Rump Roast Au Jus

Reviewed: Oct. 20, 2013
This came out more like a roast beef than a pot roast, but still very delicious. The spice rub on the outside was fantastic. But I used fresh ground pepper, which I'm guessing maybe others did as well when they criticize the dish for being too spicy. I cut slits in the meat and stuffed in with garlic cloves as well. I cooked it on a bed of carrots, celery and onion. Placed the meat on top. Added the water to the veggies. So the water never touched the meat until later in cooking. Because of this it wasn't pull apart tender, but still delicious. I did thicken the au jus with some corn starch (for a completely gluten free recipe!)

Broccoli and Cauliflower Casserole

Great recipe. I made some adjustments to make it gluten free. It didn't have a ton of flavor, so it was a great side to a strong main dish.

Chef John's Salmon

Reviewed: Oct. 17, 2013
Nice change from my regular salmon. I had used soy, but no longer due to a new gluten free diet. I used 1/2 greek yogurt, half mayo. Also used dry tarragon and parsley. Next time I'll use all mayo, as it never browned on top. Also would add more garlic. I'm a garlic lover and didn't even notice it in the recipes.

Banana Banana Bread

Reviewed: Sep. 23, 2013
Amazing! This has been my go-to banana bread recipe since I started using AR. As is, the recipe is great, but it also accommodates variations very well. Some times I use half whole wheat flour, sometimes cut butter with applesauce, and often cut sugar in half as well. Regardless, it is always delicious. The brown sugar and the extra extra banana are the key! I make it in small loaf pans or muffins, and freeze so we have plenty to reheat for future breakfasts.

I made the recipe with added 1t garlic powder, 1T italian seasoning. I thought it was dry. Next time I would add more butter, as some others have recommended

Mexican Bean Salad

Reviewed: May 9, 2012
Delicious, with some changes of course. Way too much liquid! I doubled the recipe, including the liquid. I could have doubled the salad ingredients, and not the dressing ingredients, and it would have been perfect. I cut the sugar in half and it was fine. I mixed up the beans, added some chick peas. The dressing makes this dish. I served it at a party of about 125 people. Many people asked for the recipe.

Oh-So-Good Chicken

Reviewed: Apr. 6, 2011
I thought it was very good for how simple it is, but with some additions. While the rice was cooking in a rice cooker, I sauted the mushrooms with green onions. When I added the salsa I also added about a teaspoon each of garlic powder, cumin and chili powder. After I mixed everything together, I wanted a little bit more spice, so I added a teaspoon of Srirachi hot chili sauce. After baking for 20 min, I added more shredded cheese and green onions to the top and baked for another 10 min. I served it with a dollop of sour cream.

DJ's Outdoor Pork Loin with Veggies

Reviewed: Jul. 24, 2010
I cooked this recipe exactly as written, with the exception of dried cliantro for fresh. It was delicious! Definitely a keeper and a recipe for when you're having others over for dinner. Don't leave our the apples- they are amazing!

Stout-Braised Lamb Shanks

Reviewed: Mar. 14, 2010
After simmering for the 3 hours, I removed the meat from the shank and simmered for another hour (with the shank still in the pot). I used one large lamb shank, instead of the 4 in the recipe and thought it was an adequate amount of meat, although 2 would have made it perfect. My husband said it was "pub quality", so this recipe is a keeper.

Potato Chips

Reviewed: Mar. 5, 2010
Took some practice to get these perfect. I made a paste with olive oil and dry ranch dressing seasoning- the taste was delicious! I used two microwaves at the same time and one took about 2 minutes longer, so times can definitely vary. They NEED to brown a little, but a second too long and they can burn.

Whole Wheat Banana Nut Bread

Reviewed: Feb. 4, 2010
A bit dry. I would add more banana the next time, but the taste was perfect. I cut the recipe in half, and made 8 muffins. I increased the banana by 50%, but I still think there should have been more. I added a pinch of nutmeg, allspice, and cinnamon. I htink it would be great with applesauce too.

Smoked Salmon Cheesecake

Reviewed: Jan. 11, 2010
I baked this in a glass pan and it baked fine, but tasted "egg"ier than I wanted it too. Maybe next time, less egg and more cheese ingredients. Definitely could have had more salmon, but was fine in this ratio.

Jewish Apple Cake from Bubba's Recipe Box

Reviewed: Jan. 5, 2010
This is the only Jewish apple cake I've ever made, and it was great. I would have liked it a bit moister. When it was hot and first out of the oven it was perfect. Not as moist as I would have liked after it cooled down. I used a rounded top bundt pan, which almost fit all of the batter. I think in a square top pan, it all would have fit. I cut the apples into large chunks. My mom used to use apples, cut in half and then sliced. I think I prefer the slices over the chunks and I'll try this next time. Overall, a fabulous homemade cake!

Chorizo and Lentil Stew

Reviewed: Oct. 8, 2009
Fabulous! I soaked the lentils in water for 24 hrs and then used 3 cups of lentils. Small changes: Added 2x the amt of the 3 seasonings, and some extra garlic. I used chorizo that I had already grilled, and then cut in half circles. I made sure I used the celery leaves too, for some added flavor, and a 1/4 cup of parsley. I blended the soup with an immersion blender to make it thicker. Delicious!

Zucchini Brownies

Reviewed: Sep. 8, 2009
You "almost" can't tell there's zucchini in these! EVERYONE asked me for the recipe! The chocolate taste was perfect- not too sweet. And the icing was phenomenal! One suggestion- the liquid in the zucchini is a must, so don't process a whole bunch of zucchini and use the desired amount of just the "meat" of the vegetable. The liquid to "meat" ratio must be kept.

I wanted something lighter, and this recipe wasn't that. Taste was good, but the cheese and ranch dressing was a lot for my taste.

Orange Vinaigrette

Reviewed: May 13, 2009
This recipe is amazing. The flavors are perfect together. Of course, because there is no fat in it, it will not stick to your salad lettuce and veggies- but this is normal with all natural non-fat dressings. The second time I made it I added sesame oil and it was even better. Just a teaspoon of the sesame oil makes a world of difference! Try it. If you like the ingredients alone, you will love them together in this dressing.
