Easy Chicken Enchiladas

I used half the cream cheese, black beans instead of pinto (I really like black beans) and added half a can of green chilies. This was super easy to make and it turned out quite well. If you top it tightly with aluminum foil the tortillas will remain nice and soft. I baked it for 25 minutes, and then put some cheese on top and baked it uncovered for a few more minutes. They started to get a little hard them. I'm not sure the extra cheese on top really adds anything and would probably leave it off next time but have it on the table as an extra. Served with extra salsa, sour cream, cheese and green chilies.

Grilled Asian Chicken

This made more than enough marinade for 5 chicken breasts. Choose this recipe because I like all the ingredients and it didn't require a lot of time for marinating. Our chicken actually probably sat in it for closer to 45 minutes. Chicken was juicy and tender and excellently flavored for every bite.

Totally Tangy Baked French Fries

The only change I made was using 1 russet potato, some small new potatoes (skin on) and part of a yam/sweet potato. The best results were on the russet. They were both tangy and spicy. The other varieties were really just spicy and no tang.

Quinoa and Black Beans

Excellent. It says it's make's 10 servings, but there was maybe a serving and a half after 5 adults had it as a side dish. We did need to use a bit of extra liquid (after 20 minutes of simmering there was none left). Also, we pre-soaked the quinoa for 15 minutes and only used 1 can of black beans (plenty).

Apple Harvest Pound Cake with Caramel Glaze

Excellent. I made it as written and it was very good. Only suggestion I have, is you need to let the caramel glaze cool and thicken before you pour it over or it all pours off.

Favorite Old Fashioned Gingerbread

I didn't have any clove and so left that out. Doubled the cinnamon and ginger. It's very molasses-y. I made it in an 8x8 pan which almost overflowed. It took about 50 minutes to cook.

Asian Mushroom Soup

I followed the instructions exactly, (leaving out only the chicken and spinach) and it was a very disappointing soup. I ate one bowl and threw out the rest. What a waste.

Balsamic Roasted Pork Loin

This turned out to be a waste of balsamic vinegar. I put my roast in a slow cooker. After cooking on low for 8-9 hours, it was dry (first time EVER in my slow cooker) and you could not even TASTE the balsamic vinegar.

Double Chocolate Biscotti

I made this white chocolate chips and replaced the semisweet with chopped walnuts. And I halved the baking powder as recommended. Not bad. A recipe to play with. :)

Rich and Delicious Banana Bread

This recipe was awesome. I used butter instead of shortening and will try it next time with applesauce. I wasn't sure what 3 ripe bananas is actually equivalent to - since bananas come in all sizes. So I started with two and ended up with a third to make it more batter-y than dough-y.

Ricotta Gnocchi

I only made the gnocchi. I realized as I was making them that I didn't have any Parmesan cheese, so I left it out. I think it would add a lot. But it still tasted really good. :) I'll make it again. I only used a cup of flour, and then turned it out on a well floured surface. If you don't overkneed it, that amount of flour is fine.

Grandma's Slow Cooker Vegetarian Chili

This was excellent. I switched the garbanzo beans with pinto beans and replaced the parsley, oregano and basil with cayenne powder (not equal amounts). I mixed it all up in the slow cooker and then tasted it near the end before to check seasoning levels. It was a little bland, but the beans all tasted very good. Good base to expand upon.

Delicious Black Bean Burritos

I pretty much followed the ingredients recipe except for being very specific with measuring. I also added a dash of ground cumin and chili powder. Instead of mixing the cream cheese in, I spread some on my tortilla and put the mixture on top. I also didn't have any cilantro so that was left out.

Flourless Chocolate Cake II

After 30 minutes, a toothpick was still wet. I cooked it for another 5 and while it still seemed a bit moist, I took it out anyway. After cooling for 10 minutes, I tried to get it out of the pan. It came out like a doghnut, leaving the middle in the pan. However, it tastes really good. :) Next time I will probably use wax paper on the bottom to help ensure ease of removal. (I also used a pie plate since I don't have a round cake pan).

Slow Cooker Buffalo Chicken Sandwiches

I used 4 chicken breasts and about half a bottle of Franks Buffalo Wing sauce. After about 7 hours (I was away most of the day) the sauce had separated and while the chicken was cooked, the sauce hadn't penetrated and the chicken was almost plain. I shredded it and mixed it with most of the remaining sauce from the bottle. It's not bad, but I think it may be better to just cook the chicken plain and mix in the sauce after. I couldn't tell anything from the ranch dressing, so not sure if it's needed. Not sure if I will make again.

Feta Cheese Foldovers

I used seasoned feta cheese and found they came out super salty. I'm not sure if it's from the seasoning, or just feta cheese in general. I'm not sure I'd mix in the egg if I ever make them again.

Thai Pork with Peanut Sauce

I followed the recipe exactly and it was pretty bland. The peanut sauce took a long time to thicken. I also found the coating on the pork chops didn't add anything to the dish.

Cauliflower Cheese Pie

I wanted this to be good. I really really did. However, mine never set after an extra 20 minutes. I eventually poured out about a tbsp of liquid (that's all that was left). The potatoes got soggy and didn't provide much of a "crust." I'm not sure where I went wrong or what I could do to improve it and will probably just never make again.

Foolproof Chocolate Fudge

The can of condensed milk I found was only 300ml, so I reduced the chocolate chips to 2 cups. I also added in pecans, somewhere between 1/2 cup and a cup. I didn't measure. I thought it'd be really sweet, but it's not. At first I thought it actually wasn't sweet enough, but I like it more and more.
