Guinness® Corned Beef

Good but we found it too sweet. if I use this recipe again, will reduce sugar to a quarter of what was suggested. Cooked in slow cooker on low for 4 hours then added veg and an hour later added the cabbage for the last hour of cooking.

Perfect Apple Pie

Very nice. I blind baked the base crust, coated with egg white and baked another 5 minutes. Added cranberries and walnuts to the filling. Delish. Base was nice and crunchy, not soggy as it sometimes gets with an apple pie. Will make again next week for Thanksgiving.

Stuffed Cabbage Rolls

Turned out great! Used ground turkey and brown rice. I didn't boil the leaves, just cored it and then placed in the microwave for 2.5 minutes (4 x) turning it around each time. The leaves came off perfectly with no mess. Also, did not use condensed tomato soup, but instead used a large jar of crushed tomatoes which I added to sauteed chopped onion with garlic and about a glass of white wine. When putting it all together I alternated the tomato sauce with left over cabbage leaves in between the cabbage rolls topping the entire thing with remaining tomato sauce. Baked at 350 for almost 2 hrs. It was great. Will freeze the rest for the next time.

Quinoa Side Dish

As others I sauteed onions, garlic and mushrooms and also added prawns. Instead of 1 Tablespoon of butter, I used one teaspoon of olive oil to make it a bit healthier... Delish and a definite keeper in our household.

Mom's Cucumber Salad

This is a traditional Polish summer cucumber salad with a twist. The original calls for a bit of sour cream instead of mayo which is even better as adds a bit of smooth tartness. Also, use small pickling type cucumbers for best result. YUM.

Insanely Easy Vegetarian Chili

Very good. We made a few changes.... added fresh fennel along with the celery, used fresh hurbs instead of dry, about 1/2 bottle of white wine and the mushrooms were added during the last 8 or so minutes to prevent overcooking. Served on top on quinoa. YUM

Southern Fried Cabbage

Excellent recipe. I eliminated the oil and sugar. Increased bacon to 1 lb. and sliced it into small pieces. When bacon was crispy I took it out of the pan and set aside. Used grease rendered by the bacon for the cabbage and onions (increased to 2 onions and added 2 cloves of chopped garlic). On the side cooked 2 large quartered potatoes and when almost soft added them to the cabbage. When all was cooked, added the crispy bacon and a large bunch of chopped parlsey. YUM! My family went wild as served with pork chops and mushroom gravy.
