Vegetable Lo Mein

Reviewed: Nov. 26, 2011
This is really good! I did have to change things up a little, but the sauce was particularly delicious. I thought it would a little too heavy on the hoisin but it was great. I used half a bag of mixed stir fry veggies, with red bell pepper strips added. The store didn't have any bean sprouts so I had to skip those (sad, because I love them). My onion was also going bad so I tossed it and used onion powder instead. I used olive oil instead of veg oil and used way less of it. I also added a little sprinkle of sesame oil to the olive oil. It seemed like the sauce wasn't thick enough but once the pasta was tossed in (I used angel hair), it was a great consistency. Very versatile recipe that can use almost any veggies - the sauce is the real star. Thanks for the recipe, I'm glad I finally made it!

Balsamic Bleu Cheese Salad

Reviewed: Nov. 26, 2011
Made for recipe group. This is an alright salad, nothing wrong with it, but nothing real special. I agree that the dressing left something to be desired... I would add a pinch of sugar, I think. After my first couple of bites, the dressing was a bit too intensely vinegary for me. Toasting the walnuts would be an improvement too. Still this is fine as a basic salad and I'll probably make it again, adjusting the dressing a little.

Parmesan and Broccoli Stuffed Potatoes

Reviewed: Nov. 23, 2011
This was pretty good, though I think sounded better in theory than it actually was, to me. I used garlic alfredo sauce, not sure if that's what was mean by parmesan cheese sauce, but I'm guessing so... I made only two potatoes but used the 3 tbsp of sauce and it was a little dry. I also added shredded mozzarella to the potato/broccoli mixture. I'd make something like this again, but with tweaks.. I'm not sure I liked the sauce in the mixture.

K-Dub's Alfredo Ravioli Bake

Reviewed: Nov. 19, 2011
Delicious! How could it not be, creamy cheesy goodness! I skipped the chicken, just too lazy to make it. I used spinach and cheese ravioli and forgot to put the parmesan on, so I just added it once the pasta was served. I used a little less mozzarella to save some fat, but I think I also used a smaller package of ravioli, so it worked out to a good amount of cheeseyness anyway. Excellent recipe K-Dub!

Chocolate Muffins

Reviewed: Nov. 19, 2011
Not bad! It was a touch bland and the actual muffin part could have been more chocolatey but they were moist, quick to throw together and pretty tasty. I halved the recipe, using 2 eggs, and it worked great. I used peanut butter chips instead of chocolate, which I guess is why I wanted the cakey part to be a little more chocolately - I suppose I could have used some choc chips and some peanut butter. The PB chips were good in them though, especially when warm and melty. I'd make this recipe again.

Chocolate Cornstarch Pudding

Reviewed: Nov. 14, 2011
Amazingly easy to make and good - but I do agree with many other reviewers that it can definitely stand to be more chocolatey. I like the idea some others had of adding chocolate chips. I wonder if chocolate milk would work too? Other than the slight absence of chocolate, this turned out well, nice texture. Thanks for the recipe.

PHILLY Slow-Cooker Beef Stroganoff

Reviewed: Nov. 13, 2011
The flavour of this was just ok - not much flavour there, actually. I hoped it would be better as I really like the herb and garlic cream cheese. It needed to be a lot thicker, I even added more flour but no dice. The cream cheese didn't blend in very well either, I'm not sure why that's the case as cream cheese usually melts great. But, it was easy and was a good way to use up mushrooms that I couldn't remember why I bought. Good enough that I'll eat the leftovers but I doubt I'll choose this recipe again. Served over mashed potatoes instead of fettucine.

Mac and Cheese Henwood Style

Reviewed: Nov. 8, 2011
This was good. I had no processed cheese food so I used extra cheddar (and also gorgozola instead of regular bleu cheese). I also added a squirt of dijon mustard instead of mustard powder. My sauce came out a bit grainy, but tasty.

Asian Beef with Snow Peas

Reviewed: Nov. 7, 2011
Nothing too exciting but a nice dinner. The only things I did differently was using ground ginger, and broccoli because the store didn't have any snow peas. My sauce never really got thick but it was tasty enough. Easy and fast, I'd make this again!

Twice-Baked Ranch Potatoes

Reviewed: Nov. 5, 2011
These were yummy but I do admit I made several changes based on what I had. Firstly, I oven-baked the potatoes just because I had the time (I do normally microwave-bake). I didn't have the ranch dressing mix powder, so I used prepared dressing, about 1/4 cup (I also made two potatoes, as well). I used about 2 tbsp of butter instead of cream cheese and omitted milk since I used prepared dressing. There is NO need at all for additional mashed potatoes, the guts of the potates I'd baked was more than enough to stuff into the shells. I do think this would have been even better with the powder dressing mix instead of dressing, but I loved the idea of ranch twice baked potatoes so wanted to make it work with what I had and it came out well! (Here is where I will also admit I ate both of the potatoes myself.)

