Chicken Vegetable Barley Soup

Reviewed: Feb. 12, 2012
I just finished making this soup and I think it's great! I used no-sodium chicken broth so had to add a bit more salt. I also sprinkled dried rosemary and sea salt to the chicken and baked it before adding to the soup, gave it a nice flavour. I LOVE the toasted almonds, it's so different and is really crunchy. I used flat Italian parsley, and added a small zucchini and some kale along with the other vegetables. I will definitely make this again but will try with a homemade chicken stock rather than store bought and probably won't add butter as I don't think it altered the flavour or texture at all. Really great on a cold night!

Jamie's Minestrone

Reviewed: Nov. 2, 2010
This soup is SO good, I'd been looking for a great soup recipe and this is definitely it! I used 2 large cans of no-salt whole tomatoes, 4 C of chicken broth, and chopped kale and mushrooms which I sauteed with the carrots and celery. Tomorrow we're going to toss some cooked ground bison in with the leftover soup and see what that's like. Made a loaf of rye bread and it was a very satisfying meal!

Ultimate Irresistible Granola

Reviewed: Feb. 4, 2010
Just finished eating my second bowl of this granola today, I seriously can't get through a day without it. I have taken the advice of several reviewers and added an extra cup of oats, some vanilla and cinnamon, and this time I added dried blueberries and it really is awesome. In fact we mix it with Cheerios or All Bran flakes so it will last longer otherwise I'd be making it twice a week!

Christmas Cake

Reviewed: Jan. 24, 2010
This was my first time making Christmas cake, I only made it so my husband, who loves it, wouldn't go and buy one. And it is really good, but be warned it makes a huge amount, I didn't have a pan that would fit so I used two. There's so much we'll probably be eating it until March, but it keeps getting better with age!

These are so yummy, I made them before Christmas to freeze, but we ate them all so I had to make another batch. Fantastic!

Purple Apple Slaw

Love this recipe, and I am not the biggest coleslaw fan, in fact I never eat coleslaw unless I make it myself. This is great!

My husband's favorite cake, I make it as a special treat on his birthday. It's great with a touch of sifted icing sugar and fresh strawberries.

Honey Whole Wheat Bread

Reviewed: Jan. 27, 2009
This is a great loaf for sandwiches, I make a loaf every couple of days for lunches and every scrap is eaten! I add about 1/4 cup of ground flax seeds, and sometimes will use 2tbsp of cooking oil instead of the butter. Good all-around bread!

Grandmother's Buttermilk Cornbread

Wow this is just fantastic, made it for the first time today to go with my Southwestern Turkey Chili. It's already in my list of favorite recipes, and I didn't change anything. Thanks so much for this!
