I really, really liked this recipe. It is definitely a Tex-Mex Chili with a very unique layered flavor.
I quartered the recipe because I was making it for just my husband and I and we still had enough for two meals!
i DID use the carrots (but I've never used them in chili before) and will use them again. I didn't take a bite and think "oh, there's a carrot" but I think it added to the over all "package" of flavors.
I couldn't find spicy Italian sausage in casings but used a fully cooked hot and spicy Italian Sausage that tasted more like andouille sausage to me. It didn't have the licorice flavor that others are talking about. I really liked what I used so I'll probably stick with it. Since it was fully cooked I waited to add it when the recipe says to add the cooked ground beef back in.
I added more beans and stewed tomatoes because that's the way we like it.
I only added half the amount of honey. I like sweet and spicy but my husband doesn't like sweet chili.
I will definitely make this again and again!
