About this Cook
Born and raised in New Orleans,(Southern girl) creole by heredity; mother born in Mississipi, father born on the island formerly know as San Domingue, now known as Haiti one of the "Gens du Colour", what you might call "Pase Blanc" (french, spanish, carribean). Learn to cook when I was seven years old by my mother, grandmother and great grandmother. Both grand parents lived to be 101-103 years of age, outliving all of their spouses, they were each married at least three times. They attribute the spices they used to evoke passion in their meals. I only hope I can live with as much joy and longevity as they did.
My favorite things to cook
Fish, seafood, creole recipes, cioppinos' gumbos, jambalaya's, creole stews, chicken, lamb, veal, pork dishes, masalas (spicey mix).
My favorite family cooking traditions
Creole, Southern,Soul Food, Indian, Greek and Italian. At present, food for the soul; healthy dishes requiring very little oil, and more flavor and less sodium, natural stocks and wine to add flavor rather than water. A meal to stimulate the olfactory sensor receptors on the tongue (taste) and the satiety receptors (smell), which are connected; by preparing a more satisfying meal. Meals that will stimulate or trigger the pleasure zones providing a more sensual experience when dinning.
My cooking triumphs
Perfecting our family recipe for Bread Pudding with White Chocolate & Bourbon Sauce. formerly used milk chocolate with a hint of ceyenne, made it lighter with the white chocolate, I've made this dessert for many years, and it never ceases to amaze me how many people request this recipe. I had a friend who visited from England and brought her boy friend (he's a publisher) who actually offered me $500.00 for the recipe. Nevertheless, because it is a old family recipe, I could never give it out. In as much as both my grandparents would turn over in their graves with distane, and my mother who's almost 90 would most asuredly end my life! Foods that evoked passion, Spices to stimulate your libido. Currently researching various spices as Aphrodisacs and Other Portents of Passion, someday wish to self publish a book on this subject.
My cooking tragedies
Anytime I scorch burn anything (i.e sauces, cakes, soups, beans)I have to throw it out and start over again. Cakes that turn out too dry; cassaroles that over cook as well as vegetables. I hate mushy veggies.
