sour cream. Next time I will try skinless chicken because the skin left a lot of grease.

Bumbleberry Pie I

I have made this pie twice. First time was a disaster(far too watery), second time was one of the best pies I made. I used blackberries, raspberries and a mango. Using the 4.4oz containers our stores(here in Toronto) sell raspberries and blackberries in as cups. I used three of blacks and one of rasps and the mango sliced thin. I sprinkled some sugar and a pinch of starch on the fruit and let them sit for an hour while Cynjne made the crust. I also added a 1/2 teaspoon of starch to the flour and sugar mix. Adding the starch was a tip Cynjne picked up somewhere, it worked. She found the pie almost too sweet, but it is pie ... what do you want. lol She really liked the mango in the pie. It was really good. I am going to make it again in the next day or two. This time I am going to use more raspberries and add some blueberries. I may omit the mango. I am also thinking about using a peach.

Ooey-Gooey Cinnamon Buns

The first mistake I made was making them. The second mistake was sharing. I had to make them once a week for a while. These are the best Cinnamon Buns I have ever had, better then Cinn-a-bon or ST.Cinnamon. I left the nuts out of the recipe. I am just not a nut in cinnamon bun fan. I always have trouble rolling up the dough with the brown sugar coating. It wants to unravel. Other then that it is pretty easy, takes a while, but easy.

Baked French Fries II

I gave them a three because I like fries and these were ok. I had the same problem I see some others had, mine did not cook well, had to double the time and raise the temp for the second 20 mins. I will have to cut them thinner and try again. I use a stoneware square pan for cooking, I will try something different next time.

I liked them and will have them again. They were not great, but I think I did something wrong. They were good as far as fries go, just not what I was hoping for. When I try them again I will report back.

Bermuda Spinach Salad

I love this salad ! Love it ! I hate eggs so I have it without the eggs. Cynjne has it with the eggs. she preps the eggs and adds them to her portion. You have to shake the dressing as it is passed around, but it is worth it. A very good salad. DO NOT SKIP THE CELERY SEED !!!

Totally Tangy Baked French Fries

I like spicy and these were really spicy. I always prefer to make the dish as per the recipe directions at least the first time, then make any changes if neccesary. These fries were just a little too spicy for me, so next time I make them I will cut down on the hot spice. I will make them again.

Brooklyn Girl's Penne Arrabiata

One of the absolute best dishes I have every enjoyed. We make it at least once every two months, more if it were up to me. Do not be scared off by the amount of garlic. Makes a mess, but well worth it !
