Crazy Crust Pizza Dough

I was making pizza for my family and had to throw away two things of dough that I had made/bought... this was great in a pinch, and worked. It is a little strange, and not for you if dough is a big deal to you, but for us the toppings are the focus of the pizza. The dough is merely something to bake the toppings on, and this one tasted good.

Tangy Dill Potato Salad

This recipe is fabulous! I can't stand eggs, so I don't like normal potato salad... yuck! This one is wonderful, and doesn't have any eggs. As usual, I can't help but tweak recipes... and our family likes sauces so I added a little more of everything. I also added quite a bit more dijon, and quite a bit more dill too. I didn't have any green onions on hand, so I used some chives from my herb garden instead. It turned out FABULOUS, and everyone in my family liked it.

Easy Cheesy Chicken I

This was overall good... but I doctored it a lot. The main thing I *didn't* like about it was the chicken was fairly dry, even though it was cooked in a crockpot. The overall flavor is good, this is how I changed it: I added garlic powder, minced garlic, garlic salt, salt, pepper, minced onions, paprika, poultry seasoning and a tad seasoning salt. When I stirred in the sour cream at the end I also added 3 cups of stir fry vegetables, the large bag that you buy frozen with broccoli, snap peas, bell peppers (small pieces) and mushrooms. The vegetables definitely added some flavor. I like the combination of the three soups, but the chicken was definitely a little dry, maybe it should be cooked a bit less.

Chocolate Surprise Cupcakes

Fabulous! I'm 6 months pregnant and these were SOOO yummy!!! The chocolate chips are still soft the next day too, I was afraid they would cool off and become hard again. I cooked mine a little less, about 20 minutes because they looked done at that time.

Soft Christmas Cookies

When I was first mixing this dough I thought it seemed a tad dry... but I figured that it was okay, and put it in the fridge like it said to. I took it out of the fridge, and it was so hard that it felt like carrying a huge rock. I figured it just needed to warm up a bit, and even after 2 hours out, it was rock hard. I nuked it a sec to soften it up, and it softened up a bit, however it was EXTREMELY dry, so much so that even my fiance couldn't roll it after I had tried. We tried using wet hands on the dough to add some moisture, but it was so dry that every cookie cut out fell apart - they literally crumbled. I will definitely not make this recipe again, it didn't taste great (the dough, since I didn't get to bake any cookies because I had to throw it away) and the dough was impossible.

Caramel Popcorn

Oh... My... GOSH!!!!!! I just made it because I was bored, and my stepdaughter has a friend over. I'm not a big fan of Carmel Corn, but this is absolutely INCREDIBLE!!!!!!! It mels in your mouth, and is SO yummy! I was concerned when my mixture after boiling looked weird, it was really thick and kinda gross, but I poured it on and stirred (hand cramped LOL!) and it just finished and is SO FABULOUS! MUCH better than any carmel corn I have ever had, and I will definitely be making this for Christmas presents!

Banana Sour Cream Bread

I added a full bag of chocolate chips, and baked in my mini loaf pan - the recipe with no other modifications made 10 mini loaves! This recipe was awesome, heard nothing but raves about it from my fiance, who is VERY picky and critical!

Artichoke & Spinach Dip Restaurant Style

As I do with most recipes I modified this one a little... I used 16 oz of alfredo sauce, 2 cups mozzarella, the entire block of cream cheese, and 5 cloves of garlic. It came out WONDERFULLY! However, it was a tad bland. But my boyfriend thought that it was wonderful, and I'm used to the REALLY strong dips so it might have been just right, just not for me ;) Next time I make it I will add more garlic and more parmesan... they both seem to spice it up a bit. Overall, this dip was great, and definitely a favorite of my family's.

Becca's Taco Soup

This soup was excellent - I left out the corn, beans, and onion (picky family) but it still turned out great. I also chopped a fresh tomato and added it, and that added a little more substance to the soup without the other ingredients. This is a great easy soup to make at night when you don't want to spend a ton of time cooking! We eat it with cheese melted on top, sour cream, and avocado slices, with tortilla chips and it is SO yummy!

Florentine Artichoke Dip

This dip was good, however it was really really thick, so we had to use spoons to put it on the chip or carrot. It was kinda chunky, and didn't turn out to be like a dip, at least as I know it.

Baked Pesto Chicken

I didn't so much follow the recipe as much as the ingredients, and cooked it a little differently. However, the chicken was tender, and the pesto made for a great topping for the chicken. I served it with french bread, and the pesto and olive oil mixture I used for the chicken was SO good on the bread!

Bacon Mushroom Chicken

It had a funny taste to it, probably because of the bacon. The sauce didn't thicken, but the chicken was okay. Kinda tough, but not too bad.
