Little Lamb Meatballs in a Spicy Eggplant Tomato Sauce

I made the meatballs only to put in pita breads with spinach and a sauce of plain yogurt and lemon juice. This recipe rocks! Thanks Chef John!

Middle Eastern Rice with Black Beans and Chickpeas

This was a great recipe. Entire office loved it. I made 4 servings and it comfortably fed 8 people. I made some of the suggested changes. 3/4 cup brown rice in 2 cups chicken stock. I used 3/4 lbs ground beef, I used the 1.5 tsp of curry instead of ingredients 4-6, I used a couple shakes of red pepper flakes instead of the cayenne, I used spinach chiffonade instead of parsley. I used an entire bunch of cilantro. I also served it on flat bread with a topping of greek yogurt about 8 oz. mixed with the juice of one lime. Super good. and easy to make, except for all the darn time to cook the rice. Next time I'll use a faster cooking rice.

I'v made this recipe many times and it is a hit. After pouring the batter in the pan draw a line down the top with a knife before pouring on the butter.

Sausage Balls

they were dry but everyone loved them. I served them with apple butter, which I think really made the dish. I also made these with vegan sausage and they were pretty good too. I would not eat them with out the apple butter.

Lemon Ice-Box Cake II

I rated it 4 stars because 12 oz of whipped cream is way too much. I think it could have been made with 8 oz and been great. Then again, I'm not a big fan of icing in general, but it is necessary for this cake. I made it exactly according to directions and everyone loved it. I left it in the frig for two full days after making it and it was moist and lemony and hit the spot on a warm day in New Orleans.

Ashley's African Peanut Soup

I made this for the office lunch club and it received thumbs up from five people. One thing I would caution is to make sure you have a large crock pot, or only use 3 cups of broth (or cook and reverse baste into another pot and then replace the delish liquid at the end) I think my pot is only 5 qt. But I made the recipe as noted, except for cooking the rice on the side. I would have added a bit more cayenne and red pepper flakes as it was a mild spice, not the kind of spicey people generally enjoy in New Orleans. But what a decadent flavor for a rather healthy meal.

Sam's Famous Carrot Cake

A winner at the cake walk. Mouths were drooling. Very easy to make, but a bit expensive. Also very fruit filled and definitley one of the better comfort foods out there. Thanks for a great recipe that I will definitely make for special people.

Pesto Sauce

I used the greens from the holly grove market, thai basil and some Asian cooking green from Mary Queen of Vietnam. I used sunflower seeds from an airport vendor and the jared garlic. Excellent flavor and the proportion is perfect. I read somewhere about puting some in an ice cube tray and freezing for later use. We'll see if that works. It made a little over 2 cups. You may want to half the recipe.

Apricot Chicken

This is a great recipe. I used 1.5 lbs of chicken and cooked it an extra four minutes. I added 1/2 a sweet onion chopped and a large green bell pepper. I used the sherry and the flavor was nice and light. I had almonds and just added them after it cooled as needed for each serving. Fresh almonds are just as sweet as cashews and I did not want the extra salt. Using fully salted Kikoman soy had enough salt for me. It is a very good and quick recipe and will definitely make it again.

Blueberry Loaf Cake

This is a great simple recipe. The loaf is very cake like. The best thing about it is that is not overly sweet. I did not use the topping for this recipe. Kudos to the chef; I would definitely make this again.
