Enchiladas Verdes
Amazing and delicious. The sauce seemed a bit watery to me so next time I won't use so much. I'm not a wimp when it comes to spice but I was worried about it being too spicy so I only used one Serrano pepper. I realize now I could have used all three. But if you're sensitive to spice stick with one. My husband was amazed and said it was better than any restaurant he's been to. Winning recipe!

Black Bean and Salsa Soup
Amazingly yummy! I cooked my own dried black beans from the store first. I also used chicken stock because it was what I had in the house. Turned out great!

Brown Rice and Chicken Casserole
I'm lactose intolerant so I eliminated the milk and cheese. I cooked the brown rice in 2 cups of water to soften then I combined all the ingredients with one can of chicken broth and baked like normal. I calculated the entire casserole's calories at 900 with these changes. Still tastes yummy!
