Becca's Taco Soup

This soup was excellent - I left out the corn, beans, and onion (picky family) but it still turned out great. I also chopped a fresh tomato and added it, and that added a little more substance to the soup without the other ingredients. This is a great easy soup to make at night when you don't want to spend a ton of time cooking! We eat it with cheese melted on top, sour cream, and avocado slices, with tortilla chips and it is SO yummy!

Bacon Broccoli & Raisin Salad

Very, very yummy!! I don't know how much 2.1 ounces of bacon is, because we always just put about 8 slices of bacon in, but this is a very yummy salad. It needs to be eaten quickly though, and isn't as good the next day because the bacon starts to absorb the dressing and gets mushy. Cooking the bacon until crispy, without being burnt, is definitely the best - it adds to the crunch of the salad, and takes a bit longer to mushify. (Is that a word?) ;)

Swiss Enchiladas

This recipe is fabulous!!! I did change it a bit, and will probably change it more the next time I make it. I added 4oz cream cheese, nuked it to make it soft, then added the cream, salt and pepper. I also added spinach to the chicken mixture. Next time I will add additional veggies to the chicken mixture - this is a ton of calories, so I need to disguise some veggies for my family! Maybe some corn, bell pepper, and tomatoes. I used regular salsa (Kroger Premium Selection Restaurant Style - my FAVE!) and 2 4oz cans of green chiles, and used a rotisserie chicken bought at the grocery store, cut up. (I was not about to cook chicken when I had worked all day!) I used flour tortillas because I don't care for corn, and didn't fry them - I loved the texture of the flour tortillas, it was soft but where the cheese melted was crispy and bubbly! I also used 8oz of Jack cheese, who needs a little bit left over, it goes bad! ;) Overall this is fabulous, definitely the best enchiladas I've had! Thank you for sharing, it will definitely be used again!

Chocolate Surprise Cupcakes

Fabulous! I'm 6 months pregnant and these were SOOO yummy!!! The chocolate chips are still soft the next day too, I was afraid they would cool off and become hard again. I cooked mine a little less, about 20 minutes because they looked done at that time.

Swiss Cheese 'n' Onion Quiche

This is absolutely fabulous, but I made a LOT of changes because I like veggies. Gotta sneak them into the kids' diet somehow! Here's what I did: 3T butter 1 pre-made pie crust (I don't know what a pastry shell is?) 1/2 onion, chopped (it was a big one) 8oz shredded swiss (not sure how many cups) 1T flour 8 eggs 1 1/2 cups half and half 1/4 t salt 1 1/2 cups chopped ham 1 c chopped coarse mushrooms 1 c shredded fresh spinach I followed the directions basically... pie crust, I sauteed the mushrooms with the onions and put them on the crust, then the ham, then the spinach, then the cheese, and because of all of the veggies and other things I had to make a lot more of the egg mixture. I had a 9.5 inch pie pan. I made it for breakfast tomorrow, but my son had a small piece after school for snack, and said it was awesome - it turned out really, really yummy. Next time, because mine was so thick, I would probably bake it longer at a lower temperature. In order for the egg mixture to be done, it took awhile to bake and the top is pretty brown. Overall fabulous!

Tangy Dill Potato Salad

This recipe is fabulous! I can't stand eggs, so I don't like normal potato salad... yuck! This one is wonderful, and doesn't have any eggs. As usual, I can't help but tweak recipes... and our family likes sauces so I added a little more of everything. I also added quite a bit more dijon, and quite a bit more dill too. I didn't have any green onions on hand, so I used some chives from my herb garden instead. It turned out FABULOUS, and everyone in my family liked it.

Roasted Pork Loin

2 hours was definitely too long, even for my roast that was 2.5 pounds. The flavor was good, but the texture of the dry rosemary is a little strange. I think next time I will use fresh rosemary, or throw the garlic and rosemary into a food processor so that it's not as gritty. Overall very good flavor, tonight's dinner was fabulous!

