Beans, Greens and Garlic Soup

This was just ok. A couple weeks earlier, I'd made pretty much the same soup but no spinach and no beans and it was somehow way more flavourful. This was still alright though, I'd make it again and play with seasoning. Fresh grated parmeson or romano cheese is a must for sprinkling on top! That was the best part.

Chocolate Chip Toffee Bars

These are really good. I didn't read the directions properly, and sprinkled all of the toffee bits on prior to baking, but it still came out great. If you cut into 24 bars, they're a very generous size. You could definitely stretch this to more like 30-36 servings. I liked them best straight from the fridge, they were very chewy when cold.

Candy Bar Pie II

This is good. I used less chocolate bar chunks. I bought five Snickers bars but, umm, something happened to one of them, so I only had four to use for the pie. But I thought four was more than enough. The peanut butter in the filling was pretty much undetectable, so more of that would be good. I used a pastry crust but I think we would have preferred a crust of Oreo crumbs or other cookie crumbs. All in all, this was tasty, glad I made it, but probably won't be a repeat for me. Thanks for the recipe!

Chicken Tetrazzini IV

This is not bad, with some tweaks. I used fresh mushrooms and browned them beforehand with some butter, garlic and white wine. The sauce was extremely thick so I thinned with additional chicken broth, and it was very bland so I added onion powder and garlic powder. I used half and half and less parmesan to save some fat. This was enjoyable enough but probably won't be a repeat recipe for me. Thanks anyway for the recipe.

Smashed Potatoes

These are pretty good. I found them a bit lacking in flavour but I think that's because I had a hard time keeping the oil mixture on the potatoes. I spooned it on, it mostly ran right off. I think brushing it on would work better. I did change up the herbs based on what I had and what I like, but I tried to use the same proportions. I think next time I'd also decrease the amount of oil next time, so that it doesn't dilute the other flavours as much. I especially wanted more of the balsamic flavour. I liked this method though (other than the spooning oil on) and the little bits of skin that retained the oil mix got wonderfully crispy.

Honey-Garlic Glazed Meatballs

This isn't quite what I expect from a honey garlic sauce (though similar) but it was not bad at all. I was pretty leery of all the ketchup, so I cut back on it a touch and it was still quite ketchupy but not in a too unpleasant way, though as I kept eating it, I liked it a bit less with each bite - but I realize the recipe is meant to be an appetizer with one or two meatballs per person, so if that's how it's served the ongoing ketchupy taste wouldn't be too much of an issue. The ketchup also made it really sweet which made me like it a bit less as well as I went on. Yes the honey added sweetness too of course, but it wasn't really a honey-sweet taste I was getting. Still though I have to say this was better than I thought it would be, and I had no issues with the meatballs except that the amount of milk would be WAY too much. I halved the recipe and used just a little splash of milk. I probably won't make it again as I'd like to find a true honey garlic recipe that is not ketchupy, but I will happily eat some leftovers for lunch tomorrow.

Pasta Pomodoro

I've made this a few times, just getting around to reviewing it. It's awesome! Easy comes together pretty quickly, and so yummy. Even when the dish is done and plated, it doesn't look like much and you kinda expect it be "ehh alright", but then you eat it and it's soooo good. I never have fresh basil but dried works great.

Cilantro and Garlic Potatoes

Good! After my first bite I thought, whoa needs salt! Then I read the recipe again, and what do you know, it does call for salt! I used a fair amount of it; I don't typically salt my food much but these potatoes seemed to need it. I too roasted my potato cubes instead of deep frying; they would have had a nicer colour from deep frying I think but that's not worth the hassle or extra calories. They did crisp up nicely during the quick pan-fry. These were not quite as yummy as shawarma restaurant potatoes but I liked them and would make again!

Guaco-Tacos

I thought this was going to be a yummy easy meatless meal but I was disappointed. It was easy enough but not that yummy. I added garlic and lime juice to the avocado to make it more guac-like, but it was still really bland. I've now read reviews where the cooks added a lot of seasoning to the beans, and they're right, the beans need it. These were also pretty difficult to pick up and eat. 30 seconds into dinner, I had a mess of fallen out black beans around me. I had to fold them kind of burrito style to eat. Hard taco shells would be much easier. I may try this again with more seasoning and some other modifications since I do like easy meatless meals, but I would not make again as is.

