If I am using a thickener for puddings or soups does tapioca flour work just as well as cornstarch.?  I have an allergy to corn so I would like to find a suitable  replacement for cornstarch when I make a pudding.

In theory, it should actually work better. If it doesn't... then yell at my text books.

Agar powder or flakes is a good thickener. It's made from seaweed, I believe. Virtually tasteless it thickens as something cools. I used it last week for the first time to make a chocolate pudding pie and it quite a thickening agent. I was using tofu as my base and needed a thickener. It was recommended in the vegan recipe I was using. It can be acquired at any health food store and a little bit goes a long way. Hope this helps!
