Masala-Spiced Roast Chicken

It was my first time cooking a whole chicken and I choose this recipe because it looked simple. I loved the results! The cooking time was spot on and it was very moist. I didn't have a lime so I substituted a lemon and it was good. I also added some cayenne red pepper with the garam masala for some kick.

Pan-Fried Squash

When I made this I really cut back on the balsamic vinegar. I added about 1/2 of a tablespoon and the taste was pretty good. I added another 1/2 of a tablespoon and the recipe went to yuck. Then I tried to add more salt and grated parmesan cheese to salvage it and to me it came out with a strange taste. It tasted like I put mayonnaise on it. I don't like mayonnaise so this didn't work for me at all, even after the revisions. I was thinking that if you used a very sweet, desert style balsamic it would work, but not with your regular primarily sour balsamic.

Chicken Casserole

Great base, way too bland for my family as-is. I made a ton of changes and we all LOVED it! Substituted the olives for carrots, used bread crumbs instead of cornflakes. I also added ground coriander, garlic & onion salt. I topped it with monterey jack cheese, fried onions and crumbled bacon on top, a sprinkling of crushed red pepper. This is not the type of recipe I would make on a regular basis, its a heart attack waiting to happen, but quite tasty!

Chicken Stir-Fry

My whole family liked this recipe (which is rare). I added sliced greed and red peppers and zucchini and it tasted great. Red pepper flakes were a must for me & hubby.

Kale Chips

If you don't like kale this recipe won't make you like it. I like kale and I enjoyed this recipe. Giving it 4 stars because I followed other advice on the time/temp. 250 for 15 minutes was perfect for me. It has a light and crunchy texture.

Imitation Crabmeat Salad

Vietnamese Sandwich

Cake Balls

Wow! Very good! They were very labor intensive for my standards. I used strawberry cake, vanilla frosting and white chocolate on some. Some I used chocolate and they tasted just like chocolate cherries. I would make these again for a special occasion or holiday.

Sweet Potato and Carrot Pie

This was outstanding! I made a few additions, I added nutmeg, some ground flaxseed for a nutty quality and topped with mini marshmallows. My children loved it, said it was better than my homemade pumpkin pie. Will make again.

Pineapple Carrot Bread

I am giving this four stars because the sugar content would have been way too high for my taste. I used ground flaxseed as an egg substitute. I doubled the cinnamon and carrot to give it a sweeter taste and only used one cup of sugar. My kids LOVED it!
