As written, I wouldn't make this again. However, it does have potential and I do plan to make it again with the following changes. 1. I will use chicken tenderloins next time. 2. I grilled the jalapenos before adding them to the chicken, and I'm glad I did.Next time I plan to just spread cream cheese over the tenderloin, then chop up the grilled peppers and sprinkle them on top. Halving them made rolling the chicken a super slippery job. The peppers kept wanting to slide out. On a side note, to secure the pepper inside the chicken and not have it sliding out, I had to use 2 pieces of bacon per chicken. 3. I was smart enough to cover the grill grate with aluminum foil first. Otherwise I would have had a grease fire. I actually pulled the edges of the foil up to create a shallow "bowl" to contain the grease in. With the above changes, I do believe this recipe will be a 5!
