Syracuse Salt Potatoes

This was delicious and simple! I put about 2lbs of small-medium red, purple and gold potatoes in a pot & covered generously with water. I added one cup of salt (my that's a lot of salt when you have it all measured out) and allowed it to come to a boil. Then, I simmered those potato butts for 20-25 minutes. What came out was amazing! Taken out with a slotted spoon and patiently waiting for them to dry, a soft salt crust developed around the skin making it look like my potatoes were precious jewels. I devoured them immediately. I loved how the outside skin was salty and chewy and the inside "meat" though slightly bland, was creamy and soft and paired well with the salty exterior. Even my boyfriend (whom displayed no interest upon hearing how these were made) readily ate a few. No need for butter. These make for perfect snacks on the go!

Cauliflower Gratin

Great recipe! I used freshly crumbled bacon and a swiss/gruyere shredded cheese mix. I steamed fresh cauliflower for about 10 minutes so it was still a little hard/crunchy before putting it in the oven. The texture was PERFECT! My whole family loved it. It's surprising what you can make with a can of mushroom soup. This will definitely be made again.

Zucchini Patties

Delicious! I didn't have Parmesan so I doubled up on the Mozzarella and added a few teaspoons of minced garlic. Next time I'll try to fry thinner patties so the insides won't be as gooey. Great way to use up extra zucchini!

Easy Quiche

Good, basic recipe. I changed a lot so unfortunately it wasn't just a one-bowl recipe. I sautéed onions and garlic, added broccoli and zucchini and used mozzarella and sharp cheddar instead of parmesan. I baked it for 40mins then broiled for 3. Came out perfect .. though I should have let it rest before I sliced it :3

Nacho Cheese Sauce

Wonderful! A cheap and better tasting alternative to store-bought nacho cheese. Plus, I usually have all these ingrediants on hand at all time so I all I need are the chips!

Quick Italian Vegetable Soup

This is a great basic soup recipe. Instead of bullion I used two cans vegetable and two cans of beef broth. I threw in some canned corn, frozen green beans, potatoes, and kidney beans. I suggest using less of the italian seasoning as it's really powerful (but smells great!). I added a couple tablespoons of tomato paste as well because I like tomato flavour!
