Iowa Pork Steak

Wow! I made this in my crockpot, and admittedly, I didn't follow the recipe exactly. I never do. But I used the basic stuff - the two cans of soup, no water, two packages of fresh mushrooms instead of canned, lots of garlic, the onion, the soup mix, and LOTS of worcestershire. I cooked it about 6 hours in the crockpot, and it was WONDERFUL! My fiancée keeps calling it stew instead of just steaks, which makes me think I could have probably added additional vegetables, but this was really, really good and we will definitely make it again.

BBQ Pork for Sandwiches

This turned out better than a restaurant! After reading the reviews, I used a rump roast, about 4 pounds or so. I used one can of beer, and a little water (1/4 cup or so), and put salt and pepper on the outside of the meat, and let it cook on LOW for 8 hours. Once it was done, I used Sweet Baby Ray's BBQ sauce for the first time based on some suggestions... it was absolutely wonderful!

Slow Cooker Chicken and Dumplings

This was fantastic, with a few changes. I used chicken broth instead of water, and cooked the biscuits for about 90 minutes. I hate uncooked dough (yuck!) so I wanted to make sure they were done. I pressed them down into the juice as well, to make sure they soaked it up! I used about 2T poultry seasoning, and cooked for 4.5 hours. I think more would have resulted in that weird crock pot chicken texture. There were a LOT of biscuits - I used Pillsbury Grands Southern Style - I might do one can next time. It fed the three of us with six servings left over. Everyone loved it, fantastic!

Asian Sugar Snap Pea Appetizer

I didn't want to heat the house, so I cooked these in a stirfry pan on the stove, and they were excellent! You definitely have to be careful not to overcook them though or they will be mushy, but that's standard for any veggie.

Beer Margaritas

Yum!!! Dangerous, strong, but oh so good - you can't even taste the beer. I used Dos Equis because my husband will drink the rest... and I HATE beer. These are soooo good!

The Best Thai Peanut Sauce

This was SO yummy! I used a whole can of coconut milk, and it made a TON of sauce. I used it for lettuce wraps. It has a really good flavor, nothing is super overpowering or too strong.

Chocolate Surprise Cupcakes

Fabulous! I'm 6 months pregnant and these were SOOO yummy!!! The chocolate chips are still soft the next day too, I was afraid they would cool off and become hard again. I cooked mine a little less, about 20 minutes because they looked done at that time.

Pumpkin Bread IV

Absolutely wonderful! I made a few changes, 1 1/4 cup oil, and 1 cup brown sugar, 2 1/2 cups white sugar. It probably could have done with even less sugar if you really wanted to save calories. I had two storebought cans of pumpkin, so it was a little more than 3 cups. This was SO good and made a ton!!

Tangy Dill Potato Salad

This recipe is fabulous! I can't stand eggs, so I don't like normal potato salad... yuck! This one is wonderful, and doesn't have any eggs. As usual, I can't help but tweak recipes... and our family likes sauces so I added a little more of everything. I also added quite a bit more dijon, and quite a bit more dill too. I didn't have any green onions on hand, so I used some chives from my herb garden instead. It turned out FABULOUS, and everyone in my family liked it.

Hershey's ® Chocolate Mousse

This is yummy! I've never had Chocolate Mousse before, so I don't really have a basis for comparison, but it was rich and thick. I would NEVER whip this by hand, it would take forever! I topped it with a dollop of peanut butter frosting (also on this site) and sprinkled with sugar sprinkles for Valentine's Day. Very good!

Basic Cream Cheese Frosting

Absolutely wonderful! I made this for brownies, so it made a lot more than I needed, but it's in the fridge for when I need something sweet. Graham crackers dipped in it... yum!! I prepared this exactly as the recipe says, which is rare because I almost always alter things. The consistency was perfect with 4 cups of powdered sugar, although if you're in a pinch, you could get away with as little as 2 cups. Very, very yummy!

Eclair Cake

This is a favorite family recipe, just wonderful! It really does need to set for it to taste best, although I have made it last minute and lightly sprayed the graham crackers in each layer with a water bottle. It helped them to get soft, like they're supposed to be!

Strawberries with Balsamic Vinegar

Best Lemonade Ever

SO freakin' yummy! I used 1 1/4 cup sugar because previous reviews said it was too sweet, and I was about 1/4 cup short in lemon juice, so I used lime juice. (I was trying to use some lemons before they went bad!) It turned out WONDERFULLY and will definitely go in my family cookbook! Thanks for sharing!

Maple Salmon

I didn't want to heat up the house, so I made this salmon by cooking it in a skillet with the sauce. The sauce is absolutely fabulous, although with the skillet, I would probably cook the salmon a bit before adding the sauce because the sauce got reallllly sticky! But the recipe is great!

These were awesome! They spread more than I thought they would, so I had some stuck together. But the flavor was awesome, I had several people tell me they loved them because they were spicier. I used brown sugar instead of white sugar, and used ginger, cinnamon and pumpkin pie spice, because it was all I had on hand. I frosted them with my buttercream frosting, but not covering the entire cookie. (They were footballs, so the laces and sides were white.) They were fabulous!

German Apple Cake I

This was absolutely wonderful, although I made a ton of adjustments to make it low calorie. 1/4 cup oil, 3/4 cup applesauce. 1/2 cup brown sugar, 1/2 cup white sugar. I also had a pear that was going to go bad so I used that in the apples too. I realized after mixing the first few ingredients together that I was out of flour - so I used 2 cups whole wheat flour. I used 3t cinnamon, and 1t pumpkin pie spice for a bit more spice. The adjustments were purely for calories' sake - not because anything tasted bad. This was SO good by itself! But then I thought about a glaze for it and couldn't help myself. Now THAT wasn't so healthy... 1/2 cup butter, 1/2 cup brown sugar, 2T milk melted together in a saucepan. OMG yum!!! Drizzle a little on top and it's fabulous. I'm glad that I cut the sugar in half in the cake though for sure!
