Zucchini Brownies

Someone gave me a monster zucchini and I was surfing for recipes to use it up when I stumbled upon this one. SO GOOD. Don't be fooled into adding an egg! The batter was REALLY dry and crumbly before adding the zucchini, almost like graham cracker crust, but it moistened up once I folded in the shredded zucchini. It was still really thick, but they baked up moist and fudgy and awesome. I spread the frosting on while they were still warm so it would melt and cool into a nice crust. My 6 year old WATCHED me put zucchini in these and she still gobbled it down. She said it changed her life, but then she's a little dramatic. Recipe is great as written! NO EGGS

Easy Tomato Sauce

Someone gave me fresh tomatoes and I needed a way to prepare them (I won't eat them plain), and this recipe was great! As other reviewers stated it's a good base that can be dressed up any number of ways. I personally added minced garlic, basil, oregano, peppers, a little sugar and salt, and 1 cup of chicken broth, then let it simmer and reduce and thicken for a few hours. It was great with spaghetti and meatballs!!

Wacky Cake VIII

I was low on ingredients and wanted a good dessert so I thought I'd give this a try. I didn't have cider vinegar, so I used regular white vinegar and per other reviewers I made it with coffee instead of plain of water. I've also made it per the recipe, and either way it was great. I was so surprised. I baked it in an 8 inch round pan and then iced it with the creamy chocolate frosting from this site. It made for a really rich, decadent, and most importantly EASY dessert. This is now my family's favorite cake!

Creamy Chocolate Frosting

This frosting is AMAZING!! It's soooo chocolaty and super easy. I was low on ingredients and wanted a good dessert, so I made this frosting and used it to frost the Wacky Cake recipe on this site. I was surprised by how decadent it turned out! This is now my go-to chocolate frosting. Also, I used regular whole milk and just added a tbsp at a time until it reached the consistency I wanted. It was still awesome.

Pumpkin Spice Cake with Cinnamon Cream Cheese Frosting

I made this for a family dinner once and ever since then, my fam requests it at EVERY event. I didn't put cinnamon in my cream cheese frosting, but other than that, I followed the recipe. Delcious!

Marinated Baked Pork Chops

I needed a quick simple dinner for last night and made this recipe exactly as written, except I doubled everything. I let the pork chops sit in the sauce for a little over an hour until I was ready to make dinner. These were DELICIOUS! My normally picky 5 year old had eaten her entire pork chop before I even sat down with my plate! I'll be keeping this one to use again!

White Cake Frosting I

This was a great recipe! However, I'm only rating four stars because I made it per other users advice with 1/2 cup butter and 1/4 cup shortening. I only used 3 cups of powdered sugar per batch, and that was plenty. The frosting came out PERFECT for decorating my daughter's birthday cake.

Luscious Slush Punch

Pineapple Upside-Down Cake VII

This was amazing!! I made it in a bundt pan because I wasn't sure if my skillet would be large enough. I melted the butter and then mixed in the brown sugar, but I cut it back to about 3/4 of a cup. Poured that in the bottom of the bundt pan and then put some cherries down on top of that. Then I crushed up some fresh pineapple in the food processor and put that on top of the cherries. Like other reviewers I used a yellow cake mix and used pineapple juice for the liquid. It is DIVINE.

Best Tuna Casserole

I made this casserole tonight for a meatless super/potluck hosted by our church for lent. I added extra noodles, an extra can of tuna, an extra can of soup, and about 1 cup of milk to the recipe as per other reviewers' suggestions. I used onion and garlic powders to season. It made a HUGE batch and there was NOTHING left. Everyone loved it! I will definitely be keeping this recipe to use again! Thanks!

Pumpkin Cake II

This was so easy and delicious! I usually fail miserably at homemade cake, but this came out BEAUTIFUL! And soooo yummy! I did subsitute 1 cup of applesauce for 1 cup of the oil. I drizzled it with cream cheese frosting and sprinkled on chopped pecans rather than baking in the walnuts. So delicious!

Creole Black-Eyed Peas and Rice

This was easy and delicious, but the second time I made it I turned it into a casserole. I browned the ground meat with a dash of worchesteshire sauce. The hubby doesn't like the onion and pepper "bits" so I subsituted with seasonings. I took the ground beef, the two cans of peas, one can of cream of chicken soup, 3/4 cup water, the rice, and 1tbsp creole seasoning, 1 tbsp onion powder, garlic powder (we like a lot of garlic) and a dash of cayenne pepper and mixed it all up together in a bowl. Spread the mixture into a 9x13 baking dish and baked it at 350 F for about 30 minutes. Then sprinkled a bit of cheddar cheese on top and covered with foil to let the cheese melt and the casserole set up. It was yummy! Thanks for the great Recipe!

Todd's Famous Blueberry Pancakes

Thanks Tricia, this is just what I was looking for. Served these for breakfast in honor of Fourth of July with some blueberry syrup and they were DELICIOUS! I usually keep the leftovers for re-heating during the week in place of frozen storebought pancakes and waffles, but there was nothing left!

Cowboy Oatmeal Cookies

These were the best oatmeal cookies that I've ever made. I did follow other users' advice and add an extra cup of oats and 1 tsp of vanilla. I also used 1/2 cup of applesauce in place of the oil and used chocolate chips instead of butterscotch because I didn't have the butterscotch. Usually when I attempt oatmeal cookies they spread and don't turn out at all like I want, but these were really easy and came out awesome! This is a great oatmeal cookie base that I look forward to using again and again!

Sweet, Sticky and Spicy Chicken

This was really quick and awesome! I only used 1 tbsp of hot sauce and it was plenty spicy enough for my tastes.. but I guess it can really depend on the brand of hot sauce you are using too. I also added some carrot strips which paired really well with the sweet-n-spicy gingery sauce. Will definitely make again!

Sloppy Joe Sandwiches

These Sloppy Joes were *PERFECT* for my family. My husband hates the "bits" (i.e.-onion and bell pepper chunks) that I usually enjoy, but loves the flavor they bring. This way we can both enjoy these! I doubled the recipe for my family and Hubby went back for seconds! Excellent!

Banana Pancakes I

These were awesome pancakes! I added the vanilla like several other vanilla's and then tossed in some chopped walnuts and a couple of chocolate chips into each pancake too. DELICIOUS!
