Chewy Brownie Cookies

These are great! My friends raved about them. I used rainbow colour vanilla chips instead of the chocolates and no nuts. I really think the nuts would take away from the great texture and flavour. Be very careful not to overbake these ones!

Asian Asparagus Salad with Pecans

This was really nice! After my first bite I was like, oh ok not bad but nothing special. But I liked it more and more as I kept eating and wished I had more! I marinated it for 24 hours and I didn't find it too strong at all. I did adjust/eyeball the measurements though (I only had a small amount of asparagus, so I didn't want to make the full marinade amount) so maybe I ended up adding more oil or less vinegar. I would definitely make this again!

Potato Tacos

This was different and easy! I made only two large baking potatoes and got four tacos out of it (with more than two tbsp of filling per taco.. that wouldn't be very much). I added butter to the mashed potato too and used a little less cheddar (I think, not positive since I didn't use the full amount of potatoes). I added onion powder and garlic powder to the potato mix too and it was still a little bland. I didn't have any toothpicks but I had no problem frying the tacos without them, they stayed together fine. I only fried in a small amount of oil though, to make them brown and crispy. Overall these were good but missing something... not sure what. Maybe more cheese not mixed into the potato? I needed a little more flavour. But I'd make them again and play around with the filling!

Baked Potato Dip II

This is great! I've made almost the exact same dip before without cream cheese, and the addition of it made it really nice and creamy. Both ways are good though. I cooked and crumbled my own bacon. I had to omit the green onions because I forgot to buy them but I know that would have made it even better.

Spiced Mixed Nuts

I thought these were just ok but everyone I gave them to for Christmas gifts is raving about them. I did change it up a little though. I didn't have all the spices, so I'd planned to use pumpkin pie spice. Then I read all the reviews that said the pumpkin pie flavour was not loved. So I ended up using cinnamon, ginger and a bit of cayenne. They were easy to make, but I think I still prefer similar types of recipes that are made in the oven. I think the coating sets up around the nuts better in the oven. Still, this is a nice shortcut way

Best Pecan Pie

This is delish, Belle! My brother called it "not the best" but he ate three pieces, so... Very easy to make. It took longer than an hour to cook but I did have to turn the temp down. The crust didn't brown too much but the top of the pie did. It was just starting to burn so I pulled it out even though the inserted knife still wasn't coming out totally clean. It set up more while cooling though, so no big problem. Better than the last pecan pie I made that was pretty soupy! I placed the pie plate on a baking sheet in the oven which was a good idea because while the filling was still liquid it bubbled up and spilled over a little. Not much but still was worth having a pan underneath. Thanks for sharing your recipe! :)

Kahlua Balls

These really could not be any easier to make. I rolled some in coconut, some in green sugar and dipped some in white and semi-sweet chocolate (and made some combination toppings too!) For me, I'm still not really sure what I think of the taste - actually I think it's more the texture for me, I've never had rum balls or anything like it, so it was just something 'new' to me. Everyone at my office liked them a lot though!

Magic Cookie Bars from EAGLE BRAND®

Words cannot express how much I LOVE these bars. My mom and I first made them almost 20 years ago and since I've been old enough to bake on my own, I can only let myself make them at Christmas, too dangerous to have around the house more often. Even my brother who doesn't really like coconut eats too many of these. Just one little tip to share - on the tattered ripped-out-of-a-magazine copy of this recipe that I have, the method is very slightly different. It calls for the putting the 1/2 cup butter in the pan and sticking it in the hot oven to melt, then sprinkling the crumbs over the melted butter, mixing together and patting down to form the crust. Really doesn't make a difference to the finished product but saves using another dish to melt the butter in and mix the crumbs in, and no need to grease the pan.

Rice Balls a la Tim

These are good, and were easier/quicker to prepare than I thought they'd be. They were a bit on the bland side though. I'll make them again, but will add additional seasoning to the browning beef, and I like the idea another reviewer had of making the balls around a cheese centre; the cheese already in the recipe got kind of lost in the balls, didn't taste it. They did hold together very well though and were tasty, so thanks for the recipe!

