Vegetable Fried Rice
I really like this recipe!! Love the addition of nuts, red pepper flakes, and peppers - most people don't add peppers. I also added: 1 egg, 1 chopped up chicken breast I had left over from grilling out the night before, and 1 julienned carrot. I also used a red pepper instead of green for the color. My husband raved about this batch of fried rice when I made it 2 weeks ago and am actually making it again tonight. Am thinking of making it with Hot Chili Oil as my husband loves hot stuff and the red pepper flakes were barely detected last time.

Quinoa and Black Beans
Very good recipe for quinoa! I served this with Beef fajitas and the family loved it! I rinsed the quinoa, didn't soak, and it turned out fine - not bitter, and not too mushy like some posts mentioned. I added some of the extras mentioned and it was delish - green pepper, diced tomatoes with green chilies(drained), and some taco seasoning to give it a little more kick...felt the heat factor would be fine to start off with re: cayenne pepper. I doubled the batch, but only added the two cans called for in the original recipe. Will definitely make this again and could totally see this as a stand alone meal! Thank you Allrecipes!
