Basic Corn Muffins

Waffles I

I went against my better instincts and followed this recipe as written. It got such high praise. But this tasted too strongly of baking powder.. Halve the Baking powder and add a tablespoon of lemon juice. The acid in the juice will react with the powder and creates the same effect.

Portuguese Muffins - Bolo Levedo

Not only was this recipe fairly easy (at least with a kitchen aid doing the work), but the bolo's came out perfectly. These were a favourite treat growing up when my mother brought them home from the shop and now they are going to be a favourite of my daughters (and husband) when I make them at home. I read through the reviews and my experience was so different from many of the others. Although we all seemed to love the results, it seems that some put way more effort in than I did. I placed all the ingredients at once into my Kitchen aid and let it go for about ten minutes. Then I let it rise in my oven with the oven light on for an hour or two. This resulted in a nice, elastic dough that I kneaded lightly and cut in to 16 parts. With a rolling pin I rolled (only three rolls in total) the dough balls into flat circles. I let them rise again on a well oiled parchment paper and gave them an extra coating on top to make sure they didn't stick. When they were ready to cook, I heated a cast iron griddle on med-low heat and gently placed each patty on to the pan and cooked for 2 minutes a side. They were perfect. Honestly, if I spent more than hour of actual labour on these I would be surprised.

Brussels Sprouts Gratin

I loved this, but I gave only three stars because I changed quite a bit. I sautéed the bacon and halved the spouts. Instead of pre-boiling the sprouts, I added them directly to the bacon to cook them. This makes a big difference to their taste and texture. Then it was all seasoned and baked in cream and topping. In the end, I don't think the cream added anything. I would make this again, but my style.

Cream of Wheat Griddlecakes

This was lovely. We have pancakes a lot in our house and these are definitely above the bar! I made some health conscious changes - Whole wheat flour instead of white, apple sauce instead of oil, evaporated milk instead of sour cream. They still came out fluffy and delicious.

San Francisco Style Bagels

I made this in my bread maker and baked it as a loaf. I added 1/4 cup agave syrup to add the sweetness missed from the boiling stage. It made a beautiful bread. Sweet, chewy, tender texture. Delicious bagel taste.

Hearty Meatball Soup II

Soup is wonderful because recipes are so much more of an idea than requirement. This recipe is a great example of that. I didn't use the onion soup, I added carrots, chopped spinach and corn. I added the can of tomatoes which I think make a real difference. My meatballs were both pork and beef and I flavoured them with herbs akin to pork stuffing. The end effect was so delicious my daughter ate two bowls. BIG bowls.

Cucumber Nut Bread

The texture of this loaf was lovely. I actually drained my cucumbers for over 24 hours and it was I think this made a difference. The taste was good except for the overwhelming flavour of the cucumbers! I like cucumbers, but I am not sure the flavour lends itself to this kind of loaf. But if that is what you are looking for, than this recipe will fit the bill!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

I didn't use the recipe for the cookie dough. I used an eggless cookie dough. However, I am giving this 5 stars because it was such a fabulous idea and well directed. These were a huge hit at my daughters party.

Spoon Rolls

These are lovely. They are a sweet bread with a cake like texture. I let the batter rest on the counter until doubled in size - about 2 hours - and then I scooped the batter in tablespoons into my babycakes maker. Easy as pie, and just as tasty.

Lime-Marinated Grilled Salmon

Quite tasty. I gave it no time to marinate and it still was very flavourful on fresh salmon steaks. If I marinated it I can not imagine how much better it would have been.

Boiled Custard

This is exactly what custard is suppose to taste like. I held back a star because I prefer it a bit thicker. If you used only egg yolks it would be, but then you'd have the hassle of extra whites hanging around. So I think that this recipe would be improved with the addition of corn flour. I used this as a base for ice milk and it works perfectly.

Classic Waffles

Very tasty!! If you want the fluffiness of whipped egg whites without the work simply add a tablespoon or two of lemon juice. The acid reacts with the baking powder already in the recipe and makes very fluffy waffles.

Grilled Tequila Portobello

This was delicious. But if don't like tequila, then this is not for you. My only change was that I marinated the mushrooms in the sauce for about 30 minutes instead of brushing it on.