Thai Cucumber Salad

I really thought I was going to love this, but it was just ok. I didn't have a jalapeno, so I added some crushed red pepper flakes. Other than that I stuck to the recipe. I probably won't make it again, but thanks for the recipe.

Beer Bread II

This is delicious! And it's honestly one of the easiest things I've ever made. Almost dangerously easy, I could have a fresh delicious loaf of bread every single day with no effort! The hardest part was cutting up cheese (I used little cubes instead of shredded). I made my own self-rising flour, with three cups of all-purpose flour, 4 1/2 tsp of baking powder and 1 1/2 tsp of salt. For the beer I used a bottle of Moosehead lager and it was great. Very pleasant taste with just a hint of "beery-ness" here and there. I was too lazy to melt the butter to brush on top, so I just sprayed the top of the bread with butter-flavoured Pam, though if I were to use butter, I would use way less than 6 tbsp. I skipped the chiles because I just didn't want them. I will for sure make this again (maybe tonight....)

White Almond Wedding Cake

I was just browsing through my recipe box and happened to notice I haven't reviewed this recipe. How is that possible? I have made this so many times now and it is AMAZING. I do prefer using all vanilla extract, no almond (though that's good too), but that's the only change I make. I've tried several other white cake recipes and this is by far the best. Honestly, I don't think I'll ever bother to try another totally-from-scratch white cake, because this is perfection.

Stuffed Green Peppers I

This was good. I didn't really do anything differently except to use marinara sauce instead of tomato soup, and used the tomato chunks from the sauce in the filling instead of opening a can of tomatoes (I only made about 1/3 of the recipe). The cheese kind of got lost in the filling but it was pretty good, even though I'm not a huge fan of green peppers, especially cooked. I'm not sure I'd make these again... I might, but it would need to be on a weekend, as it took awhile and left a lot of dirty dishes. I enjoyed trying it though, thanks for the recipe!

White Cheese Chicken Lasagna

This is really good! My rating is mostly for the sauce since I made that as per the recipe (just scaled back a bit). I didn't have lasagna noodles so I made it baked ziti-style with rotini. I cut way back on the mozzarella in the sauce to save on fat and sprinkled it on the top layer only, not in between. I would have preferred this with fresh spinach I think, or I just didn't drain the frozen stuff enough (what IS the trick to that??) because it got watery, especially the leftovers. And, in a space cadet moment, I forgot to put the chicken in. So this would be really good as a vegetarian meal! Thanks for sharing the recipe :)

Chewy Brownie Cookies

These are great! My friends raved about them. I used rainbow colour vanilla chips instead of the chocolates and no nuts. I really think the nuts would take away from the great texture and flavour. Be very careful not to overbake these ones!

Asian Asparagus Salad with Pecans

This was really nice! After my first bite I was like, oh ok not bad but nothing special. But I liked it more and more as I kept eating and wished I had more! I marinated it for 24 hours and I didn't find it too strong at all. I did adjust/eyeball the measurements though (I only had a small amount of asparagus, so I didn't want to make the full marinade amount) so maybe I ended up adding more oil or less vinegar. I would definitely make this again!

Potato Tacos

This was different and easy! I made only two large baking potatoes and got four tacos out of it (with more than two tbsp of filling per taco.. that wouldn't be very much). I added butter to the mashed potato too and used a little less cheddar (I think, not positive since I didn't use the full amount of potatoes). I added onion powder and garlic powder to the potato mix too and it was still a little bland. I didn't have any toothpicks but I had no problem frying the tacos without them, they stayed together fine. I only fried in a small amount of oil though, to make them brown and crispy. Overall these were good but missing something... not sure what. Maybe more cheese not mixed into the potato? I needed a little more flavour. But I'd make them again and play around with the filling!

Baked Potato Dip II

This is great! I've made almost the exact same dip before without cream cheese, and the addition of it made it really nice and creamy. Both ways are good though. I cooked and crumbled my own bacon. I had to omit the green onions because I forgot to buy them but I know that would have made it even better.
