Spinach Stuffed Portobello Mushrooms

These were delicious! I only made two but used the ingredients as written for four. I sauteed chopped onion and red bell pepper in a little olive oil until softened and translucent, then tossed the raw spinach on top to wilt it down a bit. Added all the other ingredients, mixed and topped the portabellas. Worked out great. I baked for slightly longer than the amount of time written to get the mozzarella on top to brown slightly. Thanks for this recipe. I'll be making it often. BTW we used this as a main course.

Roasted Okra

So good! All the flavor of fried okra without the deep fried aspect. I put EVOO in a bowl and dumped in the sliced okra and sprinkled with seasoned salt. Hand tossed and baked for 20 minutes on a cookie sheet that I lined with foil and sprayed with Pam. Easy clean up. Yummmm...

Rockin' Oysters Rockefeller

I made this for New Year's eve for my husband and I. These were delicious and very easy to make. I couldn't find fontina cheese but used guyere instead and omitted all added salt. They were plenty salty! Thanks for wonderful appetizer Cassandra.

Grilled Garlic Parmesan Zucchini

Soooo good! I used both zucchini and yellow squash and both were good but I did prefer the zucchini. Made exactly as recipe described and added the parmesean cheese the final couple of minutes just to melt. No way to turn them, I was afraid all the 'good stuff' would fall off. Try this you won't be disappointed.

Santa's Chocolate Thumbprint Cookies

My family has really enjoyed this cookie. They are yummy, easy, and fun to make, but they do take some time after they come out of the oven to 'fill' so plan accordingly. I used a toothpick to swirl the white chocolate after it had melted a bit and because of the short cooking time, found that I had to completly finish each cookie sheet before I put the next in to bake. Be sure and add the half cherry on top, it adds lots of flavor to the cookie. Thanks for the recipe. It will be on my Christmas bake list every year from now on.

Elvis Presley Cake

This cake is wonderful. It would be perfect served at a bridal shower. I poked holes in the cake before pouring the pineapple on top. It makes the liquid absorb into the cake better. Thanks for this great cake recipe.

Turkey Tetrazzini II

This was really tasty with the changes I made. I halved the recipe for 4 of us and there was plenty. I used 1/2 of a large onion,chopped, about 6 large baby Bella mushrooms, 2 large cloves of garlic and some leftover yellow pepper from Thanksgiving. I sautéed all of that with 1/4 cup of butter until the onion was almost caramelized, then added a little more butter and stirred in the flour. Followed the recipe from there. So good....

Pesto Sauce

Roasted the walnuts for about 7 minutes in a 350 degree oven to start and let cool. Needs quite a bit of salt, but taste and add as you need. Only used 2/3 cup of olive oil and freshly grated Parmesan, also added the juice of 1/2 a small lemon. Delicious. I saved out 1/2 cup to use immediately and had enough left to freeze one ice cube tray to use later.

Marinated Grilled Shrimp

I have made this recipe several times for family and friends and everyone loves it. I don't have red wine vingear, but use balsamic vinegar instead. I also use extra garlic, about 5 cloves.The more the better. I am going to try marinating chicken in this and I'm sure it will be wonderful. Thanks for the recipe.

Beef Tenderloin in Creamy Porcini Sauce

This beef recipe is delicious. My DH and I both loved it. I had 1 pound of beef tenderloin that I cut up into medallions myself. This is a cheaper way to go. I also only had 1/2 oz of dried porcini mushrooms and used 1/2 cup of water to hydrate, used vidalia onion and 3 large cloves of garlic. I browned the meat thoroughly and left a very pink center. 20 minutes in the oven was perfect and the meat came out medium rare. Perfection. Try this recipe you won't be diasppointed.

Clone of a Cinnabon

Oh my Gosh! These are wonderful and taste just like the real thing. I added 2 Tablespoons of flour to the brown sugar/cinnamon mix and baked on the 2nd lowest shelf in my oven for 25 minutes at 350 degrees. Also made a double batch of icing. My whole family loved them! Thanks for the delicious recipe Marsha.

Spaghetti Squash Primavera

This was very good. I added an extra clove of garlic, used only half of a large sweet onion, cooked the spaghetti squash for 10 min in microwave and added 1 1/2 cups of drained canned diced tomatoes. Served as a side dish to hamburger steak. Don't bother peeling the zucchini. Yummy

Citrus Turkey Brine

This was a delicious brine to our Thanksgiving Turkery. Very easy, fix it and forget it! I placed mine in one of the oven bags, turkery sized and placed it in a cooler with ice all around it and left it, just adding more ice as it melted. It remained nice and cold overnight (total of 24 hours actually). I'm in AL so it sat on my back porch. Thanks for this easy brine. (I even used a butterball turkey and the breast was even more flavorful and juicy.
