Mama's Best Broiled Tomato Sandwich

Delicious! While I love plain old toasted tomato + mayo sandwiches, this was a really nice change! Loved the mayo mix especially, will use it on other sandwiches too!

Ranchy Macaroni and Cheese

I hope you don't mind me giving a review despite a few changes, but I really liked this, especially the *idea* of making it ranchy. Seems simple but I never woulda thought of it on my own! I couldn't find any dry chives in my spice cupboard but there was a container labeled 'fine herbs' so I added a smigeon of that. Had to skip the Beau Monde entirely, don't think we get it here and wasn't sure what was in it. And I *think* I used the dried dill - it kinda smelled like dill but the bottle was unlabeled! Also skipped the Ritz topping as I don't really like Ritz all that much. I'm not sure what the melted butter added to this either other than a couple of small greasy puddles - not a big thing but I think I'd probably try it without the butter next time. Creamy Twice-Baked Potatoes

REALLY good! Fairly simple, but delicious. I didn't do anything differently, except I had three medium-ish potatoes but I didn't really increase the measurements of the other ingredients, and it came out wonderful! I could eat a big vat of the filling all by itself! I'm not sure the paprika added anything to it, but it added some colour. I did cheat and did the first 'bake' in the microwave as I didn't have an extra hour to do them in the oven, and I did all the 'beating' in of ingredients just with a potato masher.

Garlic Cheddar Chicken

This was quite good! Not quite super amazing, but a very nice meal that the whole family will enjoy. I didn't really do anything different, except I had on hand a bag of shredded cheddar/mozz blend so I used that. I was also a bit short on time and simply melted already-made garlic butter in the microwave, it worked fine. I have yet to find a way to cook breaded chicken in the oven so that the bottom doesn't get soggy.. this time I tried lining my dish with foil and it didn't seem to help. I also meant to add more cheese on top toward the end of cooking time but I forgot - will do so in the future.

Strawberry Bread

Anniversary Chicken I

This was really good! I admit I was a bit surprised... despite the great reviews, I was pretty skeptical of teriyaki + ranch but it was quite yummy! Didn't do anything differently except to cook my own bacon and crumble - I've never even seen bacon in a can!

Messy Taco Salad

This was good. I didn't need 8 servings, so I kinda halved it (no precise measurements). I could not for the life of me find ranch-style beans (perhaps one of the many products we don't get in Canada) and couldn't really find anything close either. I ended up using BBQ beans and rinsing most of the BBQ sauce off of them. That ended up being alright, but there was a bit of a BBQ-y taste with the dressing (not necessarily a bad thing - we still ate it). I think next time (and there will have to be a next time because my dad loved this.. even took leftovers for lunch the next day which he NEVER does, not even when it's something he cooks) I would just use plain beans and try to jazz up the dressing in a different way. A lot of reviewers mentioned using ranch dressing - I liked the Thousand Island, but I wonder how it'd be with a little of each?

Roasted Asparagus and Garlic

Very good! I added salt and pepper and accidentally forgot the thyme, but it was still yummy. I've never done white wine with asparagus, I really enjoyed it. Thanks for the recipe!

Vanilla Honey Simple Syrup

This had a very nice flavour. After chilling in the fridge for awhile, though, mine was still completely liquid, not syrup at all. I made it exactly as the recipe stated but perhaps I measured my butter incorrectly or something. No matter, even though it was liquid I put it on my oatmeal pancakes and it tasted great! UPDATE: I also recently made this to put on Strawberry Vanilla Pancakes from this site and that was a great flavour combo! Was still very liquidy again, but not a big deal.

Cake Balls

These are cute and easy to travel with (e.g. easier to bring to a potluck than cupcakes) and they weren't too difficult to make... just rather time consuming (to be fair, a lot of the time was chilling time for me). They taste fine too, just perhaps not really worth it. I'm glad I tried it out, but won't really be in a hurry to do them again. I did cherry chip cake + french vanilla frosting, and chocolate fudge cake + chocolate frosting. I also experimented with a few different methods of doing the chocolate dipping, and found I had the most success with freezing the balls as others said, then placing it in the melted chocolate by hand, using a spoon to gently roll around/spoon chocolate over if needed, then piercing with a skewer to lift out and let excess drip off. Placed on a parchment-covered cookie sheet with the skewer still in it to dry (sets up very quickly), then gently wiggled the skewer out. This leaves a small hole in the top, but it can be covered with a small drop of chocolate if wanted, or if decorating further, it won't even be noticeable.

Black Bean, Corn and Turkey Chili

This is really good! I had to turn it into chicken chili as the grocery store I went to had every ground meat except turkey. Other than that, kept everything the same, except used onion powder instead of onion. I think I also used a bit more of each seasoning; didn't measure. Could use a bit more kick for those who like spicy, but I like it like this!

