Jalapeno Chicken II

As written, I wouldn't make this again. However, it does have potential and I do plan to make it again with the following changes. 1. I will use chicken tenderloins next time. 2. I grilled the jalapenos before adding them to the chicken, and I'm glad I did.Next time I plan to just spread cream cheese over the tenderloin, then chop up the grilled peppers and sprinkle them on top. Halving them made rolling the chicken a super slippery job. The peppers kept wanting to slide out. On a side note, to secure the pepper inside the chicken and not have it sliding out, I had to use 2 pieces of bacon per chicken. 3. I was smart enough to cover the grill grate with aluminum foil first. Otherwise I would have had a grease fire. I actually pulled the edges of the foil up to create a shallow "bowl" to contain the grease in. With the above changes, I do believe this recipe will be a 5!

Marshmallow Fondant

I've never made fondant before. This recipe requires patience and cooking spray! I sprayed my bowl and spoon before melting the marshmallows. Before I kneaded the dough, I added some Wilton's food color and greased my hands with plenty of shortening, and re-greased as needed. This ensured the dough didn't stick to my hands, nor did the food coloring. It took a LOT of kneading. You'll think it's never going to form a dough, but be patient. It will. You may have to adjust the amount of powdered sugar, adding more as necessary. I ended up using a 10.5 oz. bag of marshmallows and almost an entire 2 lb. bag of powdered sugar to get a good doughy consistency. I left the fondant in the fridge overnight and just now rolled out a test strip. It's great! Tastes good and easy to use. My stepdaughter kept telling me fondant is too hard to use and I'd never be able to do it. She felt and tasted this stuff and said it's 100 times better than the fondant her friend's mom used! I plan to use small portions at a time and keep the rest in the fridge until I need it. I think that will make it easier to work with.

The Best Chicken Salad Ever

Wow, this is good!! I made a homemade coleslaw dressing with Miracle Whip, sugar, vinegar and vegetable oil. Then I mixed that with mayonnaise for the sauce. I added some almonds and fresh green onions from the garden. It's even good with canned chicken and I hate canned chicken! I can't stop eating it!

Reuben Dip

Oh my gosh! This stuff is GOOD!!! I couldn't even wait to eat it - I was sneaking bites before I even got it into the oven. It's still in the oven and I keep opening it to get bites because I can't wait! If you like reubens you will LOVE this! I didn't change a thing, other than the fact that I didn't actually measure the ingredients.

Zucchini Brownies

Delicious! I admit, they sounded disgusting and even as I mixed the ingredients, the batter didn't look like it would work. The key to make these work is to FOLLOW DIRECTIONS EXACTLY. Don't change anything, and do NOT drain the zucchini. The water from the zucchini is what ends up making the batter moist. If you add water or eggs then your brownies will not turn out right. My kids ate most of the pan before it even had time to cool. They stay good for a day or two, after that they get mushy and weird.

Garlic Cheddar Chicken

This was delicious and my picky teenage daughter even liked it. I used the Panko crumbs, which gave it a nice crispy texture. I sprinkled extra crumbs and cheese over the top of the chicken. Per the advice of other reviewers, I sprinkled the bottom of the pan with crumbs to prevent sogginess, and I broiled it the last 2 minutes. Served with broccoli, salad, and baked potatoes. Yum!

Bread Pot Fondue

I just made this for New Years Eve and it was great with a couple of tweaks. I added extra cheddar cheese and sour cream. I also added 2 cans of Rotel tomatoes, juice and all. This made a great difference in taste. It made the consistency more like a dip than a spread and it added some needed flavor. I used a pound of bacon instead of the ham. The toasted bread was a great addition! My kids also ate it with tortilla chips.

Freezer Caramel Drizzle Pie

California Grilled Veggie Sandwich

Delicious way to use up an over abundance of garden veggies. I used Italian focaccia bread and added garlic salt and Italian dressing to the mayo. I marinated the sliced veggies in Italian dressing before grilling. I will add grilled chicken next time so the family will eat it.
