Blueberry Streusel Muffins

These are the best blueberry muffins I have ever made. I made them exactly as is with one change: as recommended by other readers, I upped the sugar to 1/2 cup (instead of 1/3). I used fresh blueberries. My boyfriend loved them so much he ate 4 of them. I just made these again, but was out of milk. I used buttermilk, and left the sugar at 1/3 cup. Better than ever! Husband said they were the best muffins he ever had!

Feta Veggie Quiche

This was delicious! Based on other reviews, I cooked the veggies on the stove first (let them cool before adding to eggs). It took 55 minutes for it to cook in a deep pan. I had to lower the temperature to 325 for the last 20 minutes of cooking (probably because of my oven, which tends to cook too quickly) because the top of the quiche was already very brown. I used asparagus in place of the broccoli, and salted the veggies with garlic salt while they cooked. Also, I used herb feta cheese and for the milk 1 cup half and half and 1/2 cup 1% milk. Beef Sirloin Steak with Baby Spinach

This had way too much balsamic vinegar for me (too strong of a flavor). I tried to fix it by adding milk and a bit of soy sauce, but when that didn't help I added some onion soup mix and then I could tolerate it. I wouldn't say it was good. I'm glad I decided to keep the meat separate from the sauce/gravy just in case. Also, I don't know why you would pour out the grease after cooking the meat only to add olive oil back in. Just cook the veggies in the juices of the meat.

Award Winning Soft Chocolate Chip Cookies

I have made these cookies several times and they are my favorite. They always turn out the best when I use oat flour (you can buy it in the bulk section of many grocery stores). It makes a big difference. If you use unsalted butter, you will need to add salt to the recipe. This recipe makes a ton of cookies! But they go fast...

Cajun Potato Soup

It's OK. The soup itself does not have that much flavor, and it lacks depth. Too much cream/milk. I used half and half. If I made this again I would probably use half of the milk/cream quantity the recipe calls for. And I would use cajun seasoning. Also, I don't know why you would add the chicken stock 15 minutes after the potatoes. Cook the potatoes in the chicken stock. That should only take 10-15 minutes. And milk/cream should be added at the end and heated through only until hot.

Kentucky Biscuits

Mmm...These were so good! I followed the recipe exactly, using organic and natural ingredients (unbleached flour, turbinado sugar, coarse sea salt, unsalted butter) and low-fat buttermilk. I was so impressed. They turned out delicious and moist, and I didn't even want to spread them with butter, jelly or honey. I will definitely use this recipe again. Thanks!