Potato Garlic Soup

Very nice! I hadn't ever made potato soup, and really couldn't recall ever eating it before so I didn't know what to expect, but this was great! I thought maybe it would be thicker than I would like, but it's not, it's nice and soupy. I also was concerned it would be too garlicky, but it's not (although my immersion blender didn't do that great of a job and I did end up biting into an entire clove of garlic.. that was a little garlicky!) I didn't have leek, so I added one green onion at the onion and garlic cooking stage, and then garnished with two more green onion, which I wish I hadn't done, as it was a bit weird to bite into raw onion in a soup. The only other thing I did was to add about 3/4 tsp of crushed red pepper flakes for kick, and also crumbled up one piece of bacon on top, but that wasn't even necessary, the soup alone would have been great. Very tasty, thanks Ken!

Rick's Special Buttercream Frosting

I'll be a dissenting voice and say, as written, this frosting is NOT great. Nearly all of the most helpful reviews (all 5-star reviews too) had significant changes made, most importantly incorporating butter. I wanted to make this as written the first time, and while it's not the worst thing I've ever tasted or anything, it's certainly not amazing. The reviews ARE helpful, but the recipe as is is just okay to me.

Chocolate Butter-Creme Frosting

DELICIOUS! I skipped the salt because I used salted butter, used one square of unsweetened chocolate and one chunk of dark chocolate that's equal to about 1.5 oz baking chocolate. Also had to add a fair amount more milk. Turned out really good! I had enough for 12 cupcakes, with an average amount of frosting per cupcake. If you really like to pipe on a big mound of frosting, increase the size of the batch.

Pasta Fagioli Soup II

A very nice soup. I omitted the bacon, because I don't really care for bacon in most soups or pasta dishes. I didn't have any Italian sausage but if I make this again, I'd like to try it with sausage. I used 5 clumps of frozen spinach, and one can of white beans and one can of chickpeas. I also added some red pepper flakes, but it could have used more of a kick. I would definitely use a bit less tomatoes next time. Good though!

Easy Slow Cooker French Dip

This was tasty, and definitely easy. I had to use powdered soup mix after discovering that I'd accidentally picked up a can of cream of chicken instead of French onion, and instead of opening a bottle of beer, I used almost 1 cup of red wine. For some reason my family thought the idea of toasting the rolls was crazy, so we didn't, and also no one wanted to dip in the jus, but I thought the dipping was yummy!

Scrumptious Frosted Fudgy Brownies

This review is for the brownie part only as I didn't end up using the frosting (I had leftover buttercream so ended up using that as frosting). They're very good, nice and fudgy as promised, but I too got that weird crust that some other reviewers mentioned. A crusty top on brownies isn't a weird thing in itself, but for about 1/3 of the pan, the crust was raised up and there was vacant space underneath it. I had to peel those areas off before frosting, but the rest of it, where the crust was directly on top of brownie was fine. Still, great fudgy taste!

Herbed Green Beans

I looked at this recipe in the afternoon and then made it from memory in the evening, and I now realize I added quite a bit more of each herb than called for! (Didn't measure, just shook them into the bowl with the butter). I didn't have any savory so I subbed in a bit of thyme. I also added about 1/4 tsp of refrigerated minced garlic. While I personally didn't love these green beans, they were pretty good (and I think maybe it was that 6 mins was a bit too long in my microwave.. some of the smaller beans were a bit overdone), my mom said they were "awesome" and my dad, who looked at his plate and said he hates green beans, ate his whole portion and then went back for more, so it was a hit recipe with my parents! I did like them too, it's just not my favourite way I've had green beans.

Chicken Gruyere with Sauteed Mushrooms

This was okay but not fantastic, as a lot of other reviewers said. I was hoping I would agree with all the reviewers that loved it. I added garlic powder, onion powder, crushed red pepper flakes and basil to the flour mixture but my family still said "It was boring" and "It was okay but don't make it again". My mom did really like the mushrooms though. I just think the sauce needs something... it's basically just wine and butter, and while it smelled fantastic, only tasted fine not fabulous. We ate it (and my mom somewhat reluctantly took leftovers to work for lunch) but most likely won't make again, unless I come up with a bright idea to jazz up the sauce.

Pumpkin Wheat Honey Muffins

Oh my, these are soooo good! For some reason I didn't think I liked pumpkin muffins, but I had some pumpkin to use up, and I like to have healthy-ish muffins on hand for busy mornings, so I gave this a try and I'm so glad I did! They're delicious, very moist and not dense or heavy at all. I skipped the raisins (just personal preference) but increased the walnuts, also added more pumpkin pie spice than called for and threw in a splash of vanilla. They took about 24 minutes to bake, but I suspect I made them a bit too big because I only got 11 muffins out of it. Thanks so much for this recipe, it's a winner!
