Tortilla Soup

This was so easy & so yummy. I love how healthy this is. I used regular Hunts stewed tomatoes and use my immersion blender to blend everything before adding the chicken. This is a great basic recipe that you can tweak with more cumin, jalapenos etc for more kick. You can also add beans and corn if you want to make this a more substantial soup. 5 stars all the way. Thank you!

Jam Filled Butter Cookies

I don't understand what went wrong. I meticulously weighed all my ingredients and noted that the dough seemed really wet so I chilled it for at least one hour. I was able to scoop it out but it was terribly sticky when I tried to make an indent. This wasn't going to work unless I added more flour so I did that. I had to increase the flour from 220g to 300g before it finally could be rolled into proper balls. Once baked it didn't taste good nor had a good texture at all. I am envious of all of you who had good results. I noticed a few other people had the same problem as I did - maybe it's the kind of butter we used that made the dough so wet... ? Who knows.. :(

MMMMM... Brownies

I halved the recipe and made this into six muffin brownies. Baked at 170 for exactly 13 minutes, these turned out soft, chewy and quite delicious. While these are good (5 stars for ease of making. I only dirtied one pot) I'm looking for something richer and more chocolatey and fragrant. Something with a darker taste. If I do make these again I will swap out some of the flour for cocoa powder.

Black Bean Brownies

To make it lower fat I followed advice from previous reviewer and added 1/3 cup of applesauce in place of oil. I'd imagine adding the same amount of banana puree would work too. Sugar I replaced with 1/3 cup agave nectar which gave the perfect level of sweetness for me. I wanted it to be very chocolatey so I increased cocoa powder to 1/3 cup. Next time I'll increase even more to 1/2 cup and reduce the chocolate chips to 1/4 cup (to reduce fat). I also sprinked 1/4 cup of chopped pecans before baking. This was delicious! I ate 1/4 of the cake right out of the oven, yum! This is supposed to be better the next day?! I can't wait to eat it again tomorrow. Will definitely make again! Thanks for the recipe!

Easy Granola Bars

These were indeed easy. I reduced and put in 1 cup of sweetened condensed milk and made up the rest of the liquid with 3/4 cup water and then stirred all into the melted butter (I will omit the butter next time). The bars turned out sweet enough for me. I greased and lined my pan with parchment paper so the slab released with no effort at all. I cut them with pastry cutter pretty soon after I took the pan out of oven. This is a great base recipe that allows you to play around with the add-ins. I added lots of different stuff like almonds, walnuts, sunflower seeds, pumpkim seeds, dried cranberries, chocolate chips, butterscotch morsels, sesame seeds, flax seeds and even psyllium. I just made sure that everything totaled up to 3.5 cups and the texture turned out perfectly fine.

Whole Wheat Sweet Potato Muffins

these were delicious! made changes depending on what I had. Also tried to lower fat & sugar content. I am very happy with my changes. Will definitely revisit this recipe! changes: 1 cup sweet potato 1 cup whole wheat flour 1 cup quick oats 1 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon ground cinnamon 1/8 teaspoon ground nutmeg 1/3 cup apple sauce 2 eggs 1 teaspoon vanilla extract 1/3 cup honey 1/3 cup fat free yogurt for topping: 1/8 cup oatmeal 1/8 cup brown sugar 1/4 cup almonds 1/4 teaspoon cinnamon 1/8 cup all-purpose flour 1 tbs butter

Garlic Cheese Quick Bread

added extra 1/2 tsp of garlic powder, 1 tsp onion powder, 1 tsp parsley flakes & 1/2 tsp of salt. also sprinkled extra cheddar & parmesan on top before baking. This is really good, great texture, delicious & will go perfectly with soup. i may lessen the sugar a little bit next time and also try using butter instead of oil for extra flavor.

Chocolate Mocha Cake I

I tripled the espresso powder. Reduced sugar by 1/2 cup and used light sour cream instead of buttermilk. This turned out totally moist. Yum! Please be sure not to overfill your pan. Mine overflowed cos I filled it slightly more than 3/4.

Blueberry Oatmeal Coffee Cake

added chopped walnuts - 1/2 cup to batter and 1/4 for streusal topping. Also substituted half of oil with applesauce to make it even more low fat. This took about 35mins to cook through. Tender & moist. Recipe worth revisiting.
