Red Velvet Cupcakes

I have never made cupcakes. This recipe is so easy, my 10 year old made with minimum of my supervision. The cupcakes come out moist and fluffy, the frosting is simply delicious. We had to cut down sugar the first time and even more so the second time. Will use this recipe as a base for some other types of cupcakes. Thank you for sharing!

Banana Sour Cream Bread

I don't think I will find any better recepie for banana bread than this. Everyone who tried it LOVED it! Lots of complements! I did use plain yogurt instead of sour cream. Yummy.

Spooky Witches' Fingers

The only reason I gave it 4 stars is because the taste is just OK. I followed the recepie, except for the "blood" I had used strawberry preserves, which I think made them look spookier as "the blood" had darkened. I also added green food coloring. I think 20 minutes is enough to bake. Please keep in mind, they do expand, so make them thinner, otherwise the fingers will come out chubby. I made some for my daughter's school party, then had some leftovers and brought them to my Juzzercize class. Everyone loved them, especially the look. I just hope something could be done to improve the taste.

Cowboy Oatmeal Cookies

I wish I could give these cookies at least 8 stars! They are absolutely deicious! Look great, chewy, yet melting in your mouth. I am writing this as my second batch is in the oven. Next time I will try to use Splenda instead of sugar, so that my Mom could try them. 10/29/10 I did put 3 cups of oatmeal-turned out even better. Added some pecans and I was in Heaven!

Baked Falafel

Absolutely loved it! Very easy recipe. To cut down on fat, I did not brown them. I spooned then into the oiled baking sheet, sprayed with a cooking spray, just like cookies, then baked them about 15-20 min per batch (time may vary). They came out softer, then hardened a little, as they cooled down.
