Tortilla Rollups I

This was easy and well-received! I made a double batch, and I used one jar of medium chunky salsa and one jar of corn/black bean chunky salsa. I also added shredded cheese. Yum!

Cajun Pineapple Salad

This was pretty tasty! I halved the recipe and even then used only an 11 oz. bag of lettuce; I'm glad I didn't use more lettuce because it would have been sort of dry. I was leery of the ingredients, but the taste was good. Made it for Mardi Gras dinner, and I'll probably make it again in the future.

Tuna Salad with Cranberries

Wow, this is yummy! I just made it for lunch with whole wheat toast. I used light mayo and added one stalk of celery and 2 T sliced almonds. I couldn't detect the light mayo at all (I was worried it would affect the taste) with all those other good flavors. It was nice that the recipe didn't call for too much mayo to begin with. I used the dill and meant to add onion, too - maybe next time. Bottom line: I think the recipe is good as-is OR dressed up. Thanks for my new tuna salad recipe!

Beer Cheese Pretzel and Dip

I just made the dip portion of this recipe, but it went over very well at a party recently. I actually used 1/2 processed cheese and 1/2 shredded sharp cheddar cheese in addition to the cream cheese. Also, I made it hot. I placed all the ingredients in a microwave-safe bowl, heated it, then poured it into my mini crock pot to keep it warm the rest of the night. I served it with regular pretzels and soft pretzels that I microwaved and ripped into smaller pieces. You will get requests for this recipe!

Cream Cheese Pie

Simple and delicious! I used reduced fat crust, neufchatel cheese, and light sour cream. Like someone else mentioned, the sour cream is more detectable when the pie is fresh out of the oven. So in my case, the sort-of-funny-tasting light sour cream was more noticable at that time, but not bad. (And obviously this is not the fault of the recipe.) Once chilled though, I don't think anyone would have known it was low fat. I will make again- low fat, full fat, whatever. I loved it. Thanks!

Hash Brown Egg Bake

This went over very well at my post-high-school-reunion brunch. I browned some onions and veggie bacon in a skillet before adding them to the recipe; I omitted sausage or other meat. I also added an extra egg and extra milk as some people had suggested. It didn't have a whole lot of flavor, but that's what condiments are for. But it was good plain, too, I thought. I will make this again. It's a great base recipe to which you can add all kinds of goodies.

Creamy Two-Layer Pumpkin Pie

This was a completely effortless recipe and really tasty. I think I'll make the bottom cream layer a little thicker next time, but that's just due to my cream cheese obsession. I'll make this again!

Cream Cheese Cookie Cups

My friends gobbled these up and asked for the recipe! I used a regular-sized muffin pan (greased), so the cups were pretty shallow, but it didn't really matter. I would probably add a little less sugar to the filling next time, but they were still really yummy. :]

This was fantastic! I followed the recipe pretty closely except that I left some skin on the potatoes and used a bacon substitute (we're vegetarians). It was really delicious; I can't wait to eat the leftovers!

Spruced Up Mashed Potatoes

This was quite good! I added a little extra milk and butter as some people had suggested, and I added extra carrots and left some of the peel on the potatoes. I will be making this again. And I will never NOT add cauliflower to mashed potatoes!

Chocolate-Cran-Oat Cookies

Very yummy! I altered the recipe a bit: only two cups of whole wheat flour, one cup cranberries, all semi-sweet chocolate chips, and added half a cup of sliced almonds. The cookies weren't dry and had a wonderful taste. :]