Christmas Pinwheel Cookies

Yum! I have to say they surprised me a little. I figured they'd be pretty good; you know, average plain Christmas cookie. Well they were plain, but in a really good way. I'd tasted the unbaked dough and it was nothing special, so the delicious buttery taste of the baked cookies surprised me :) As for the method, it worked out well for me. The dough came together easily and it wasn't too sticky. It rolled out pretty nicely (and I'm kind of rolling challenged!). The only part where it worked out less than perfect for me was rolling it up in the log. The bottom layer cracked and started falling apart; I think maybe I rolled it too thin. It patched together well enough and the finished product looked ok, so no big deal. I made only half a recipe (and only got 20 cookies), I might have to make more! Thanks for the recipe :)

Vegetable Lo Mein

This is really good! I did have to change things up a little, but the sauce was particularly delicious. I thought it would a little too heavy on the hoisin but it was great. I used half a bag of mixed stir fry veggies, with red bell pepper strips added. The store didn't have any bean sprouts so I had to skip those (sad, because I love them). My onion was also going bad so I tossed it and used onion powder instead. I used olive oil instead of veg oil and used way less of it. I also added a little sprinkle of sesame oil to the olive oil. It seemed like the sauce wasn't thick enough but once the pasta was tossed in (I used angel hair), it was a great consistency. Very versatile recipe that can use almost any veggies - the sauce is the real star. Thanks for the recipe, I'm glad I finally made it!

Balsamic Bleu Cheese Salad

Made for recipe group. This is an alright salad, nothing wrong with it, but nothing real special. I agree that the dressing left something to be desired... I would add a pinch of sugar, I think. After my first couple of bites, the dressing was a bit too intensely vinegary for me. Toasting the walnuts would be an improvement too. Still this is fine as a basic salad and I'll probably make it again, adjusting the dressing a little.

Parmesan and Broccoli Stuffed Potatoes

This was pretty good, though I think sounded better in theory than it actually was, to me. I used garlic alfredo sauce, not sure if that's what was mean by parmesan cheese sauce, but I'm guessing so... I made only two potatoes but used the 3 tbsp of sauce and it was a little dry. I also added shredded mozzarella to the potato/broccoli mixture. I'd make something like this again, but with tweaks.. I'm not sure I liked the sauce in the mixture.

K-Dub's Alfredo Ravioli Bake

Delicious! How could it not be, creamy cheesy goodness! I skipped the chicken, just too lazy to make it. I used spinach and cheese ravioli and forgot to put the parmesan on, so I just added it once the pasta was served. I used a little less mozzarella to save some fat, but I think I also used a smaller package of ravioli, so it worked out to a good amount of cheeseyness anyway. Excellent recipe K-Dub!

Chocolate Muffins

Not bad! It was a touch bland and the actual muffin part could have been more chocolatey but they were moist, quick to throw together and pretty tasty. I halved the recipe, using 2 eggs, and it worked great. I used peanut butter chips instead of chocolate, which I guess is why I wanted the cakey part to be a little more chocolately - I suppose I could have used some choc chips and some peanut butter. The PB chips were good in them though, especially when warm and melty. I'd make this recipe again.

Chocolate Cornstarch Pudding

Amazingly easy to make and good - but I do agree with many other reviewers that it can definitely stand to be more chocolatey. I like the idea some others had of adding chocolate chips. I wonder if chocolate milk would work too? Other than the slight absence of chocolate, this turned out well, nice texture. Thanks for the recipe.

PHILLY Slow-Cooker Beef Stroganoff

The flavour of this was just ok - not much flavour there, actually. I hoped it would be better as I really like the herb and garlic cream cheese. It needed to be a lot thicker, I even added more flour but no dice. The cream cheese didn't blend in very well either, I'm not sure why that's the case as cream cheese usually melts great. But, it was easy and was a good way to use up mushrooms that I couldn't remember why I bought. Good enough that I'll eat the leftovers but I doubt I'll choose this recipe again. Served over mashed potatoes instead of fettucine.

Mac and Cheese Henwood Style

This was good. I had no processed cheese food so I used extra cheddar (and also gorgozola instead of regular bleu cheese). I also added a squirt of dijon mustard instead of mustard powder. My sauce came out a bit grainy, but tasty.

Asian Beef with Snow Peas

Nothing too exciting but a nice dinner. The only things I did differently was using ground ginger, and broccoli because the store didn't have any snow peas. My sauce never really got thick but it was tasty enough. Easy and fast, I'd make this again!

Twice-Baked Ranch Potatoes

These were yummy but I do admit I made several changes based on what I had. Firstly, I oven-baked the potatoes just because I had the time (I do normally microwave-bake). I didn't have the ranch dressing mix powder, so I used prepared dressing, about 1/4 cup (I also made two potatoes, as well). I used about 2 tbsp of butter instead of cream cheese and omitted milk since I used prepared dressing. There is NO need at all for additional mashed potatoes, the guts of the potates I'd baked was more than enough to stuff into the shells. I do think this would have been even better with the powder dressing mix instead of dressing, but I loved the idea of ranch twice baked potatoes so wanted to make it work with what I had and it came out well! (Here is where I will also admit I ate both of the potatoes myself.)