Caramel Popcorn

Oh... My... GOSH!!!!!! I just made it because I was bored, and my stepdaughter has a friend over. I'm not a big fan of Carmel Corn, but this is absolutely INCREDIBLE!!!!!!! It mels in your mouth, and is SO yummy! I was concerned when my mixture after boiling looked weird, it was really thick and kinda gross, but I poured it on and stirred (hand cramped LOL!) and it just finished and is SO FABULOUS! MUCH better than any carmel corn I have ever had, and I will definitely be making this for Christmas presents!

Slow Cooker Chicken and Dumplings

This was fantastic, with a few changes. I used chicken broth instead of water, and cooked the biscuits for about 90 minutes. I hate uncooked dough (yuck!) so I wanted to make sure they were done. I pressed them down into the juice as well, to make sure they soaked it up! I used about 2T poultry seasoning, and cooked for 4.5 hours. I think more would have resulted in that weird crock pot chicken texture. There were a LOT of biscuits - I used Pillsbury Grands Southern Style - I might do one can next time. It fed the three of us with six servings left over. Everyone loved it, fantastic!

Iowa Pork Steak

Wow! I made this in my crockpot, and admittedly, I didn't follow the recipe exactly. I never do. But I used the basic stuff - the two cans of soup, no water, two packages of fresh mushrooms instead of canned, lots of garlic, the onion, the soup mix, and LOTS of worcestershire. I cooked it about 6 hours in the crockpot, and it was WONDERFUL! My fiancée keeps calling it stew instead of just steaks, which makes me think I could have probably added additional vegetables, but this was really, really good and we will definitely make it again.

The Best Thai Peanut Sauce

This was SO yummy! I used a whole can of coconut milk, and it made a TON of sauce. I used it for lettuce wraps. It has a really good flavor, nothing is super overpowering or too strong.

Pumpkin Bread IV

Absolutely wonderful! I made a few changes, 1 1/4 cup oil, and 1 cup brown sugar, 2 1/2 cups white sugar. It probably could have done with even less sugar if you really wanted to save calories. I had two storebought cans of pumpkin, so it was a little more than 3 cups. This was SO good and made a ton!!

Eileen's Spicy Gingerbread Men

These were awesome! They spread more than I thought they would, so I had some stuck together. But the flavor was awesome, I had several people tell me they loved them because they were spicier. I used brown sugar instead of white sugar, and used ginger, cinnamon and pumpkin pie spice, because it was all I had on hand. I frosted them with my buttercream frosting, but not covering the entire cookie. (They were footballs, so the laces and sides were white.) They were fabulous!

The Best Lemon Bars

WOW yummy! I used a smaller pan (7x10ish I think) so increased the cooking time a bit accordingly, and used the juice from 3 lemons instead of 2. Everything else I did as written, and these are absolutely wonderful! I put them in the fridge to harden a little faster because I wanted to try them! Absolutely wonderful!

Fluffy Peanut Butter Frosting

This is fabulous! I used it to frost heart shaped brownies for my husband for Valentine's day, and it made a LOT. It was thick, but all you have to do is add a touch of milk and keep mixing until it's the consistency that you want. I had so much I also put it on top of Chocolate Mousse that I made, and still have some left over. I would suggest don't add any milk until it gets too thick to mix, and then add a tiny bit at a time until it's just right for you. I highly recommend it!

Soft Christmas Cookies

When I was first mixing this dough I thought it seemed a tad dry... but I figured that it was okay, and put it in the fridge like it said to. I took it out of the fridge, and it was so hard that it felt like carrying a huge rock. I figured it just needed to warm up a bit, and even after 2 hours out, it was rock hard. I nuked it a sec to soften it up, and it softened up a bit, however it was EXTREMELY dry, so much so that even my fiance couldn't roll it after I had tried. We tried using wet hands on the dough to add some moisture, but it was so dry that every cookie cut out fell apart - they literally crumbled. I will definitely not make this recipe again, it didn't taste great (the dough, since I didn't get to bake any cookies because I had to throw it away) and the dough was impossible.

Linda's Lasagna

I made some modifications, but it was very good. My only complaint is that there wasn't enough sauce, but I'm someone that likes lots and lots of sauce. I mixed the cheese mixture with a hand mixer to make sure there weren't any cottage cheese curds, and I used shredded parmesan in addition to grated parmesan. Very yummy though!

Chocolate Fudge Buttercream Frosting
