Middle Eastern Rice with Black Beans and Chickpeas
Fantastic. Going to make this a regular on the menu. Entire family loved it, including two teen-age boys. Will reduce the amount of chicken broth, as the rice was more wet than I like. Excellent flavor. I didn't measure spices so I might have been on the heavy side with them. Might add some sautéed onion to it next time and possibly some spinach or chard. I left out the turkey and nobody missed it. This is a great recipe as is or to tweek.

Chicken Enchilada Slow Cooker Soup
Great recipe! I made it on the stovetop rather than a slow cooker. Therefore, I was able to saute the onions and garlic in olive oil in order to enhance the flavor. I also made this with stew beef and it was great. I did thicken by adding some cornstarch mixed with cold water in the last twenty minutes of cooking. Served with grated Pepperjack cheese. Big hit with the entire family.

Broccoli Soup
Fabulous! I took the advice of other reviewers and added an additional potato. Found it a little bland for our taste so I added Thyme, Basil, and a lot of fresh ground pepper. I used fresh, organic broccoli too. My 11-year-old whined and argued about having to even try it, took one taste, and liked it. He is extremely particular and difficult when it comes to food so this was victory. Rest of the family loved it! I thought I would have to add some cream and maybe some cheese but it is not necessary at all! I was thrilled when I saw the detailed nutritional analysis too. This is a keeper!!
