Cocoa Oatmeal Cookies

I made these cookies with walnuts instead of raisins which made them more palatable. They remained firm when I removed them from the cookie tray which makes for a better cookie all around.

Baked Macaroni and Cheese with Tomato

I made this recipe for the first time being very successful. If i make it again I would use less milk and more bread crumbs giving it a crunchier texture. I will definitely try this recipe again.

Grandma's Lemon Meringue Pie

When I made this recipe for the first time it was a very runny lemon filling which made it difficult to cut and hard to eat so I always put equal portions of flour and cornstarch to make the filling easier to set and slice when it is cooled. I have also had rave reviews from my friends who have enjoued the pie immensely when I have shared it with them. This is now one of my favorite pies to make.

Sassy Sausage and Black Bean Soup

This soup recipe tasted very good with just a can of regular pork and beans with the salsa and turkey sausages added to it for spicy tomato flavour that I like. It will always be a favourite of mine.

Old-Fashioned Rice Pudding I

For my 50th birthday I made this rice pudding for my dessert. I was skeptical that when I put it in the oven whether it would thicken or not but approximately 2 hours later I took it out of the oven and it was just like cottage cake. I will always use this recipe for my best pudding. I almost did not find it again when I went looking for other recipes thank god I found it.

Trail Mix Cookies

I made these cookies with figs instead of dried cranberries and they turned out wonderful with a pleasant chewy texture that I like to have in a cookie. My friend next door said they were delicious and healthy to boot.

Easy Chicken and Broccoli Casserole

I made this recipe with one change added to it. Instead of using canned soup I put in vegetable broth using equal amounts of cornstarch and flour for thickening. I think this is a healthier alternative than using regular soup that can be quite salty. I will definitely make this recipe again.

Carrot Cake Cookies

I have tried different cookie recipes with varying results. The resulting cookie batter seemed that it would not make a proper cookie but much to my surprise they came out wonderful with a pleasant chewy texture of pineapple and walnuts which I really like. I put ginger in also to give it a nice flavor which also saves on my cinnamon. I will make these cookies again.

Excellent Oatmeal Cookies

I am always searching for the ultimate cookie recipe that makes a good snack for me. After going through all the reviews of this oatmeal recipe I went to work to create my best cookie ever. Instead of 1 cup of butter I used just 1/2 cup and used pure cane sugar instead of brown sugar with just 3/4 of a cup. I added 2 cups of unbleached flour with 3/4 tsp of baking soda and small amounts of nutmeg and cinnamon. They were easy to mold and came out very shapely with a good chewy texture. I did not add walnuts but I added 1/2 cup of craisins to the recipe which came out very well for the first time making these cookies. I hope to make these oatmeal cookies again.

Pumpkin Bread V

All of my quickbread recipes that I have made in the past always stuck to the pan and came out all wrong using all the right instructions. I have made this pumpkin bread recipe twice now and it has come out perfectly every time. Instead of Baking Powder I use one teaspoon of potato starch and one teaspoon baking soda as a replacement. It still makes a wonderful moist loaf for me to enjoy.

Amazing Whole Wheat Pizza Crust

This is an excellent pizza crust for someone who likes to eat healthy meals. The crust was very easy to make and had a good crunch to it when it was done. I have to make this crust again.

Ann's Dirty Rice

I made this recipe for the first time tonight with excellent results. The changes I made were to use ground turkey breast instead of beef and I also added ketchup for a finishing touch that made it a very good meal that will keep me going throughout the week

Oatmeal Peanut Butter Cookies III

I made these cookies for the first time on Christmas Eve to have for dessert on Christmas Day with my neighbor. The cookies turned out wonderful and there was plenty of icing to fill the cookies with when they cooled off enough to pat together and refrigerate until dinner time. They make a very large cookie.

Coconut Cream Pie

I liked making this recipe for the first time with real coconut that I managed to crack open and use for the topping as well. The only thing I would change is the flour to 3 tablespoons along with 3 tablespoons of cornstarch to make the filliing thicker for a denser texture that will hold up to the whipped cream that I put on top

QUICK AND EASY LEMON LOAF

I love this lemon loaf but it did not come out to my expectations after I followed the recipe with only the substitution of oil instead of butter that gave it some moisture and the glaze that helps give it that final touch that will make it a good choice for dessert.