Honey-Mustard Baked Chicken

Reviewed: Nov. 3, 2011
This was good. I made some tweaks but used all of the ingredients and nothing more. I cut boneless skinless chicken into cubes like another reviewer did. I used a bit less butter, a bit less honey and a bit more mustard. Baked the chicken in the sauce and served over rice and it was tasty.

Sesame Green Beans

Reviewed: Nov. 2, 2011
These were good, a nice change from my usual go-to for green beans, but not so amazing it will be my new go-to. I didn't have sesame seeds, so I added some sesame oil to the olive oil. I needed a little more chicken broth, but other than that, no changes. Enjoyed it and will make again.

Brown Rice, Broccoli, Cheese and Walnut Surprise

Reviewed: Nov. 1, 2011
This was really tasty and easy, and came together quickly once everything was chopped, grated, etc. I added cubed pork to make it a complete one-dish meal kinda thing and used chicken broth instead of veggie broth, because that's what I had. I was also too lazy to toast the walnuts but I'm sure that would have made it even better. I mixed everything together before serving and had yummy little pockets of melted cheesy goodness. Thanks for the recipe!

Pat's Mushroom Saute

Reviewed: Oct. 26, 2011
Good mushroom recipe! I only sliced enough mushrooms for a single serving but I didn't change the amounts of the other ingredients (I actually added more balsamic - not on purpose, I thought it said 1 tbsp!) and it was really tasty. I thought it burned really quickly but it was just a really nice caramelization from the balsamic. Mine didn't even need 10 minutes cooking time. Thanks for the recipe!

Gorgonzola Stuffed Mini Potatoes

Reviewed: Oct. 26, 2011
Pretty good potato recipe! I skipped the chives as I had none and changed the oven temp to 400 and baked the potatoes for a little more than 40 minutes. Thanks for the recipe.

Roasted Garlic Lemon Broccoli

Reviewed: Oct. 24, 2011
I didn't really care for this. It's just my taste I think as there wasn't anything specifically wrong with, the flavour just didn't agree with my taste buds. I love broccoli but this was the first time I've roasted it. I didn' care for the parts that got a bit brown and crunchy and I didn't really like the lemonyness either. I won't make this again but if you like roasted broccoli this might be right up your alley. I'll say that I definitely think it needs more olive oil. I used only 1/2 head of broccoli and still used a bit more than the 2 tsp.

Chicken Poppy Seed Stir Fry

Reviewed: Oct. 17, 2011
This is pretty good, nothing spectacular but a very decent stir fry. I used less black pepper in the sauce and had to omit the poppy seeds as I didn't have any but I added some chopped pecans, I like nuts in stir fry. I thought it could have used more sauce but I did use more chicken than stated; still I think making 1.5 times the sauce would be good. Instead of a bag of veggies, I used broccoli florets, snow peas and red bell pepper strips.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Oct. 15, 2011
Good cookies! Mine came out a little puffy and soft, which is fine, but I do prefer a little thinner and chewier. Nothing to complain about in the taste though. I did omit the cloves because I wasn't sure that the people I was making them for would care for clove taste, but I'm sure I would have liked them fine with it. All in all a nice recipe I would make again. Edited: I originally gave this four stars but everyone who ate them wouldn't stop telling me how awesome they were, and they disappeared fast, so I think that calls for the fifth star!

Creamy Dill Dip II

Reviewed: Oct. 15, 2011
Yum! Easy to make and really tasty. I agree with some other reviewers that it wasn't all that dill-y, it tasted more like an onion and garlic dip to me, but I'm not a huge dill fan so the faint taste of it was fine with me. Don't count on this making 16 servings, unless it's going on a buffet table with a lot of other dips or appetizers. Maybe that's the serving size you *should* have, but really.. who is going to eat just 2 tbsp of dip if you're sitting down to watch a movie with some chips and dip? I used low fat cream cheese and while it tastes fine, I find that the low fat cream cheese doesn't blend as smoothly. Not a big deal, but if you care about that, go for full fat.

Best Brownies

Reviewed: Oct. 12, 2011
Holy wow are these good. I only got to taste the edges (I made the batch to give to someone else, made straight edges so that I could taste a little!) and they were completely perfect. Nice and chocolatey, the right amount of sweetness, very chewy. I tasted the frosting as well when mixing it up and it's pretty good too, I didn't find it overly sweet like others said. Personally I prefer my brownies unfrosted though so the frosting wasn't the wow factor for me. I've been a diehard lover of Brooke's Best Bombshell Brownies recipe for a couple of years now, but I don't know, this recipe here may have converted me! Either way I will definitely be making another batch of this one to keep for myself this time! A couple of things that might be helpful: 1) I melted the butter in the microwave (totally melted, not softened) - no need to dirty a saucepan. 2) I did it all by hand - I have no scientific knowledge to back this up, but brownies seem to turn out less cakey when done by hand. 3) If doubling the recipe, DON'T leave the fourth egg out (as suggested by someone else). The eggs help make it nice and chewy.
